The pawpaw is the largest edible fruit that is native to the United States. Pawpaws are indigenous to 26 states in the U.S., in a range extending from northern Florida to southern Ontario and as far west as eastern Nebraska. They have provided delicious and nutritious food for Native Americans, European explorers and settlers, and wild animals. They are still being enjoyed in modern America, chiefly in rural areas. There are 27 varieties ( Table 1 ) currently available from more than 50 commercial nurseries in the U.S. Most enthusiasts agree that the best way to enjoy pawpaws is to eat them raw, outdoors, picked from the tree when they are perfectly ripe. But there are also numerous ways to use them in the kitchen and extend the enjoyment of their tropical flavor beyond the end of the harvest season. The unique flavor of the fruit resembles a blend of various tropical flavors, including banana, pineapple, and mango. The flavor and custard-like texture make pawpaws a good substitute for bananas in almost any recipe. The common names, 'poor man's banana,' 'American custard apple,' and 'Kentucky banana' reflect these qualities.

Green Bean Medley
I suppose this is categorized as a side dish, but I love it so much I often eat it as a meal. The colours are amazing so this is one dish I am always proud to serve to guests, and it goes well with a lot of different main courses.
Recipe:
1 1/4 lb green beans
2 tbsp vegetable oil
1 red pepper
1 yellow pepper
1/3 cup red onion
2 tsp minced garlic
1 tsp dry basil
1/2 tsp dry thyme 1/2 tsp pepper 3/4 cup parmesan cheese Put the cleaned, trimmed green beans in a bowl with 1 tbsp water, and microwave them for 2-3 minutes, just to soften them slightly. Drain, and rinse them in cold water to perk them back up. Cut them into 2 inch pieces.

Cooking in the south is slowly becoming a lost art. Our ancestor's history can be told in food as well as in numbers and names in some dust covered book. If we have a look at the food prepared in East Tennessee and compare it to the foods of Scotland, it's not hard to see where the roots of the Eastern part of our state were originated. Most of the meals prepared by our ancestors in the "Old South" reflect the history and economics of the region at that time. The south was best known for cotton plantations made famous in books like Gone With The Wind. These did exist but for the large part most rural southerners were sustanance farmers. They made due with what they could grow and what plants and meats they could find in the wild. This was in part because of their financial situation and in part because the areas were so isolated. The art of "Old Southern Cooking" is best summed up as this:
A good old southern cook like many of our grandmothers and great grandmothers could go into a kitchen and declare how there is no food in the house. In an hour's time they can have food cooked for thirty people, all of it on the table and all still hot.
This is an art form that is rarely duplicated today even with modern conveniences like microwave ovens.

C o o k ... a - Crab Cakes Crab cakes are the richest dish of crab meat I've tasted and it's just great. This is pretty simple so here we go. You can cut this recipe in half with no problem. You should start this the day before you want to serve it. 2 lbs. lump crab meat
1 lg. finely chopped onion
2 stalks finely chopped celery
1 cup finely chopped bell pepper
1 cup green onions finely chopped
1/2 cup parsley chopped
1 tbs. minced garlic
1 pint heavy cream
2 cups white roux
1/4 tsp. cayenne pepper
1/2 tsp. salt 1/4 tsp fresh ground black or white pepper 1/4 tsp. liquid crab boil In a sauce pan sauté onion, celery and pepper until clear. Add garlic and green onions and sauté another few minutes. Remove vegetables and combine the cream and roux in the pan and bring to a boil for 2 minutes stirring frequently. Lower fire and add crab meat, parsley, seasoning and sautéed vegetables. Simmer for 5 minutes stirring frequently. Taste and adjust seasonings. Let cool, then store in refrigerator over night. Form cakes and dredge them in flour. If you have ring molds (3" in diameter and 1-1/2" tall) use those to make a perfectly formed cake. Fry cakes in butter until medium brown. Don't put the fire too high or they'll burn.

JELLO MIXTURE:
c Reserved cherry syrup c Dr. Pepper pk Cherry Jello, 3oz size ts Almond extract BATTER MIXTURE: pk Yellow cake mix pk Cherry Jello, 3oz size c Vegetable oil c Dr. Pepper Eggs c Miniature marshmallows Instructions Arrange cherries evenly on bottom of a greased 9 x 13 pan. Preheat oven to 350F. In a small saucepan, combine the cherry syrup, 1 package of cherry Jello and 1/4 cup Dr. Pepper; gently heat until Jello is dissolved. Add almond extract and cool slightly. In a large mixing bowl, combine yellow cake mix, 1 pack cherry Jello, oil, eggs and 3/4 cup Dr. Pepper. Beat on high for 3-4 minutes. Pour cooled Jello mixture over cherries in pan. Sprinkle evenly with the miniature marshmallows and then carefully and evenly spoon the batter mix over the marshmallows. Bake for 40-45 minutes. Cool on rack for 45 minutes. Chill 3-4 hours. This is a self icing cake!!! Corn and corn meal (ground, dried corn kernels) was a staple of the early American diet. Corn products are still very important today. Here is a simple recipe for making cornbread from scratch.
The iron skillet isn’t the center of kitchen ware like it once was; however, if you have one in your home, you can use it to make a traditional cornbread loaf. Alternate directions for this is at the bottom. Ingredients: 1 cup cornmeal (white or yellow) 1 teaspoon salt 1 cup boiling water ½ cup milk Directions: 1. Grease a non-stick skillet or griddle or frying pan with a little butter, margarine, oil, or non-stick spray. Do this even if you are using a “non-stick” surface to make the cakes easier to flip. 2. Put the frying surface on a medium heat setting or burner.
