November 2000 Nutrition and Food "Fashion is in Europe, living is in America, but eating is in China" The phrase is a testament to the popularity of Chinese food around the world. Food is an important part of daily life for Chinese people. Chinese not only enjoy eating but believe eating good food can bring harmony and closeness to the family and relationships. Shopping daily for fresh food is essential for all Chinese cooking. Unlike the fast food society of the U.S., the Chinese select live seafood, fresh meats and seasonal fruits and vegetables from the local market to ensure freshness. This means swimming fish, snappy crabs, and squawking chickens. Even prepared foods such as dim sum or BBQ duck for to go orders must gleam, glisten, and steam as if just taken out of the oven. Ethnic Chinese cooking does not involve a lot of deep fried cooking. The reason most of the Chinese restaurants in America have deep-fried dishes such as sweet and sour pork, almond fried Chicken, and deep-fried shrimp is to promote business and to please western tastes. This clearly reflects why there are more overweight and high blood pressure concerns in Western culture than there are in Chinese culture.

The topic of this article is "Chinese cultural tradition and modern human rights." I deliberately include the words "tradition" and "modern" in this title, because I would like to contrast tradition with modernity. If the title were "Chinese culture and Western human rights," then the theme would have been very different. The contrast would then be between "Chinese" and "Western." The 20th century Chinese philosopher Fung Yulan has written about the discourse and thinking which employed a distinction between "Chinese" and "Western," and that which employed a distinction between "ancient" and "modern." He points out that the correct description of the task or challenge for China in the 20th century is not "Westernization" but "modernization." He writes: "Some people say that Western culture is a motor car culture. ... But motor cars did not exist in the West originally, [and only came into existence at certain point in history.] Having motor cars and not having motor cars is a distinction between the ancient and the modern, and not a distinction between China and the West."

      Preface As every school child knows, China is the most populous nation on our planet. Historically, Chinese immigration to the United States was limited, compared to immigration from Europe, due to strict immigration quotas. In recent decades, however, that has been reversed. Currently, China, including Hong Kong and Taiwan, is one of the principal countries of origin of immigrants to the U.S. In spite of the large numbers of Chinese in the U.S. , most Americans have a very limited knowledge of Chinese language and culture. Culture has a very strong impact upon our understanding of disability and of the goals and processes of rehabilitation. Therefore, persons born in China may, like other recent immigrants, have difficulty using rehabilitation services in this country. The goal of this monograph is to provide an introduction to Chinese culture, focusing on information that may help rehabilitation service providers to better serve this population. The author is very well qualified to write on this subject. A first generation immigrant from the People's Republic of China, Gloria Liu holds a master's degree in special education with a major in rehabilitation science from Clarion University of Pennsylvania. Since 1993 she has been working with people with disabilities in the capacity of counselor and bilingual case manager. She started working with people with traumatic brain injury (
