Slit franks lengthwise, arrange 4 strips cheese in each. Pour half of bean mixture into 1 1/2 qt. baking dish, arrage 4 franks on top of beans. Place 3 slices bacon between franks. Repeat, arrange remaining 3 slices bacon on top of franks. Bake 30-40 min, or arrange in crockpot and heat on low for 8 hours..

Jacques: Eggs are really the casserole you do for brunch. One egg dish I love is eggs in a white sauce. You cook the eggs 8-9 minutes in boiling water, cool them in ice water so they're nice and cold before you shell them. Slice them, put them in a gratin dish, and make a cream sauce with a roux (melted butter and a tablespoon of flour to 2 cups of milk.) Cook the roux for a couple of minutes, add the milk and some cream, salt, pepper, a dash of nutmeg, and pour that over your sliced eggs. Cover with Gruyere cheese. This can all be done ahead, reheated, and then finished under the broiler. - From a Food Network online chat event

Comforting casseroles get a makeover
By MIRIAM RUBIN Last Updated: Jan. 15, 2005 You've no doubt seen the miraculous one-week home remodels on TV. We propose a casserole version that celebrates the virtues of the originals - our moms' favorite baked dishes - but updates them with cool, contemporary ingredients. Advertisement
For example, there may be nothing new about macaroni and cheese, but if you dress it up with goat cheese melted to a silky sauce, it's newly born as something fabulous. Those little pot pies we bought for pennies years ago can be freshened up with Sunday's leftover roast chicken topped by a savory herbed biscuit crust. Can there even be a new take on our beloved tuna noodle casserole? Tom Valenti's book, "Soups, Stews and One-Pot Meals" (Scribner, 2003) contains a remake that's a revelation, and we've further adapted it to make it easier. Valenti, chef and owner of Manhattan's Ouest and 'Cesca, wrote his book partly because he hates washing dishes but mostly because he loves big flavors like this gutsy dish.

    Spring and summer are times for barbecues and potlucks. It seems like everywhere you look, people bring their favorite casseroles to large gatherings. Casseroles are easy to prepare and do well for large crowds. They come in all different forms from the standard green bean casserole to something as fancy and delicious as crescent chicken casserole. I got together with a few of my friends and discussed our favorite casserole recipes and am passing them on to you here. I will start with the favorite of many the green bean casserole. All you do for this one is take a couple of cans of green beans, a can of cream of mushroom or celery soup, a half of a cup of milk, and some french fried onions. Combine part of the onions with the drained beans, whisk together the soup and milk, and then pour the soup mixture over the beans in a baking dish. This should be baked for about 30 minutes, then topped with some more of the french onions and baked for another 5 to 10 minutes. Green Bean Casserole

    There's something comforting about breakfast casseroles. They take minutes to prepare. They give you just enough time to relax with a cup of coffee while they're baking. They fill the house with an aroma that reminds people that life is good. They tend to be easy to transport and clean up after. They are great make ahead meals and they almost always impress those around the table. So, as the new year gets its start, why shouldn't we celebrate with a breakfast casserole? This month's recipe is a versatile casserole that starts with a crust of baked hashbrowns. Then a bevy of fillings are kissed with a little heat from the stove and poured over the potatoes. By the time it's done, you've got potatoes, eggs, dairy and even sausage on the table. (You might want to serve the orange juice separately!) There are even ways to tweak this recipe to make it relatively healthy. Try using thinly sliced Canadian bacon instead of the sausage, an egg substitute, skim milk and reduced fat cream cheese. I don't recommend using fat free cream cheese because the texture will not work with this recipe. So there you've got it. A breakfast casserole that's fast, versatile and tasty. What more could you ask for? Well, maybe that tall glass of orange juice!

    The first casserole I ever ate was chicken, mushroom and artichoke hearts simmered with soy sauce and Sherry. I can still see it, bubbling hot, served right from the oven in a covered, round Pyrex dish.

    I have long since forgotten the name of the graduate student, my beau of the moment, who served it up. He clearly thought cooking for me, using his mother's treasured recipe, would be sure seduction. It didn't work. His strategy didn't impress me any more than the casserole did.
    Fortunately, not long after this, my first post-college roommate, Betty Gorecki from Pulaski, Wisconsin, initiated me into the rites of making Tuna Noodle Casserole. Harboring none of my mother's prejudices, Gorecki, a home economics major at the University of Wisconsin, cooked frozen fish sticks regularly and believed in creamed spinach, making her white sauce from scratch. She also made a Bloody Mary hot enough to blister paint off the wall.

    Meatball Stroganoff Casserole Presented by Becky Low on May 09, 2005
    "Great recipe for calcium! Shorten the preparation time by making meatballs ahead and freezing." Ingredients:

  • 1/2 pound lean ground beef
  • 1/4 cup All Bran cereal
  • 3 tablespoons milk
  • 1 egg
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 1 clove crushed garlic
  • 2 packets dry beefy onion soup mix
  • 6 ounces egg noodles
  • 1 can (4 oz.) sliced mushrooms
  • 1 can (10.75 oz.) condensed cream mushroom soup
  • 2 cups plain lowfat yogurt
  • 1 cup part-skim shredded mozzarella cheese
  • fresh parsley to garnish Method: Preheat oven to 425 F. Combine beef, bran cereal, milk, egg, Worcestershire sauce, pepper, garlic, and one packet of onion soup mix; mix well. Shape into 18 meatballs. Place meatballs on baking sheet, sprayed with non-stick spray, and cook 15-20 minutes or until cooked through; remove from oven and reduce oven heat to 350 F. Prepare egg noodles according to package directions; do not overcook. Drain, place in buttered 9x13 baking pan. Arrange meatballs on noodles. Drain mushrooms and arrange on noodles. Combine mushroom soup, 2nd packet onion soup mix, and yogurt. Spread over meatballs. Sprinkle with cheese. Bake 30 minutes or until hot and bubbly. Garnish snipped fresh parsley. NOTE: Try substituting beef soup mix for the onion.
