British cookery is sometimes regarded as a source of fun but actually it ranks with the best cuisines in the world. British cooking, however, is not just traditional 'Roast Beef and Yorkshire Pudding'. It reflects and incorporates something from all the cultures and countries Britain has had contact with throughout her long history. Indeed British cooking has inspired many culinary traditions around the world . I hope my site reflects the rich tradition of British cooking in its broadest sense.

If you spend most of your time in large groups of Notre Dame students, frequenting American-style bars and clubs catering to tourists, it is unlikely that you will meet many Londoners. Local pubs are, of course, one way of meeting people, but most British people go to pubs to spend time with people they already know The most effective way to meet Londoners is to socialize with them in the context of an activity or hobby. This is usually done on an individual basis or occasionally in small groups of two or three people. Some successful stories include volunteering at a women's shelter, tutoring children (both these activities are available through our volunteering programmes), joining a rowing club, joining a camera club, or taking a non-credit class outside the Program. Evening classes often follow the "term" system, which is similar to the American "quarter" system. English terms usually run from late September to mid December, from mid January to Easter, and from Easter to mid June. So if you wish to attend classes, you should start looking as soon as (or even before) you arrive. For more information about the range of classes and courses avaliable consult

The Resurgence of British Cuisine
by Claudia Foleng-Achunche
After years of suffering under the image of grey boiled meat and cold soups, Britain today now has a vibrant culinary reputation. In fact some of the great chefs now come from Britain- names include Gordon Ramsey, Jamie Oliver and Nigella Lawson. The atmosphere of doom and gloom peaked in and turned the country into a nation of gastrophobes.
The years, which followed, meant that the British culinary skills according to the taste buds of the rest of the world went into decline. What was best of Britain was only that which showed the influence of France, and so British food soon developed a poor reputation and the French art of nouvelle cuisine was adopted. Traditional dishes such as roast beef, Yorkshire pudding, Cornish pasties, steak and kidney pie, bread and butter pudding, treacle tart, spotted dick and Fish and Chips remain popular though there is a great multicultural mix from other commonwealth and European nations.

Save a personal copy of this article and quickly find it again with Furl.net. It's free! Save it. Britain's reputation for overcooked vegetables, sickly sweet desserts, and drinks consumed at room temperature has contributed to its dismissal as a culinary desert. As a commentator noted, "the French and Italians cook, while the English just write about it." However, a current exhibition entitled Eat, Drink and Be Merry: The British at Table 1600-2000 demonstrates that the British did not merely subsist, they dined elegantly and well. The exhibition is on view until June 4 at Fairfax House in York. It will then be at Kenwood House in London from June 27 to September 24 and at the Assembly House in Norwich from October 14 to January 7, 2001. In the exhibition, table settings from various periods have been re-created using realistic representations of food whenever possible. Paintings depicting food and meals are on view as well. The earliest re-creation in the show, from a contemporary wall painting, is of a Jacobean banquet of about 1610. The centerpiece is an elaborate confectionery that is both decorative and edible. Nearly a century later the duke of Newcastle gave a feast at Windsor Castle, and this too is re-created, with the dessert on the table at the same time as the first and second courses, which was the fashion of the time.

Thirty years ago, the UK has a poor reputation throughout the culinary world and little respect. However, British cooking has changed. As we move into another century, the food we eat is light years away from what it was, when we British were still largely insular in our tastes - and certainly very limited in our home cooking aspirations. The way our cooking has changed to embrace other cultural styles and the ingredients we buy from an increasingly global larder make our kitchens more international by the day. Things most of us had never heard of a few years ago are now commonplace on supermarket shelves. We have taken British ideas from yesterday and refine them for tomorrow. These recipes, with their rejuvenated flavours, are here to be enjoyed, and to revive your feelings for good traditional cookery, as well as giving you new culinary inspiration. And, of course, they can be adapted to suit your own taste.

Our Host
Meet the MasterChef USA Host: Gary Rhodes Your first impression on watching Gary Rhodes as he hosts MasterChef , is, "what's with his hair?" Sticking straight up from the top of his head it gives one the distinct impression of a 1970's punk-rocker. But then you notice his intensity about food. "My mission in life is to make British cooking among the best, if not the best, that can be found anywhere in the world," explains Gary. "I'm looking at British classics and trying to put them on a new plane, with more refinement and more exact flavors. I hope that among my recipes we'll find a new 'classic', a dish that will be cooked and talked about for years to come." Certainly Gary's food has had almost all the British food critics "talking" over the past ten years. His "modern take" on British classics has garnered two Michelin stars - one at the Castle Hotel in Tanton, Somerset, and another at The Greenhouse. He has also received the prestigious CATEY Special Award, the catering industry's equivalent to the Oscars, for helping to revive British cookery and for his total dedication to the industry. He is currently the proud owner of a new restaurant, city rhodes, just off London's Fleet Street. But in Britain, Gary's fame to "the average bloke" on the street comes from hosting five, very popular, television series, including a cooking series for children based on Roald Dahl's Revolting Recipes. Some of his best British television work, driving the roads of Britain in his favorite Ferrari sports car, can be seen on the American PBS series, Great Food. Spontaneous, charming and always enthusiastic about his food, Gary caught the eye of Executive Producer, Elizabeth Brock, who asked him to join the

English Cooking.
Yes, yes, I know, English cooking is terrible. Stodge and grease served lukewarm. Except, as anyone who’s ever actually looked around the country knows, the food can be excellent. There’s been a little competition to find the best book of Brit recipies and Simon Hopkinson won it. Have a look at this recipe for roast chicken . Simple, elegant and quite wonderful. I’ll admit that my own version drops the thyme and tarragon and adds a half onion to be cooked in the cavity, but otherwise is just about the same. The point about such cooking is that you have to start with decent ingredients. Some battery bird that’s been fed on fishmeal will be disgusting this way. Free range or better only. Perhaps that’s why English food has such a bad reputation nowadays, the quality of the ingredients generally used?

The report examines the range of influences on trends in eating and uses Mintel's own primary consumer research to examine attitudes and changes over time and to answer the core issue of the influence of media on British eating habits. Mintel's research considers a number of potential influences on trends in cooking and eating habits. These include the population's composition by age and by socio-economic group, earnings and the economy, employment levels, the demand for convenience, trends in eating out, the incidence of foreign travel, cooking skills, health issues, and, of course, the influence of TV and other media. It offers food manufacturers and retailers an analysis of consumers eating habits that can be directly transferred into effective marketing plans, segmenting consumers into defined cook types for superior targeting. Mintel's revealing findings include:
