In the process of cooking many chemical changes occur, affecting the appearance, taste and texture of meat.
How Meat Changes During Cooking
    Muscle proteins shrink and moisture is lost - As meat is heated, muscle proteins coagulate and shrink, squeezing out water. The longer you cook meat, the more water is forced out. Prolonged cooking, or overcooking, results in meat that has lost so much moisture that it becomes dry and tough to eat.
    Colour changes
    Heat affects the pigments and changes the colour of meat. The red colour of uncooked beef changes to light pink, and finally to a brown/grey shade as the "degree of doneness" increases.
    Connective tissue softens
    During long, slow cooking, some of the connective tissue softens, and gelatinises.

PEOPLE HAVE PROBABLY been making casseroles since pots were created and various combinations of foods were blended together and heated over the coals of a fire. Although casseroles are not an American creation, they certainly have a long-standing place in our culinary history. These unpretentious one-dish meals bring to mind potluck suppers, social gatherings where friends catch up on local gossip while enjoying savory casseroles and exchanging recipes for those delicious dishes. The original budget-stretching meal, early casseroles in this country contained a minimum of animal products. My grandmother often made meat- and dairy-free casseroles while raising her children during the Depression when money was scarce. Similar items were my first introduction to the delicious world of these dishes, and they are still among my favorite kinds of casseroles.

This zesty chicken dish is one that has been made in my family for years. The recipe was first introduced to me by my aunt and I truly thought it looked like a big mess when she was mixing it up.
I have to admit that once she started that casserole cooking in the oven my mouth began to water from the wonderful aroma and the fantastic mix of smells in the air. This is a quick and inexpensive dish to prepare for and I would venture to guess that it will soon become a family favorite.
Only warning is that the dish is spicy if you follow my recipe so be sure to adjust the ingredients if you have small children or sensitive stomachs in the house.
Chicken Enchilada Casserole
3 Plump chicken breasts (about 2.5 cups)
1 can cream of chicken soup 1 soup can of milk 1 6 oz. can chopped green chiles 1/2 cup chopped white onion Bag of tortilla chips Picante sauce or Salsa Shredded cheddar cheese or Velveeta (I prefer the Velveeta, it melts better and makes the casserole cheesier)

Sat Feb 26 04:51:06 EST 2005 Dear Peter Wow!! It strikes me as inane and meaningless to say "I have a good stove" without specifying what it is that I intend it to cook. I can cook eggs on the sidewalk, but it is another matter endirely if I wish to boil water, make Pinto Beans, Bannock, Bread, or 24 hour stew. Most of the effort on the Stoves list over the past years is directed at burning biomass in clean fires. Other then Lanny Hanson, who designed and built a very successful Pinto Bean Cooker in a very short time, nobody on the stoves List seems to have made the connection to end use. Does anyone have a definition of Cooking Heat Requirements, that would be an extension of the work, that would allow specification for a "Standard Stove" for cooking the things that people want cooked?
