EASY CHOCOLATE ECLAIR DESSERT 2/3 box graham crackers 2 sm. boxes French vanilla pudding 4 c. milk 2 (8 oz.) Cool Whip 1 container Ready-to-Spread chocolate sour cream frosting Place a layer of graham crackers in a 9 x 13-inch pan. Make pudding following instructions on box using milk. Let stand for 5 minutes. Add Cool Whip fold in till completely mixed. Spread 1/2 the mixture on crackers. Place another layer of graham crackers on followed by the rest of the pudding mixture. Open frosting and heat in microwave on high for 25 seconds. Place on top of pudding, by dropping balls of it all over and then carefully spreading it out. CHOCOLATE PECAN PIE BARS

Baker's semi-sweet chocolate 2/3 c. sweetened condensed milk 1 tsp. vanilla 1/8 tsp. salt 1 c. walnuts, chopped Microwave chocolate and milk in 1 1/2 quart microwave bowl on High 2 minutes, stirring after 1 minute. Stir until chocolate is completely melted and smooth. Stir in vanilla, salt and walnuts. Spread in greased 9 x 5 inch loaf pan. Refrigerate until firm, about 2 hours. Cut. PEANUT BRITTLE 1 c. raw peanuts

Serves 4
1lb 9oz Potatoes, peeled and chopped
1lb 9oz Cod Fillet
1 pint Milk
Salt and Freshly Ground Black Pepper) 1oz Plain Flour 2 Large Eggs, beaten 4oz Dried Natural Breadcrumbs Vegetable Oil for shallow frying Lemon Wedges to garnish For the green sauce 1oz Butter 3 tbsp Cornflour mixed with 3tbsp Water 1oz Capers 1oz Gherkins 2 tbsp Parsley, chopped 2 spring Onions, chopped Cook the potatoes in boiling salted water for 15-20 minutes until tender. Drain and mash.

4 oz Cornflour or rice flour
4 oz Butter
4 oz Caster sugar

1 t Level grated lemon rind 2 Eggs, beaten Icing sugar for dusting Set oven to 375F or Mark 5. Grease a baking sheet. Cream the butter and sugar together in a bowl. Add the sifted flours, bicarbonate of soda, lemon rind and the beaten eggs in small amounts, ensuring that the mixture is . well combined each time. Turn out the dough on to a floured surface, knead gently and roll out to 1/2 inch thickness. Cut into rounds with a 2 1/2 inch pastry cutter. Transfer to the baking sheet and bake fro 20-25 minutes until light golden in colour. Cool on a wire rack and dust with icing sugar. The third graders were introduced to cooking in the colonial American times. The children got the chance to bake Johnny Cakes and cookies from Early New England. Both were widely popular! During colonial times, Johnny cakes were likely to appear at any meal. Many think that the original name was "Journey Cakes", because they were so often taken along on a journey, since they could be stuffed into a traveler's pockets. Try them hot or cold, with butter and syrup.
Johnny Cakes
1 cup yellow cornmeal
1/2 teaspoon salt
1 cup boiling water
1/2 cup milk
Mix the cornmeal and salt. Add the boiling water, stirring until smooth. Add the milk. Stir well. Grease a heavy, 12-inch frying pan. Set over medium-low heat. Drop teaspoons of the batter onto the pan. Cook until golden, about five minutes. Turn the cakes carefully with a metal spatula. Cook the other side five minutes. Serve the first cakes hot with butter and maple syrup with you cook the rest of the batter. Makes 12-15 cakes.
