Guest Login HEALTHY COOKING Chive Mashed Potatoes with Cream Cheese
Servings:
Preparation Time:
10 Minutes
Cooking Time: 20 Minutes
  • 1 (8-ounce) package cream cheese, cut into 1-inch cubes, softened
  • 2 1/2 pounds potatoes, peeled* and cut into 1-inch cubes (about 8 medium)
  • 3/4 to 1 cup milk
  • 1/2 cup snipped fresh chives
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon ground black pepper
1. Boil potatoes, covered, in medium saucepan in 2 inches water for 10 to 12 minutes or until tender. Drain; return to pan. 2. Mash potatoes with electric mixer or potato masher, gradually stirring in cream cheese until blended. Blend in milk, chives, salt and pepper. Stir gently over medium heat until heated through. Serve immediately.

Artisan cheeses come from all over the United States, as well as from France, Germany, Italy, Spain, and Greece. They're produced from the milk of goats, cows, sheep, and buffalo, and their range of textures includes very soft, soft, semi-soft, semi-hard, and hard. The spectrum of flavors goes from mild to strong (or sharp). These cheeses are often molded by hand in small quantities, and it can be hard to resist taking them all home to try! Here is a small sampling of European cheeses as featured on the cheese board at Cetrella restaurant.

What's the difference between sheep's, goat's, and cow's cheese?

"The difference between the three milks is their composition or structure. The milks have different protein structures, different fatty acids, and different butterfat contents. This is part of the reason that each milk, when it becomes cheese, tastes different from the others. There are other factors too, including how each animal metabolizes what they eat. That translates directly to the milk. For example, goats don't metabolize carotene the way that cows do. As a result, goat's milk remains snow white in color, while cow's milk has a yellowish or sometimes orangeish hue."

Recommendations for storage and handling of cheese will depend on the type of cheese. The following list will help identify the type of cheese to know how it should best be handled. Soft: Brie, Camembert, Cottage Cheese, Cream Cheese, Feta, Mascarpone, Neufchatel, Ricotta Semisoft: American, Asiago, Baby Swiss, Blue, Brick, Gorgonzola, Havarti, Limburger, Monterey Jack, Mozzarella, Muenster Firm: Edam, Gouda, Provolone Hard: Cheddar, Colby, Colby Jack, Gruyere, Parmesan, Romano, Swiss Specialty Cheese: Pasteurized Process Cheese, Cold Pack Bring out the best in flavor and texture of your favorite cheese by following these tips on storing, cooking and serving cheese.
HOW SHOULD CHEESE BE STORED?
HOW LONG IS IT SAFE TO KEEP CHEESE?
Soft cheeses should be eaten soon after purchasing. As a general rule, the harder the cheese, the longer it will remain fresh. But remember, natural cheese will continue to ripen, no matter how carefully it is stored. Hard cheeses will generally keep for several months, whereas softer cheeses will keep from one to three weeks after opening, if stored in an airtight container. In addition, large pieces of cheese tend to keep longer than shredded cheese. Process cheese slices are best if used within six months when stored in the original package at a constant 32 °F. Opened packages rewrapped tightly and stored between 30 °F and 40 °F are best if used within three to four weeks. Frozen packages opened and rewrapped tightly, and stored at °F or below, are best if used within six to eight weeks.
