Cookbook author, food and travel journalist and international culinary teacher Carol Field has been sharing her passion for Italy and Italian food since 1972. Her cookbooks have received James Beard and Julia Child awards, and four have been Book of the Month Club selections. Author of such books as The Italian Baker, Field spent two years working with the bakers of Italy, traversing the country again and again from Lugano and Como in the north to Lecce and Palermo in the south, tasting and testing, then going back to the States to rework the recipes in an American kitchen with American ingredients. She will bake Italian breads with us, showing us the traditional processes. William Rubel
William Rubel is a cook and author specializing in traditional cooking methods and a collector of antique and modern culinary utensils. His widely respected book, The Magic of Fire, brought the ancient processes of hearth cooking back into currency. Bread. One of our biggest staples. How often we take this wonderful food for granted. In today's hectic world, most people get their bread from the grocery store or possibly a bakery. It isn't difficult to make your own bread at home, however. A little time and patience will do the trick, along with some good instructions, which we'll provide. No time or patience? You can still have wonderful home made bread, thanks to the incredible bread baking machines on the market. These machines are (pardon the pun) the greatest thing since sliced bread. You simply pour in a few ingredients, turn them on, and in a few hours your kitchen will be filled with the wonderful aroma of home baked bread. You can even set a timer to wake up in the morning to freshly baked bread. For the purposes of this article, however, we will assume you are not using a bread machine and are going to do the entire process by hand. Well, maybe not entirely by hand. A food processor or a heavy duty electric mixer with a dough hook will help tremendously.

Many types of bread are leavened, usually with yeast, which induces fermentation and causes the breads to rise. The discovery of fermentation is attributed to the Egyptians, who also invented baking ovens. Unleavened flat breads have been eaten since Neolithic times (10,000 B.C. ), and bread has long been a staple in the diets of people in all parts of the world, excepting Asia, where the preferred rice is eaten in grain form. Flat breads are made from various types of grains : corn (e.g., the tortilla), barley, millet, wheat, and rye : but only doughs made from wheat and rye contain enough gluten to trap the gases caused by fermentation and expand into an airy loaf of bread. Dark rye breads are common in Europe; the light rye breads popular in the United States are made with a mixed wheat and rye dough. White breads are made from a finely sifted wheat flour, as opposed to whole wheat bread, which retains the fiber-rich outer kernel of the grain. Nutritionally, bread is high in complex carbohydrates and a good source of B vitamins. Whole grain bread is higher in protein, has twice the fiber, and generally has more vitamins and minerals than white bread. Other ingredients that may be added to breads include milk, fats, eggs, salt, and sugar.

The breadmaker, or automatic bread machine, is still somewhat a novelty here in the United States. Overseas it is practically unheard of. But one thing is certain, it has made a commanding introduction to our everyday line of kitchen items and has a generous foothold in appliance markets. Compared to other products featured in these monthly articles, the automatic bread machine is the new kid on the block. It's barely ten years old but has made a lasting impression. Enough so that it has driven appliance manufacturers along interesting paths. And its interest has sparked new sales and opened up markets that pave the way for sales of other products for the kitchen. In short, the automatic bread machine has been a blessing and a curse for Americans. The idea is simple enough: find a way to add the basic ingredients for a loaf of bread, stick them in a machine, and a few hours later pull out a fresh, steaming loaf of bread. It's fun, it's cost effective (for the most part), and the taste is out this world... right? So what's the problem? If you look at the microwave oven, the VCR, and the portable compact disc player, you will notice that new things don't come easily. They take awhile to be accepted by the majority and some time to have every bug and "feature" worked out so that a continual yearly sales volume is met. In other words, they don't start off perfectly and they need to evolve to meet and create needs of the consumer.

What is a wood burning oven?
A wood burning pizza/bread oven is an oven made out of clay adobe, refractory fire bricks or refractory concrete (heat resistant mix made from ingredients that can withstand prolonged high heat conditions). Traditionally, ovens were made using material that wasn't costly and was easy to obtain in nature. Nowadays, we have everything we need to build a wood oven readily available in most refractory and building store yards. Traditional wood burning pizza-bread ovens and cooking using a gentle fire are simply 'the low TEC highly efficient technology'. So primitive and interesting, it will not let us down.
