The pawpaw is the largest edible fruit that is native to the United States. Pawpaws are indigenous to 26 states in the U.S., in a range extending from northern Florida to southern Ontario and as far west as eastern Nebraska. They have provided delicious and nutritious food for Native Americans, European explorers and settlers, and wild animals. They are still being enjoyed in modern America, chiefly in rural areas. There are 27 varieties ( Table 1 ) currently available from more than 50 commercial nurseries in the U.S. Most enthusiasts agree that the best way to enjoy pawpaws is to eat them raw, outdoors, picked from the tree when they are perfectly ripe. But there are also numerous ways to use them in the kitchen and extend the enjoyment of their tropical flavor beyond the end of the harvest season. The unique flavor of the fruit resembles a blend of various tropical flavors, including banana, pineapple, and mango. The flavor and custard-like texture make pawpaws a good substitute for bananas in almost any recipe. The common names, 'poor man's banana,' 'American custard apple,' and 'Kentucky banana' reflect these qualities.

What we know as "soul food" is the descendant of slave cooking. It is the brilliant masterpiece that derived from want. Slave cooking is distinct in its use of greens, beans, and the parts of the pig rejected at the plantation house: pig's knuckles, ears, tripe, hog maws. These were added to the corn rations which were sometimes the only food allotted to the slaves. The meager pantry was further supplemented by wild game and fish pulled from the streams. Squirrel and possum figure among the meats used, catfish, trout, and shrimp among the fish. Much soul food requires the use of only one pot, as time for cooking and money for its tools were both hard to come by.
In the past, African American foods were prepared in many ways. Since there were no refrigerators or freezers years ago, meat was smoked in a smokehouse to make sure it wouldn't spoil. Meats were barbecued, roasted, boiled, or made into stews. Feathered wildlife was prepared by frying, baking, roasting, making broths, or simmering to form gravies. In the rivers and streams, there were lots of fish and other water life that could be eaten. Vegetables were boiled or fried. Drinks were made from the juices of fruits.
Meals were cooked in open fires using black kettles or were barbecued in open pits. The people who cooked just knew how to do it. They didn't need to follow a recipe.

Many people become frustrated when attempting to cook in the microwave because they do not realize that most recipes for microwave ovens are written for the 700-watt oven (the industry standard). Don't be discouraged if your first attempt is not a glowing success. It takes time to learn how to cook in your microwave oven. Now for the few recipes that I have. One of the first things I did when I started cooking in my microwave, was to buy a microwave cooking book and followed it exactly, until I was comfortable with using the microwave. The second thing I did and this very important, I kept a notebook beside the microwave and as I experimented with different recipes, I marked down the time it took to cook that recipe. Then there was no more guessing! There is no set conversion from conventional to microwave cooking. Remember when you are converting a recipe, use less liquid (almost 1/4 less) because there is less evaporation; and you can almost eliminate using salt. Foods containing liquid, sugar and fat cook faster. So reduce the cooking time by 1/4 of conventional cooking and then gradually increase until you obtain the desired result. I've seen this bread identified as both Tsoureki and Lambropsomo . Perhaps there is a subtle difference between the two, and if anyone out there knows and would like to email me about it, I'd be appreciative. Regardless of what you call it, this is traditional Greek Easter bread is characterized by hard boiled, scarlet dyed eggs baked right into the braided bread dough. Scarlet is the traditional color, as it represents the blood of Christ. You could modernize this dish and use pastel eggs instead and using lighter colors will make it easier to achieve a good-looking final product as the colors from intensely colored eggs tend to run when baked. If, however, you are set on making traditional, blood red eggs, seek out specialty dyes, available in Greek markets, made for that specific purpose. This should minimize the problem with the color running.
