These muffins will be the first things to disappear from your brunch table! Fresh or frozen raspberries add a sweet tang that blends flawlessly with the rich cream-cheese flavor.

RECIPE INGREDIENTS 2 cups all-purpose flour 1/2 cup packed brown sugar 2 teaspoons baking powder 3/4 teaspoon ground cinnamon 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 of an 8-ounce container cream cheese with strawberries 2 beaten eggs 3/4 cup milk 1/4 cup butter or margarine , melted 1/2 teaspoon vanilla 1 cup fresh or frozen raspberries Powdered sugar (optional) RECIPE METHOD Lightly grease eighteen 2 1/2-inch muffin cups or line with paper baking cups; set aside. In a medium mixing bowl stir together flour, brown sugar, baking powder, cinnamon, baking soda, and salt. Using a pastry blender, cut in cream cheese till the mixture resembles crumbs about the size of a pea. In a small mixing bowl combine eggs, milk, melted butter or margarine, and vanilla. Add all at once to flour mixture. Stir just till moistened. (The batter will be lumpy.) Fold in fresh or frozen raspberries. Spoon into the prepared muffin cups, filling each two-thirds full. Bake in a preheated 400° oven about 20 minutes, or till golden brown. Remove from pans; cool slightly on racks. If desired, sprinkle lightly with powdered sugar.

MEXICAN POTATO SOUP
2 cans chicken broth
2 cans water
4-5 medium potatoes - cubed
1 7 oz can whole green chilies- cut into strips
longhorn cheese - cubed
cumin, garlic salt, pepper (to taste)
In dutch oven pour broth and water, add potatoes, green chilie strips and seasonings. Cook until potatoes are just about done, add cubed cheese and continue to cook till the cheese is stringy and potatoes are done. I serve with flour tortillas and sometimes a green salad.

TUNA CASSEROLE ALA MILLSFAMILY
3 cups medium pasta(I like to use the multicolored spirals)
1/2 cup celery
1/2 cup onion
1 can cheddar cheese soup
1/2 cup mayo (I use Miracle whip... it gives it that extra little flavor!)
3/4 cup wine (I use a dry white)
1 Tbl dill weed
2 6oz cans tuna packed in water, drained
1/4 cup pimento
1/2 cup sliced black olives
1/2 cup sharp cheddar cheese, shredded French Fried Onions Cook pasta. (of course I'm sure you knew this part! lol) Drain, set aside. Of course there are many variations for Tuna Casserole, including making it a salmon, crab or shrimp casserole. This is one of DH's favorite meals. I serve this with salad, and garlic toast. Preventing mold - To prevent mold on cheese, wrap it in a cloth dampened with saltwater before refrigerating. MOLD ON CHEESE: Some molds are used to make certain kinds of cheeses including Roquefort, blue, Gorgonzola, Stilton, Camembert, and Brie. The mold on these cheeses is safe to eat. Mold on other types of cheeses should not be there. Discard any soft cheese showing mold. For hard cheese, such as Cheddar, cut off at least 1-inch around and below the mold spot (keep the knife out of the mold itself). After trimming off the mold, the remaining cheese should be safe to eat. Re-cover the cheese in fresh wrap and keep refrigerated. The proteins in cow's milk are huge, fit for an animal that will one day weigh in over 500 lbs. The proteins in humans, sheep, and goats, are very short, which is why babies (the infirm, and arthritics) will often thrive on goat's milk, and raw goat's milk also is loaded with the enzymes that enable the metabolizing of the calcium.

Nothing warms the body on a cold winter night like a large bowl of heated, oozing pus. Throw in a couple of bloody, popped pimples and prepare yourself for one tasty meal!
A creative use of Johnny Cash's liver, cat turds spread over rice, and nubile buttocks of wild pigs as a side order treat.
Create a Mad Cow sensation! Mix classic Macraoni and cheese with melted down cow brains, add Paprika, and watery Tomatoes. Your friends will go insane over the taste! Note that it doesn't look that different going in as it does when rapidly shooting out of your system.
Originally a delicasse in China. This meal of deep fried cheese, hash browns, and dead men's prostrate glands is starting to see an unheard of popularity as a lunch snack among teens, young women, and uncircumsized midgets.
The first astronauts actually self-propelled themselves to the Moon eating massive quantities of this very meal and several Bic lighters.
This one's called Washington's Chicken. I know if George was anywhere near the size of these rolls Martha, his slaves, and several sheep would be very happy. Of course those fake Ivory choppers must have been a bitch during nipple play.

Cheese Ball
This is a good appetizer, if you are having people over for cocktails. It's easy to make, and tastes even better that the cheese balls you can buy. Ingredients: 2 packages (8 oz. each) cream cheese
2 cups shredded cheddar cheese
1 tablespoon chopped pimento
1 tablespoon chopped green pepper
1 tablespoon chopped onion
2 teaspoons Worchestershire sauce
1 teaspoon lemon juice
Dash of red pepper sauce Dash of salt Chopped pecans Directions: Soften cream cheese to room temperature. Combine cream cheese and cheddar cheese in food processor, and blend until smooth. Add all the remaining ingredients, except pecans, and mix well. Chill for several hours.

REILLY'S TUNA NOODLE CASSEROLE
3 cups uncooked elbow macaroni or 4 cups uncooked larger noodle (we use bowtie...farfalle)
Cook the macaroni until done, drain, and set aside.
one tablespoon butter
1/4 cup chopped onion
1/4 cup shredded carrot
1/4 cup chopped celery
1/4 cup chopped red pepper
Saute the onion, carrot, pepper and celery in the butter until onion is translucent and soft.
In a large bowl, mix the cooked veggies with one can of reduced-fat cheddar cheese soup (11 oz. can). Add one cup of light sour cream and 1/2 cup milk, you can use nonfat milk. Than add 1/2 cup shredded sharp cheddar cheese.
Stir in the cooked macaroni and GENTLY add two small cans or one large can tuna packed in water, drained.
Pour into a 1 1/2 quart casserole, sprinkle with another 1/2 cup shredded sharp cheddar and 1/4 cup shredded parmesan or romano cheese. Cover tightly. Here's the fun part...top with 1/2 cup of extra cheddar Goldfish crackers...not the bland ones but the extra cheesy ones..they taste like Cheese Nips. It is a cute tie-in, yes? Get it? This is an elegant salad of mixed greens that is a perfect first course for any dinner. The small amount of blue cheese gives it an extra blast of flavor, without adding a lot of extra fat or calories. 2 cups mesclun or mixed salad greens
!/4 cup chopped walnuts, toasted
2 T blue cheese, crumbled Dressing
1 1/2 tsp lemon juice
1/8 cup white wine vinegar
1/8 cup olive oil
3 small garlic cloves finely minced or pressed
one or two drops of hot sauce Serves 2 Toss salad greens, walnuts and blue cheese together. Whisk together all dressing ingredients. Pour over salad. Toss and serve.

  • 1/4 cup maraschino cherries
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1/4 cup crushed pineapple, well drained
  • 1/2 cup chopped pecans or walnuts
Preparation -
Drain the maraschino cherries on paper towels. Chop fine, then drain again. Beat softened cream cheese until smooth. Stir in the chopped cherries and drained crushed pineapple Refrigerate for about 1 hour. Shape the mixture into a 4" ball. Roll the ball in chopped nuts to cover the outer surface.
