By Jaye Beeler You can't go wrong with a cheese. First, get out of the processed-cheese section of the supermarket and venture to the oddly packaged cheese quarter. Here's what you need to know. There are four main categories of cheese: soft, semisoft, hard and very hard. These are four popular soft cheeses: Brie or Camembert has a cream to yellow interior and a thin, white, edible crust. Bake Brie in the oven (325 degrees) for 10 minutes and spread over crackers. Or pair Brie with melons, grapes or sun-dried tomatoes. Cream cheese is smooth and spreadable, often flavored. You recognize this cheese as a favorite bagel spread. Add it to omelets. Mix it with bleu cheese and walnuts and spread on crackers, then top with a bite of smoked salmon. Ricotta is a spoonable cheese with very fine curds. This cheese often is used to make lasagna.

Since Cheese is a produce obtained by the enzymatic ripening of milk, it is also one of the easiest food substances to digest. You will agree that it is just what growing children need, specially the ones who never seem to want those necessary cups of milk.
Cooking of Cheese
Cheese requires gentle handling. It is a delicate flavoursome substance that must not be overcooked. The flavour of cheese is exclusive. It is as easy to enhance as it is to destroy. Always use the full quantity of cheese mentioned in a recipe. Cheese, especially in Indian recipes requires a light masala base. When putting cheese in curries, lessen the ginger and garlic, strong flavours that interfere with the cheese taste. Strong heat isn't good for cheese - in baking, grilling or pot cooking. In frying, since the cheese is normally covered or coated it can withstand a high fire without spoiling. When a recipe calls for sliced cheese, thin slices are advised because they melt more easily. Sliced cheese is considered cooked as soon as melts. In its grated form cheese can melt, bubble and brown without toughening. Broadly speaking you are safe in mixing cheese with most firm vegetables. Of the soft ones aubergines suit best. Cheese adds flavour to lentils and pulses. Eggs and cheese are the traditional twosome. The Indian equivalent of adding cheese to pastry is to add it to parathas - in the stuffing or in the dough. When baking always preheat the oven to temperature specified.

Recipe
Pastry:
Proof yeast in warm milk.
Sift flour and salt together into large bowl.
Add sugar and stir in yeast mixture.
Beat in egg and butter and work into a dough using a wooden spoon; dough should be smooth and elastic and not stick to sides of bowl.
Cover bowl with a cloth and let rise in a warm place until double, about 1 1/2 hours.

Cheese has been an important food for centuries and is still widely used in various parts of the world. Many varieties have been developed, each with its own special flavor. The wide range in price, excellent food value and good keeping quality make it easy to use cheese often in planning nutritious meals.
Kinds of Cheese
All cheese is made from milk. Most is made from cow's milk, but some varieties are made from the milk of sheep or goats. Cheese making starts with the coagulation of the milk protein to form the curd. This is then separated from the liquid whey by heating, stirring and pressing. Next it is salted and cured or ripened. The specific method used gives a particular cheese its appearance, consistency, texture and flavor. More than 2,000 varieties of cheese have been defined and classified by several methods. A grilled cheese is one of the first sandwiches children learn to make two slices of bread with a little cheese in the middle. But as our palates mature, the grilled cheese sandwich moves to a higher level. We trade white bread for baguettes, American cheese for Emmentaler or Gouda, and margarine for real butter. In Great Grilled Cheese Inspired by Werlin's book, Browning's chef Anoosh Shariat will create his own version of a pesto-tomato grilled cheese. Guests will be served a plated assortment of sweet and savory sandwiches from Werlin's book. Cost is $35 a person for members, $40 for non-members. Clabber Milk Cheese This cheese has been known by two other names as well, Schmierkase and “Smearcase.” Place ½ gallon sour milk (not buttermilk) in a enamel double boiler and heat to lukewarm (not more than 85 degrees) until it becomes thick clabber. Let stand over the lukewarm water until curds and whey separate, then pour into a colander and drain off the whey. When well drained pour inot cartons, add one tablespoon thick sweet cream, cover and use as regular packaged cottage cheese.

Here and in Mexico, I've come across chilies stuffed with cheese, meat, fish, shellfish, vegetables, and many less familiar ingredients. Sometimes the chilies are dipped in batter and fried, sometimes they are grilled, sometimes they are baked with a topping, sometimes they are layered with a filling. And the chili itself isn't always the same. Sometimes it's hot; most times it's not. But wait there is chicken in the refrigerator and rice in the cupboard; add some steamed carrots and you have an inexpensive, gourmet meal in about 30 minutes. Most cookbooks will tell you that it takes time and energy to prepare an elegant meal. Forget it! Cooking a good tasting meal can be easy, fast and does not even require much planning. While students do not have much time to shop for food or prepare meals, they can make good tasting food. This book is for the student who wants a good meal quickly, inexpensively, reliably and most importantly to some people, without a mess to clean up. Most of the following recipes can be prepared in an apartment, dorm, or house as long as there is some heat source (gas, wood, electricity, propane). In fact, one person I know survived his senior year as a political science major with a barbeque as his main cooking apparatus. Microwaves also come in handy for reheating food if there is one available (cafeteria, dorm). Gas and electric ranges work equally well. Fresh, rather than frozen, foods always seem to taste better. While the availability of particular fresh items is dependent on geographical location and the time of year, for the highest nutritional value, fresh is best. Frozen vegetables also help in a pinch, but there is no reason to eat a frozen pizza or TV dinner.
