Special Terms
FOOD FADDISM : A general term used to designate nutrition nonsense. Food faddism is characterized as much by its exaggerations as absolute errors about nutrition and diet. QUACK : "Anyone who promotes medical schemes or remedies known to be false, or which are unproven, for a profit."* (U.S. House of Representatives, May, 1984). *In the opinion of the NCAHF offering such goods or services for a donation or through alleged "nonprofit" schemes still constitutes quackery. NUTRITION QUACKERY : Utilizing invalid methods for assessing an individual's nutritional status, or promoting the use of food supplements, nutrition substances or special diets that lack reasonable scientific evidence of safety and effectiveness to cure, treat or prevent disease, increase longevity, enhance physical, sexual, or mental performance. DEGREE MILL : "An organization that awards degrees without requiring its students to meet educational standards for such degrees established and traditionally followed by reputable institutions." (U.S. Office of Education, March 1974). "Degree mill" and "diploma mill" are used synonymously.
The Problem
The laudable increased interest in health and nutrition on the part of the public is being exploited by unqualified "nutritionists" advertising themselves as "consultants" or "counselors." In reality, such people are salespersons with spurious credentials obtained through diploma mills or certification mills.

Fat is essential to maintain the integrity of the cells in the body. Fats help the body absorb fat-soluble vitamins such as A, D, E and K, and provide a concentrated source of energy that is stored in cells for future use.
Many nutrition professionals recommend that no more than 35% of daily calories come from fat, most of which should be from the healthier, unsaturated fats. In July 2003, the FDA approved a qualified health claim that can appear on packages: "Scientific evidence suggests but does not prove that eating 1.5 oz. per day of most nuts, such as pistachios, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease."
It is important to understand the types of fat in the diet.

Rethinking School Lunch
The Rethinking School Lunch (RSL) program uses a systems approach to address the crisis in childhood obesity, provide nutrition education, and teach ecological knowledge. CEL spent five years researching the 10 interrelated dimensions below, which are vital to achieving this vision:
The RSL program: - Includes an online Rethinking School Lunch guide, an essay series, "Thinking outside the Lunchbox," technical assistance, grants, and presentations - Creates a framework for a comprehensive curriculum that integrates campus gardens, kitchen classrooms, school lunch, and a wide range of academic subjects - Recognizes that lunchroom experiences (including poor-quality meals, shortened lunch periods, commercial messages, and excessive packaging and waste) can be a "hidden curriculum" that undermines classroom lessons about nutrition and health - Offers, through Thinking outside the Lunchbox essays, challenging views by leading thinkers on food and food systems, education, economics, and personal and community health - Provides a downloadable Model Wellness Policy Guide that provides language and instructions for drafting a Wellness Policy that places health at the center of the academic curriculum The planning framework of Rethinking School Lunch is being applied across a public school system through the School Lunch Initiative at Berkeley.

Court Orders Columbia Pacific University
to Cease Operating Illegally in California
Stephen Barrett, M.D
In December 1999, the Marin County Superior Court ordered Columbia Pacific University (CPU) , of Novato, California, to cease operations within the State [1,2]. On February 21, 2001, the judge denied further appeals and entered a final judgment ordering CPU to:
  • Pay a civil penalty of $10,000 to the Bureau for Private Postsecondary and Vocational Education for violating Sections 17200 et seq. and Sections 17500 et seq. of the California Business and Professions Code
  • Permanently stop operating or offering any educational programs in California.
  • Notify all students enrolled from June 25, 1997 to December 1, 2000 of the injunction and of their right to a refund.
  • Provide refunds to all students within 30 days of their request.
  • Provide a status report to the Court by June 30, 2001.
Failure to comply with the above order in California would constitute contempt of court, which is punishable by a fine and/or imprisonment [3]. CPU moved to Montana but closed about a year later.
Background History
CPU, founded in 1978, was a private, nonaccredited correspondence school that offered programs leading to bachelors, masters, and doctorate-level "degrees" in various subjects.
