    While living in England, I spent much time searching for a collection of favourite British recipes to bring back to the States. This book is wonderful. Not only are there pictures and easy directions for the recipes, but the inclusion of different measurements allows for ease of preparation now that we are back in the States. I highly recommend this cookbook to anyone looking for a comprehensive collection of traditional British recipes and I plan to buy several more copies for my children and friends. Buying this book was money well spent!

    VEGETARIAN DISHES Broccoli Flan
    The pastry in this dish uses rolled oats for an unusual texture. Serves 4-6.
    INGREDIENTS: Plain flour - 175 g (6 oz), Porridge oats - 50 g (2 oz), Butter - 110 g (4 oz) diced, Broccoli - 350 g (12 oz), Eggs - 3, Milk - 300 ml.
    COOKING: 1. Pre-heat oven to 200C / 400F / Gas 6.
    2. Put the flour and oats in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Add enough cold water to bind the mixture together and form a firm dough.
    3. Roll out on a lightly floured surface and use to line a 23 cm (9 inch) flan dish. Bake blind for 10-15 minutes, until set but not too brown. Reduce the oven temperature to 190C / 375F / Gas 5.
    4. Roughly chop the broccoli, then cook in boiling water until just tender. Drain well. Arrange in the flan case.
    5. Whisk together the eggs and milk. Pour into the flan case, making sure the broccoli is covered.
    6. Bake at 190C / 375F / Gas 5 for about 40 minutes, until lightly set. Serve warm.

    Glasgow restaurateur Nick Nairn creates over 100 recipes using fresh Scottish produce. From Nettle soup through Cullen Skink to Monkfish with cumin roasted carrots and Roast Salmon with lobster vinaigrette and courgette fritters. Turbot on a bed of braised peas, lettuce and bacon is a favourite of mine, although I tend to economise and do it with cheaper frozen fish (Cheapskate!). Great British Chefs Kit Chapman
    I have the book in the original two volumes, but the current version (17 chefs) cannot fail to become a most used source of recipes 272 pages. My favourites from my two volumes are:- Carol Evans -ice bowls filled with sorbet and ice cream (mint leaves are frozen into the ice - I have known guests helpfully stack them up for washing up!) Phil Vickerys - Seared salmon coated in spices with spring onion creme fraise on couscous. (as I look at the page I can see the marks and stains that testify to a recipe being actually used - I like cookbooks to show the scars of battle ! )
