Lightening the Workload
In our busy, hectic lives it is hard to find enough time to cook for a special diet. We have to make it easier on ourselves in every way we can. Using commercially prepared foods that will fit your allergy diet is a great time-saver. Shop at a large health food store, if possible, for crackers, pastas, canned goods, soups, breads, and cereals that you can eat. Or, 5 Years Without Food: The Food Allergy Survival Guide contains a listing of sources of commercially prepared foods for allergy diets that you may be able to mail order directly or have your health food store get for you. (Click here for more information about the book) A bread machine can also lighten your workload by making yeast breads, non-yeast breads, and cakes with very little effort on your part. Usually you just add the ingredients to the machine, push a button or two, and come back to a wonderful treat.. The question I am most often asked about bread machine baking for an allergy diet is, “What machine should I buy?” If you wish to bake spelt or kamut yeast breads or egg-containing rice yeast breads, almost any bread machine will work for you. You can make non-yeast breads with spelt, kamut, rye, barley, rice, or quinoa flour (or even wheat flour!) using a bread machine with a non-yeast cycle. Several companies make machines with quick bread or cake cycles for non-yeast breads. A few of these machines mix the dough for a very long time before baking. The ideal mixing time for the recipes in the books from which this website is excerpted is 3 to 4 minutes. If your machine mixes longer than 4 minutes, add the oil to the flour mixture, but delay adding the other liquid ingredients until about 2 minutes before the end of the mixing time. For example, if it mixes for 6 minutes, rather than adding the liquids 1 1/2 to 2 minutes into the cycle, wait until 4 minutes after you start the machine.

Tackling a life-changing diet head on

Hello...
P lease allow me to introduce myself...Sandra J. Leonard. (Oh, the J. stands for Joan.) If you will permit me, I would like to take this opportunity to tell you a bit about myself. First off, I am a celiac, have celiac sprue disease and am on a total gluten-free diet (no wheat, rye, barley or oat grains) for life. It was just short of my 50th birthday when I was finally diagnosed after being sick most of my life. I have to admit it is great to feel so good all the time now. A fter finally being diagnosed, going on a gluten-free diet and regaining some of my health, I felt a strong urge to be around other folks that also had celiac sprue and were on gluten-free diets. I had seen the name of a person from my town when reading an article in a national celiac newsletter. I was able to locate her and met my first person with celiac disease. She in turn, knew other celiacs in the area. T hat is how the very first support group meetings came to be. Most were held in the living room of my home with other celiac friends, with a sharing of recipes and delicious gluten-free tastings. This little support group grew right out of the living room and has been meeting at a local area hospital for some time now. Hence, the Celiac Sprue Support Group, Ohio Miami Valley Area (Dayton and surrounding areas.) was formed and I officially became the chairman. U pon being diagnosed and informed that a gluten-free diet would be my new lifestyle for life, my thoughts were...."All my illness problems finally had a name...how bad could a gluten-free diet be?" The 'cure' sure sounded simple enough....I only had to stay on a gluten-free diet for life. What could be so bad about that...no drugs to take...just that gluten-free diet bit and I would be feeling good as new. It would be a snap.

Directions:
There are a few tricks to remember when "baking" in one of these pots. First, turn the control to HIGH (or to the setting which is equivalent to the HIGH). The LOW setting is too low to give breads and cakes the texture you expect. With breads, remember to cover the container with a lid or foil. Tie the lid or foil onto the container and place the container on a metal rack or trivet inside the pot. If you don't have a metal rack or trivet to fit your slow cooker, crumple foil and place it in the bottom of the pot to support the baking continer. Pour 2 cups of hot water around the container to provide steam for cooking the bread.
When using a deep-dryer type slow cooker, check frequently to make sure the water hasn't evaporated. Add more water if needed.

Jerk barbecue is a tasty expression of Caribbean history and culture, the best being Jamaican. Jamaican Jerk In Jamaica, smoky jerk huts alongside the road, with seats around a circular counter, serve the famous Jamaican jerk barbecue. Originally whole pigs were deboned, splayed out and cooked on grills made of pimento sticks over pits about a foot and a half above the fire. Now half-cut steel drums are frequently used. But what remains the same is the wood fire, smoldering green allspice (pimento) branches, the same plant that flowers into allspice itself, so-called for the hint of many spices in its flavor.
