Chocolate Dipped Strawberries Does this recipe appeal? Click here for a printable version! Ingredients:
    • 24-30 perfectly ripened strawberries, green caps intact 6 oz (.375 lb) sweet, semi-sweet, bitter sweet chocolate or white chocolate, coarsely chopped Toothpicks
Directions: Rinse strawberries, dry thoroughly on paper towels. Melt the chocolate in the top of a double boiler, set over simmering water, or in a non-stick skillet set over low heat, or in a glass bowl in the microwave (on full power in 30 second intervals). Regardless of the method used to melt chocolate, stir it as it starts to soften. Chocolate should not be hot if it gets too hot, it will be too thin and it will drip off of the strawberries rather than adhere to them. Be careful overheating chocolate may cause scorching and keep it from blending properly. Insert a toothpick into the stem end of each strawberry and dip into the chocolate, coating 3/4 of the berry. (Leave the green cap and some of the red berry showing for a more decorative finished product.) Spear the free end of the toothpick into a piece of Styrofoam or a grapefruit to allow the strawberry to dry upside down. (Strawberries may also be dried on waxed paper.) If the chocolate becomes too thick to work with, re-heat gently. If desired, after the chocolate hardens, dip the tip in a contrasting chocolate.

    MELTING CHOCOLATE
Chocolate scorches easily, so always melt it over hot - not boiling -
water. It is best to use a double boiler, but you can improvise by using a
c or bowl in a small saucepan over very gentle heat. The water must be
kept below simmering to prevent steam from curling up and hitting the
chocolate. If steam gets into the melted chocolate it will immediately
thicken the mixture to a stiff mass. If this does happen, however, you can
rescue the chocolate by softening it again. To do this, add 1-2 tb of
vegetable shortening (never use butter as it contains moisture which will
cause the chocolate stiffen even more!) to the chocolate and stir
vigorously. You can also melt chocolate directly over very low heat in a heavy gauge saucepan, but you must watch the mixture carefully. HOW TO MAKE CHOCOLATE CURLS Use a vegetable peeler with a long narrow blade and a chunk or bar of chocolate. Warm chocolate and blade slightly. Be sure your peeler is

    By Christine McGourty
BBC science correspondent Humans' love affair with chocolate began far earlier than previously thought. New analytical techniques were used on 2,600-year-old ceramic vessels
US scientists have discovered residues of cocoa - from which chocolate is made - in pots dating to 600 BC. This pushes back the earliest chemical evidence of chocolate use by about 1,000 years. The Mayans were well-known chocoholics and the latest discovery of their enthusiasm for liquid chocolate comes from jugs belonging to a collection of well-preserved spouted ceramic vessels found at the Maya archaeological site at Colha, in northern Belize, in Central America. Small samples It is possible that the liquid may have been poured back and forth from jug to jug to produce the froth that was considered by the Maya and the Aztecs to be the most desirable part of a chocolate drink. Most of the ceramic vessels were found in the burial sites of elite individuals, along with bowls, dishes and plates - all known to have been manufactured only during the period 900 BC to AD 250.
