Canadian Shore Lunch - The Green Island Way
Shore Lunch, Canadian Shore Lunch, Green Island Resort, Cooking a shore lunch. My First Shore Lunch Green Island Lodge is at the Northern end of Manitou Lake. The flight in to the lodge takes about 35 minutes from Cass lake at Fort Frances. Now the fishing is great, but even this die hard fisherman was more than impressed with the food at this lodge. So I will write about the fishing later..More impressive still is the Shore Lunch. We started out Sunday Morning with our guides Vince and Ray just after breakfast around 8AM central time. Our first stop was a Lake Trout Hole about 10 minutes from camp.

These fish had a brownish blue color to them. The flesh was pink
similar to salmon We caught some good eatin sized fish of about 2 pounds each, and then moved on to fish for some bass and pike. It did not take take long to catch a nice mess of fish. About 10:30 we went to a prearranged spot on the lake and met with Steve Hensley and Vince Hissong our fishing partners of Team Fishin.com. Ray and Vince the guide started to prepare the shore lunch. From out of 2 boxes they pulled 2 large frying pans, a pot, plates and forks, fixins, and condiments.

Why Sparks Occur When Cooking Vegetables in a Microwave
When cooking certain vegetables in a microwave, sparks may occur and, on closer examination, the vegetables may display small burns. Dense vegetables such as green beans, carrots and green peppers have a higher amount of minerals in them than other food items. These minerals include iron, magnesium and selenium.
Arcing Effects in Microwaves
The minerals act like tiny pieces of metal and create arcing effects in a microwave. The sparks result as the microwaves reflect or bounce off the metal. The arcing does not harm the food but it does prevent it from heating thoroughly. For more information on food safety, visit the Canadian Food Inspection Agency website at

FOOD SAFETY FACTS ON MICROWAVE OVENS
Foodborne illness can occur as a result of using improper food handling techniques and cooking practices when using a microwave oven. Thorough cooking is the best way to kill bacteria present in food. Because cooking in a microwave oven might not result in even cooking, follow these instructions.
The Microwave
  • Do not operate the microwave oven if the door does not close firmly, or the oven is damaged in any other way. Do not use metal pans made for convectional ovens or aluminum foil as they cause uneven cooking and could even damage the oven Clean the oven frequently with water and mild detergent.

Canadian Grain Commission develops improved method of testing pulse cooking times
WINNIPEG, July 30, 2004 - The Pulse Research team of the Canadian Grain Commission (CGC) has solved a significant problem in the area of pulse quality testing by automating a method for determining cooking time and modifying the device used in the test. The improved device is called the automated Mattson cooker. "The team's modification of the Mattson cooker greatly improves the device's efficiency and accuracy," says Bill Scowcroft, director of the CGC's Grain Research Laboratory. "Thanks to the team's innovative work, the automated Mattson cooker method is more cost-effective than existing methods." The lengthy cooking time of pulses is a major quality issue for pulse breeders, processors and producers. Several methods exist for determining cooking times but their results are often inconsistent and require constant monitoring by an operator. The automated method makes testing less time-consuming and therefore possible to use in quality control and research applications. The Mattson cooker is a relatively simple device that consists of a cooking rack with perforated depressions, each holding a single seed. A weighted plunger rests on top of each seed. When the seed is cooked, the plunger penetrates the seed and drops through the perforation in the cooking rack.

Nattily in Naples The Bay of Naples counts among those natural formations in whose presence your eye returns again and again, looking with wonder and appreciation, like the grandeur of the Rockies viewed from the prairies of central Colorado, or the Alhambra in Granada. The Bay encompasses a teeming world of culture and history, commotion, with the majesty of Mount Vesuvio rising above it all. We had avoided Naples on a previous trip to Italy . Thankfully so, since driving in this chaotic, grimy city would have quickly dissuaded us from staying. This time, we arrived without a vehicle to tie us down from exploring the streets, the old city, the small and large plazas, the little but lovely markets. Naples, the city, has a certain character, home-spun sophistication, and charm that grows on you, only slowly. It is a city, almost still a city-state, with bustle galore. It rises, and plunges, and slopes away from the aesthetically pure crescent-shape of the Bay, with
