An addition to the APV Baker range
APV Baker is supplying a Compact hard candy cooking and depositing system to a leading confectionery manufacturer in the Middle East.
The Compact system is a recent addition to the APV Baker range of cooking and depositing systems, and offers a rapid return on investment from outputs up to 320 kg/hour, with the cost benefits that have persuaded many companies to switch from die forming to depositing.
The Compact concept provides cost-effective entry to the confectionery market for companies in developing countries.
Solid hard candy, two-colour centre-fill hard candy, two-colour striped hard candy and fruit or milk/cream-based candies can all be made on one Compact line.
Continuous operation ensures consistent quality with less scrap, and also reduces labour requirements. Rapid product changeover times are achieved with minimal waste, and maintenance requirements are minimal.
The line incorporates an APV Baker 'Microfilm' swept surface cooker, regarded as the industry standard for high boiled, milk and cream candies. The depositor is a Compact version of the APV Baker series that offers the confectioner more choices than any other range on the market - over 400 APV Baker depositing systems are at work around the world.
Compared with die forming, depositing typically offers a higher quality appearance with improved clarity, plus a smoother 'mouth feel' with quicker flavour release. Other advantages include the ability to make a wide range of bright, sophisticated products with high consumer appeal, in a variety of weights, and with accurate control of piece weight and shape.

Using a Candy Thermometer
A reliable candy thermometer makes knowing when candy is done easy.

  • Check an altitude table to find out the boiling point in your area, then adjust the cooking time if necessary.
    For an accurate reading, be sure the thermometer stands upright in the candy mixture. The bulb shouldn't rest on the bottom of the pan.
    Recipes have you cook candy to a certain temperature or they may just give a hardness description. Our chart of Candy Cooking Tests (below) will help.

Tip: Melting Chocolate in Liquid What if your recipe calls for melting chocolate along with water or some other type of liquid? That's fine, as long as the liquid is mixed with the chocolate from the beginning of the melting process, it won't get grainy on you. Be careful though, because adding even a drop in mid-melting will cause this problem. Also consider a top quality Double Boiler for this task.

Making candy at home can be a fun and even a special event. You can personalize candy, making it special for someone special! In addition, making your own gumdrops, lollipops, fudges, truffles or taffy can lead to tasty candies that taste better than "store bought".
Candy making tips:
  • Always use the recommended size saucepan. If you use a different sized pan you can negatively affect the quality and cooking time. If a size is not stated, then size is not important.
    Never double a candy recipes. When you try this, you change the cooking time specified in the recipe and this could result in a failed batch of candy - and quite the mess not to mention the waste!
    A cool, dry day is best for making candy. Heat, humidity and altitude can affect quality. If the best time for you is on a humid day, cook the candy to a temperature a degree or so higher than the recipe specifies.
    Always dissolve sugar completely over a low heat to prevent crystallization. In addition, use a heat-safe spatula to scrape down the sides of your pan to get any grains absorbed into the mixture. When the candy reaches the boiling stage, do not stir it until it is cool. Opposite the heating process, you never want to stir the candy during the cooling process.
    Always use a reliable candy thermometer, checking your candy thermometer for accuracy. Do this by placing it in water and bring it to boiling. The thermometer should read 212-degrees at the boiling point. To get an accurate reading, be sure the thermometer stands upright in cooking mixture and the bulb does not rest on bottom of pan. Read it at eye level; watch temperature closely. After 200-degrees, temperatures go up very quickly. If the reading is too high or too low, take the difference into account when testing your temperature while making candy.
