Veel mensen vragen ons altijd; wat is een de Canadese keuken nu eigenlijk?
Ieder relaas over de wortels van de culinaire erfenis begint met de Native-Americans en de Inuits,de oorspronkelijke bewoners van Canada. De eerste kolonisten konden lang niet in al hun behoeften voorzien zonder de hulp van de Natives en Inuits en hun kennis van lokale ingredi«nten hadden ze het nooit overleefd. Toen die kolonisten arriveerden, kookten de Natives al vissoep, mais-chowder en pompoensoep, stoofden ze bonen en succotash, rookten ze zalm en andere vis. stoomden ze mosselen boven hete stenen onder een laag zeewier, roosterden vis en wild boven kampvuren en maalden gepelde maiskorrels tot meel voor brood, cake of pap. Ze gebruikten al notenolie en zoeten gerechten met allerlei soorten honing en ahornsiroop. Ze hadden ook al de nu zo populaire popcorn uitgevonden.

We have numerous volunteers that arrive and form teams of sandwich makers. Most of volunteers have been a part of our program year after year. Some make sandwiches, some set up the tables with cutlery, juice, pickles, napkins, etc. and plates of home made sandwiches. Our guests are very hungry when they arrive and can start eating the sandwiches as they wait for the salad and main course to be served.
Cooking for up to 300 people is tricky, but it's also fun and interesting. Now entering our twelfth year, we've all learned a lot. It has to taste great, look good and be fresh, nutritious and affordable. That said, we don't use any stale-dated or dubious-looking food. Our guests are often very fragile, and we like to think it's the good food they get in the churches that helps to keep them going.
SANDWICHES
We find a food processor invaluable in making sandwich fillings. Our Braun was donated, but we recently bought a new Kitchenaid. Both are in constant use.

Its purpose was to limit the use of imported food and to free up supplies for the military and for the allies. First sugar was rationed, then coffee, tea and butter. Kate Aitken's Canadian Cook Book During the war years of the 1940s, inexpensive foods became the mainstay of many households. Ground beef was cheap and adaptable, and heart and tongue were common ingredients. Throughout the next two decades, one of Canada's most influential cooks was Kate Aitken.
