Walking through grocery stores over the last couple of years and seeing the product changes based on customer demand has been interesting, to say the least. Prepared food products have improved dramatically, becoming more upscale, more appealing and easier to use. One of the latest trends is the incorporation of authentic regional cuisine to entice the buyer. Though Southeast Asian (Thai), Indian, Central American and Mexican concepts have been hot lately, what better place to go, than the country that influences most Western cuisine and many consider the standard against which all cuisines are measured: France.

Game (le gibler):

The term "game" is the name given to the meat of wild birds and animals which are 'collected'; shot, trapped etc for the table. These are generally classified into two groups:
  • feathered furred.
But, I always think that a third group also needs to be added; to allow for the likes of: insects, snakes etc, this third group I normally refer to as 'Exotic'
Each year, here on the West Coast of New Zealand, we host a Wildfoods Festival to celebrate all the varieties of wildfoods that can so easily be obtained. If it can be shot, netted, speared or gathered it will be served.
This is the largest food festival in New Zealand with over 20,000 people attending the one day festival. To put this into perspective; the town that hosts it only has a normal population of 3,000. Meaning 17,000 people from all over New Zealand and the world come for this one day.

Click small image to reveal large JPEG photo Rosemary Lucas Exploded diagram of Aga David Lucas As both the boiling and simmering hot-plates are machined to a very precise flat surface. it is very desirable that the bottoms of all cooking utensils be as flat and thick as possible so that they make really good contact and thus transfer the heat efficiently. Of whatever metal the pans are made, cast iron, stainless steel, or aluminium, an accurately ground base at least 5mm thick is the minimum for good long term performance. Thin pans with thin bases will soon distort, they will take longer to heat their contents, and food will stick and burn all too readily. Utensils marketed by AGA have always been first class: we have for example an aluminium Agaluxe (Pyramid ) 4 pint kettle which has been in use for over thirty years and still boils water at about one pint per minute on the boiling plate.

As I write this, it is after New Year's Day, and winter has finally arrived here in Toronto - and it is serious about making up for lost time, with cold and snow the likes of which have never been seen here (and which is causing no end to amusement to people in other parts of the country where this is of course perfectly normal winter weather!). Anyways, when it is cold and snowy outside, a hot hearty casserole is just the thing to warm you up on a winter weekend. Mix it up and put it in to oven to bake while you go out skiing or skating (or if you are not a winter person, like I'm not, while you sit by the fire with a book). Casseroles are mostly quick and easy to prepare. Most of these also freeze well, so I'll make a big casserole on the weekend and freeze in individual servings for a quick meal during the week.

