INTRODUCTION

Several turtle species have been produced commercially, including the soft shell turtle, Trionyx sinensis japanicus , in Japan; the red ear slider, Pseudemys scripta elegans , and the diamond back terrapin, Malaclemmys terrapin sp. in the U.S.A.; and the green sea turtle, Chelonia mydas , in the Cayman Islands, Surinam, Reunion and Australia (Fig. 14.1) . The soft shell turtle and diamond back terrapin are cultured solely for food, the red ear slider for the pet industry, and the green sea turtle for food, leather and decorative products.
FRESHWATER TURTLE CULTURE
Historical Pond culture of the freshwater species began from the turn of the century in small systems in both Japan and the U.S.A. (Mitsukuri, 1904; and Hildebrand, 1929). Kurajiro Hattori began the culture of the soft shell turtle, or suppon, as part of a polyculture enterprise together with goldfish, carp and eel in Tokyo as early as 1875 (Mitsukuri, 1904). He later moved and expanded his operation at Shizuoka. Central Japan continues to supply the majority of the nation's farmed turtle market, although the industry is expanding to the warmer areas of southern Japan. Pond culture of the diamond back terrapin in the U.S.A. was developed along similar lines by the Bureau of Fisheries and private individuals in the early 1900's in North Carolina and Maryland. There is little commercial culture in the U.S.A. today, and most of the restaurant trade is supplied by wild-caught turtles. Pond culture of the red ear slider in Louisiana for the pet industry began in the 1960's and closely parallels the culture techniques for the terrapin and soft shell turtle.

The Cayman Islands' principal arts development organisation, the Cultural Foundation exists to stimulate, facilitate and preserve cultural and artistic expression generally, particularly the preservation and exploration of Caymanian performing, visual and literary arts. To this end, the Foundation initiates and runs diverse programmes aimed at encouraging and promoting the artistic talents of Cayman's most valuable resource, her people. Besides producing a number of high quality theatrical events at the Harquail Theatre every year, the Cultural Foundation manages the US$4 million multipurpose venue which was donated to the people of Cayman by resident, Mrs. Helen Harquail. The theatre is regularly rented out to groups and individuals for a variety events throughout the year.

The troupe, which has been put together with help from the Cayman National Cultural Foundation (CNCF) under the watchful eye of CNCF’s Artistic Director, Henry Muttoo, has been practicing hard, at least 15 hours a week for the last six months, and has passed various stages of selection and audition. Now they are ready to bring the best of Cayman traditional and modern dance to the rest of the world, at the Aberdeen International Youth Festival, which starts at the beginning of August.

  • Traditional Caymanian food includes turtle, brought to the table in the form of soup, stew, or steak, and conch (pronounced konk). Conch is a versatile dish and may be served as an appetizer in the form of fritters, a soup prepared as a chowder or thick with onions and spices as a stew, or even uncooked, marinated in lime juice as ceviche. Other favorites are: Breadfruit (similar in taste to a potato, and served in as many ways), cassava (another potato-like vegetable), fish tea (a broth-like soup), johnny cake (fried bread), patty (a meat pie that's a Caribbean standard as popular as the American hamburger), pumpkin soup (using Caribbean pumpkins, which are not sweet), saltfish (dried and salted codfish), and ackee (a fruit that tastes somewhat like scrambled eggs and, for breakfast, is served with saltfish.

    Hurricane damage in Cayman Islands. Today, HFH Cayman Islands, located in George Town, is laying the foundation for its pioneer program. It is selecting housing models and forming alliances prior to beginning construction in Grand Cayman. So far, strong support has been voiced by the government and public, through commitments to aid in land acquisition, as well as donated materials. HOUSING NEED While the Cayman Islands is considered to have the highest standard of living in the Caribbean, a segment of locals and immigrants struggles with few resources. A national survey found that 28 percent of the population earns between US$1,000 and $2,000 per month, particularly the inhabitants of the North Side and West Bay areas. A family dependent on one income earns between US$800 and $900 a month. Although salaries are tax-free, the cost of living is significantly higher than in many industrialized nations since almost all goods are imported. Of an estimated 15,000 households on the islands, half appear to be renting. The rent for a one-bedroom apartment starts at roughly US$700, making affordable housing an enormous obstacle for the poor. In addition, current loan options require a costly 10 percent to 25 percent deposit.
