Search Home Cooking Salmon Cakes Recipe The Author says: "The 'secret' of a perfect salmon cake is to use the finest, freshest salmon money can buy, and plenty of it!" Ingredients
1 pound poached or baked salmon - chilled, boneless, and skinless
1 sweet red pepper, diced
1 tablespoon vegetable oil
6 slices fresh white bread, crusts removed
1 tablespoon finely chopped fresh garlic
1-2 jalapeno peppers, seeded and finely chopped
1/4 cup chopped fresh cilantro leaves
1/4 cup mayonnaise
2 tablespoons Old Bay brand seasoning Salt and freshly ground black pepper to taste Vegetable oil for sauteing Instructions Poach or bake salmon. Remove all bones and skin. Cut into pieces. Saute the diced sweet peppers in the 1 tablespoon vegetable oil until wilted and set aside to cool. Place the bread in a food processor fitted with a metal blade, and process until finely crumbled. Measure and reserve 2 tablespoons of the bread crumbs to use in the filling. The remaining bread crumbs will be used to coat the salmon cakes. Mix the salmon with the sweet peppers, garlic, jalapeno peppers, cilantro leaves, and mayonnaise. Add the seasoning powder, 2 tablespoons of bread crumbs, and salt and pepper. Mix well, then refrigerate 20 minutes before continuing.

1 cup raw, grated potatoes
1 cup leftover mashed potatoes
1 cup all-purpose flour
2 tsp baking powder
2 tsp salt
2 eggs
1/4 cup milk to mix (about)
Instructions
Squeeze the grated raw potatoes in a cloth to remove as much moisture as possible. Sift the flour with the salt and baking powder. Mix all potatoes with the dry ingredients and add the beaten eggs. Mix well, and add sufficient milk to make a batter. Drop by tablespoons onto a hot buttered frying pan and cook over moderate heat until browned (about 4 minutes per side). Serve hot and well buttered with or without sugar. Here are three suggestions you might consider: Most cake recipes make one or two 9- or 10-inch round layers of cake. A cake this tall can serve 25 adults or 50 kids if you cut the pieces in half and add a big scoop of ice cream. Make two separate cakes from a recipe that makes a 9x13x2-inch cake. Each sheet cake will yield 24 to 28 smallish pieces, just right for children. Don't forget the ice cream. If you don't have the time to make a layer cake, you can always go the cupcake route.

  • 1 box yellow or white cake mix, or use your favorite yellow or white cake recipe.
  • Whipped topping such as Cool Whip® or Cool Whip Lite®, 1 - 12 oz. container. Use an additional 8 oz. container if like the topping extra thick, or if you're decorating sides of cake too.
  • fresh blueberries - 1 pint
  • fresh strawberries - about 1 quart, or
  • red raspberries - about 1 quart
Preparation - Bake the cake in a greased and floured 9" X 13" cake pan. Remove from the oven and cool on a wire rack for about 10 minutes. Carefully remove the cake from the pan to a serving plate or board, or cool in the pan and decorate only the top of the cake, as shown on right. Decorate no more than about 3 hours before serving.

Vinegar which is too strong should be diluted with water. The vinegar should never be boiled but should be poured on the pickles hot as it comes to the first scald.
