Do you enjoy personal interaction and working with people of diverse backgrounds? Interested in a career that you can travel with? Then why not investigate a career in the food service industry? While you think this question over, ponder the following statistics: According to the National Restaurant Association (NRA), there are more than 10.2 million people employed internationally in the food service industry. That’s 8 percent of the world’s total work force—and the number is expected to grow. By the year 2006, 12 million people will be employed in food service. Plus, there are approximately 815,000 food service locations in the United States, according to NRA, accounting for an estimated $970 million in accumulated sales during a typical day. What does this mean to you? With the extent of growth in the industry, managers are going to be in high demand! By NRA statistics, the food service industry will need 515,000 managers by 2006. Easy-to-print version E-mail this story In graduate school, I published two articles and thought that I was prolific. Now I write two columns a week. In graduate school, I saved my cash and splurged on an occasional good meal. Today I have an expense account for food and pick up my friends' tabs. In graduate school, the faculty called me Todd and my students called me professor. Now I have a wallet full of credit cards with assumed names. Through good timing and dumb luck, I became a food critic instead of a professor. A year ago, I had given up on finding a faculty job and decided to focus on landing either an entry-level job in university administration or a nonacademic job at a nonprofit group. But the best work that I could find, after 115 applications, 27 informational interviews, and 6 job interviews, was a long-term temporary assignment answering the phones at a bank. That was not what I had expected to be doing as a 30-year-old with a dissertation in hand. But then I never expected to be a food critic in New Orleans, either. Three or four times a week, I make reservations under a fake name. I find friends who are willing to eat for free, which is never difficult. At the restaurant, I tell everyone what to order and, when the food arrives, I demand that they pass me their plates for a taste.

The production and distribution of food, including agriculture, fisheries and related services, is the largest and most important economic activity in the world. The health and welfare of people everywhere depends on good agricultural yields and on the reliable storage, successful processing and safe handling of all types of food. All of these activities, and many others, create a demand for well-qualified and experienced specialists who can play their parts in the complex and increasingly sophisticated food supply system.
A levels
Most courses in food science and technology have a minimum requirement for two A levels (or equivalent AS levels) in science subjects chosen from chemistry, physics, food technology, biological science and mathematics. Home economics is also accepted for some courses as well as computer science, economics, geology and zoology.

Choose one or more of these themes which could inspire a broad spectrum of activities depending on the age and interests of your students. Since the French-speaking world is a leader in medicine, transportation, and communications, you may want to select activities which highlight these themes to students who are fascinated by science and its applications. The computer now plays a large role in students' lives, and accessing France through the Internet brings the language into real-use situations. In addition, parents are interested in the career possibilities open to young people fluent in French. Below are possibilities for projects which can be incorporated into National French Week celebrations. The challenge is to take these activities out of the classroom and into the school and community to maximize the visibility of French. As you consider projects, think how they can be played out on a larger scale in the student center, the town library, the local newspaper. Engage the support of merchants and travel agents who deal with French products and French-speaking countries on a daily basis. Local industries may have chemists and researchers who might lend their expertise and ideas. Involve the parents of your students whose occupations are related to science, technology, and career placement. The challenge is to create, with the talent and resources at your disposal and in a dynamic and imaginative way, a celebration of French using these themes.