TUNA CASSEROLE
8 oz medium egg noodles
2 1/2 qts boiling water
1 tbsp cooking oil (optional)
2 tsp salt
10 oz condensed cream of mushroom soup
1 cup yogurt
1/4 cup chopped green onion
7 oz flaked tuna, drained
1/2 cup grated Parmesan cheese
10 oz sliced mushrooms with juice
1/3 cup sliced green-pimiento-stuffed olives (I leave these out) 1/2 tsp salt 3/4 cup grated, medium Cheddar cheese Paprika, sprinkle Cook noodles in boiling water, cooking oil and first amount of salt in uncovered Dutch oven until tender but firm, about 5 to 7 minutes. Stir occasionally. Meanwhile, combine next 8 ingredients together in large bowl. Drain noodles and add them to mixture. Mix. Turn into greased casserole. SUBMITTED BY TERRI L. 3 cups medium pasta(I like to use the multicolored spirals)
1/2 cup celery
1/2 cup onion
1 can cheddar cheese soup
1/2 cup mayo (I use Miracle whip... it gives it that extra little flavor!)
3/4 cup wine (I use a dry white)
1 Tbl dill weed
2 6oz cans tuna packed in water, drained
1/4 cup pimento
1/2 cup sliced black olives
1/2 cup sharp cheddar cheese, shredded French Fried Onions Cook pasta. (of course I'm sure you knew this part! lol) Drain, set aside. Of course there are many variations for Tuna Casserole, including making it a salmon, crab or shrimp casserole. This is one of DH's favorite meals. I serve this with salad, and garlic toast. REILLY'S TUNA NOODLE CASSEROLE
3 cups uncooked elbow macaroni or 4 cups uncooked larger noodle (we use bowtie...farfalle)
Cook the macaroni until done, drain, and set aside.
one tablespoon butter
1/4 cup chopped onion
1/4 cup shredded carrot
1/4 cup chopped celery
1/4 cup chopped red pepper
Saute the onion, carrot, pepper and celery in the butter until onion is translucent and soft.
In a large bowl, mix the cooked veggies with one can of reduced-fat cheddar cheese soup (11 oz. can). Add one cup of light sour cream and 1/2 cup milk, you can use nonfat milk. Than add 1/2 cup shredded sharp cheddar cheese.
Stir in the cooked macaroni and GENTLY add two small cans or one large can tuna packed in water, drained.
Pour into a 1 1/2 quart casserole, sprinkle with another 1/2 cup shredded sharp cheddar and 1/4 cup shredded parmesan or romano cheese. Cover tightly. Here's the fun part...top with 1/2 cup of extra cheddar Goldfish crackers...not the bland ones but the extra cheesy ones..they taste like Cheese Nips. It is a cute tie-in, yes? Get it? 90's STYLE TUNA CASSEROLE
2 cans (6 to 6 1/2 oz.) water-packed tuna, drained (or 1 lb. fresh skinless, boneless tuna steaks)
2 tablespoons lemon juice (if using fresh tuna)
8 oz. wide egg noodles
4 tablespoons unsalted butter
8 oz. mushrooms, sliced
1/3 cup all-purpose flour
2 cups low-fat milk
2 tablespoons cornstarch
1 bottle (8 oz.) clam juice or 1 cup fish stock
1/4 cup dry white wine
1 teaspoon salt 1/4 teaspoon pepper 1/4 grated nutmeg 2 tablespoons snipped fresh dill or 1 teaspoon dried oregano, crumbled 3 tablespoons breadcrumbs 2. Start cooking noodles according to package directions. Meanwhile, melt 1 tablespoon butter in large skillet over medium heat. Add mushrooms and cook without stirring, 1 to 2 minutes, until browned. Stir and add 1 tablespoon water; cook 1 minute until tender. 3. Melt remaining butter in medium saucepan over medium heat. Stir in flour and cook, stirring, 1 minute. Stir in milk and bring to simmer, stirring constantly. Stir together cornstarch, clam juice, and wine. Pour into sauce, stirring constantly; add salt, pepper, and nutmeg. C o o k ... a - Crawfish Casserole Riche Crawfish Casserole Riche is a rich dish that is similar in ways to an au' gratin and you'll see the difference. This goes well as a side dish. Riche (pronounced "reesh") is French for rich. 1 med. onion - finely chopped
1 rib celery - finely chopped
1/2 bell pepper - finely chopped
1/2 stick butter 1/2 cup of fresh chopped parsley
4 leaves green onion tops - finely chopped
1/2 Tsp. "Old Bay" or Tony's Creole seasoning
2 cloves fresh diced garlic
1 pound peeled crawfish (see note below)
1 pint heavy whipping cream
1 pack (not box) Ritz Crackers crushed
Shallow casserole or au' gratin dishes. Preparation In a saucepan on med-low heat melt the butter and add onions and celery. Cook until onions are clear and soft, don't brown. Add garlic and sauté for another few minutes. Add crawfish, green onions, garlic and seasoning; cook for a few more minutes. Add the cream and mix well. Raise heat to med. and just get the mixture bubbling then remove from heat. Cover and let sit for 10 minutes. Take a spoon out to taste. Add seasoning if needed (see note below).

3 lbs. ground beef or chuck
1 - 15oz. can Cajun Style Stewed Tomatoes
1 - 8oz. can tomato Sauce
1 med. onion chopped
1 bell pepper chopped
3 stalks celery chopped
1/2 tsp. minced garlic
1 egg
1/2 cup rice
1 tsp sugar 1 tsp. Creole Seasoning 1 beef bullion cube dissolved in 1/2 cup of water Salt and Pepper Pull outer leaves of the cabbage leaving them whole. Rinse well. Take some of the inner parts of the cabbage and chop - about 2 cups worth. In a large bowl put the ground beef, raw vegetables, chopped cabbage, egg, rice, 1/4 can of tomato sauce, 1/4 can stewed tomatoes and liquid (crush the tomatoes), 1/4 of the bullion liquid, creole seasoning and sprinkle salt and pepper. Use your hands to mix this up very well.
