COOKING WITH CHOCOLATE
Chocolate is a very tricky food to cook with. Temperatures that are too high can scorch it, temperatures too low can cause it to harden unevenly .It must be watched very carefully. But if you can master the art, you can create some breathtaking desserts. Below are some thing to know about cooking with chocolate.
WHAT IS TEMPERING?
In order for chocolate to cool into a hard covering and not a mushy goo it must be tempered. This is a process where the chocolate is slowly heated, then slowly cooled, allowing the cocoa butter molecules to solidify in an orderly fashion.
The following is a pretty thorough method for tempering. Chocolate contains two distinct types of fat, each of which melts at different temperatures. In order to ensure that the chocolate will melt smoothly and harden evenly with a good shine, it must be handled carefully.
  • Chop the chocolate coarsely with a chef's knife and place it in a stainless steel bowl.

The title of my book I had to review was The Chocolate Lovers. The a uthor for the story was Joan Van Loon and the a uthor for the recipes was Gabriel Gate. The publishers of the book were ALLEN and UNWIN. The topic of the book was chocolate and cooking.The appeal to the audience is that it makes your taste buds shiver and you just want to be there to experience the great tasting food. The quality of the storyline was 100% out of 100% but it also was a bit for younger children.The age group of the story was about 6 8 years and to the cooking side the age groups would be about 7 – 9 years with parent’s help and 10-12 years without help. The quality of the illustrations is 100% out of 100% but it needed more background and the colours needed to be darker at the back of the book so it looks better. The illustrations fit in with the text in my book because they are both perfect size for each other.

It's January, it's cold and grey outside, and you've got winter lethargy (the opposite of spring fever). What to do? Go to Boston for a weekend and eat chocolate, of course. Luckily for you, that's the express purpose of The Chocolate Bar, an all-chocolate buffet held at Le Meridien Hotel, 250 Franklin St. in Post Office Square. Every Saturday afternoon (Labor Day through Memorial Day), from 1-3 pm, Le Meridien's Cafe Fleuri presents more than 25 chocolate desserts in an all-you-can-eat buffet. You pay one price (as of this writing, it's $16.50 per adult, though the price might be less for kids), and you can go back to the buffet as many times as you like. Everything is made on the premises except the ice cream.

There are good reasons why we have well over a hundred chocolate recipes on Foodlovers! One has to be the fact that I adore chocolate, in so many shapes and forms. While I have had the good fortune to be exposed to some of the best chocolate in the world and would do almost anything for a bar of Valrhona milk chocolate I am still often totally happy to be munching a bar of Cadburys or my childhood favourites Nestle scorched almonds. Also having a year of television chocolate cooking for Hershey's certainly increased my chocolate repertoire dramatically. The secret of good chocolate, like good coffee is in its beans. Each bean is chosen for its own characteristic - its bitterness, its perfume, its subtle flavours and then roasted to the chocolatiers taste. The dark chocolate used by chefs and chocolatiers is known as couverture and tends to come from Europe. It is available from specialised food stores. Look for brand names such as Valrhona and Callebaut. It is expensive but when used for special occasions, it is worth the treat.
