Cooking Gardening Holidays ... Search How to Make Your Own Rock Candy You will need:
  • 1 Glass jar or drinking glass
  • 1 Piece of cotton string
  • 1 Pencil or stick
  • 1 Paper clip
  • 1 Food coloring (optional)
  • 1 c Water
  • 2 c Sugar
  • Additional sugar
Tie a short piece of cotton string to the middle of the pencil or stick. Attach a paper clip to the end of the string for a weight. Moisten the string very lightly, and roll in a bit of sugar (this will "attract" the sugar crystals from the syrup to the string). Place the pencil or stick over the top of the glass or jar with the string hanging down inside. Heat the water to boiling, and dissolve the 2 cups of sugar into it. For the biggest crystals FAST, heat the sugar-water solution a SECOND time, and dissolve as much additional sugar as you can into it. Add a few drops of food coloring to the solution if you want colored candy. Pour the solution into the prepared glass or jar and leave undisturbed for a couple of days. Depending on how much sugar you were able to dissolve into the water, you should start to see crystals growing in a few hours to a few days. Source: Karen Mintzias

You will need:
  • 1 pkg (3 oz) softened cream cheese
  • 1/2 tsp liquid almond flavor
  • 6-7 dozen whole almonds
  • 3 cups powdered sugar
  • Candy paper cups
Mix together cream cheese and almond flavor.
Gradually add 2 - 2 1/2 cups powdered sugar. Knead until no longer sticky.
Shape into 3/4 inch thick balls. Roll in powdered sugar. Flatten balls by pressing an almond into the center.
Set in candy papers. Let dry at room temperature. Store loosely covered in fridge.
Makes 6-7 dozen candies. Cream Cheese Mints
You will need:
  • 1 pkg (3 oz) softened cream cheese
  • 1/2 tsp liquid peppermint flavor
  • 3 cups powdered sugar
  • Candy paper cups
  • Food coloring (optional)
Mix together cream cheese and peppermint flavor.
Gradually add 2 - 2 1/2 cups powdered sugar. Knead until no longer sticky.
Divide into portions (one for each color). Knead in food colors of your choice.
Shape into 3/4 inch thick balls. Roll in powdered sugar. Flatten balls w/ a fork (or press your thumb into the center).

How to Use a Candy Thermometer
Candy making relies on precise timing during the cooking process. A candy thermometer is your best guarantee that your candy will be the right consistency after cooking. Remember to follow your recipe exactly and use your thermometer as directed. Steps: Do a test to be sure your thermometer is accurate. Let it stand in boiling water for 10 minutes. If the thermometer doesn't read 212 degrees F, you need to figure the difference and add or subtract to make the temperature measurements correct for your candy. Gather the ingredients for your candy recipe. Follow the recipe as directed until you get to the cooking stage. Cook the candy as directed. Some recipes will give you a temperature to aim for, while others may use one of the following terms: "thread," "soft ball," "medium ball," "firm ball," "hard ball," "very hard ball," "light (or soft) crack," "hard crack" or "caramelized sugar" stages. The temperatures for some or most of these terms should be indicated on your candy thermometer. Place the candy thermometer in the pan with the cooking candy. Be sure the bulb of the thermometer never touches the bottom of the pan, or the temperature will register too high. You want to find out the temperature of the candy mixture, not of the pan.

    A Brief History of Fudge
    Fudge was invented in the United States more than 100 years ago. The exact origin is disputed, but most stories claim that the first batch of fudge resulted from a bungled batch of caramels. One of the first documentations of fudge is found in a letter written by Emelyn Battersby Hartridge, a student at Vassar College in Poughkeepsie, NewYork. She wrote that her schoolmate's cousin made fudge in Baltimore in 1886 and sold it for 40 cents a pound. Miss Hartridge got hold of the fudge recipe, and in 1888, made 30 pounds of this delicious fudge for the Vassar Senior Auction. Word spread of this great confection to other women's colleges. (Wellesley and Smith have their own versions of this fudge recipe.)

I needed to make them at home so I could have quick, easy and constant access to a candy apple at all times. the candy apples were a little harder to make than I realized. Caramel apples are way easier in comparison. We had to buy a candy thermometer! Oooooh!! So you mix together.... 3 c granualted sugar
    1 c corn syrup
    1 c water
    1/2 t cinnamon
    1/4 t red food colouring Or you buy the packet of stuff at the grocery store that you just mix with water. Heat it until the thermometer says about 290 degrees. (translation... very hot!) De-stem the apples, stab them with popsicle sticks and when the mixture is hot enough, dip each apple into it then set aside to cool. We used a variety of apples from granny smith to cortlands. I think a crisp, tart apple works best.. it offsets the sweetness. They are so pretty when you are done. The candy mixture was doing that glass stringying thing, so I was decorating the apples.

To marshmallow mixture, blend in 2 drops yellow food coloring and 1 drop red food coloring, adding more coloring if necessary to reach desired shade. Add marshmallow mixture to cereal mixture; stir quickly to combine. Spread on a large buttered pan; press with buttered hands. While warm, press on candy pumpkins spaced 1 to 1/2-2 inches apart. Refrigerate and cut into squares.

    • Nothing is more important to successful candy making than understanding, and getting the correct thermometer reading
    TO DO: The first thing that should be done each day, before you start, is to TEST YOUR THERMOMETER: Immerse the thermometer into cold water. Bring the water to a boil. At what temperature DOES water boil today at your house?
    We are taught that water boils at 212 degrees...well...very seldom! At sea level water boils at 212 degrees (on a sunny day.) Water will boil at different temperatures depending on altitude. Most of us don't live at sea level...and it can be cloudy or raining...So we learn to compensate:
    If YOUR water boils at 210 degrees, you should ALSO reduce the candy-cooking time by 2 degrees. (Most of the time, water boils here about 208 degrees). HERE'S HOW IT IS: IF you were to cook the candy to the usual - say - 280 degrees ON the thermometer, then it would be 2 degrees overcooked. Since the weather or ground level has caused your thermometer to be 2 degrees off, you would need to cook it only to 278 degrees. Try not to cook candies on a rainy day. The barometric pressure, when the air is heavy- on rainy and cludy days, holds the thermometer down. Candy is done sooner too. "Make candy when the sun shines," ...motto of good candy makers. It is very difficult to make candies that turn out perfect on rainy days...even for an experienced candymaker. I recommend a TAYLOR or WILTON thermometer. They are around $10-15.00. These are encased in metal and the bulb will not accidentely touch the bottom of the pan and give false readings. I also use it to stir with if I am making candy that should be stirred.
