Brazilian cuisine expert Yara Castro Roberts, an Emmy award nominee host for PBS-WGBH cooking show series, conducts the Brazilian Cuisine Seminars by the ocean in Paraty, Brazil. The seminars focus on Brazilian culinary art and its relationship with various aspects of Brazilian cultural life. The school in Paraty is situated in a colonial paradise. Founded in 1660, Paraty faces the sea, and is backed by mountains. During the rush for gold and diamonds in the 18th century, the city became famous and wealthy. Today it is a beautifully preserved seaside village with many mansions and estates, and narrow streets that contain hidden surprises: charming pousadas (inns), colonial houses, restaurants and art galleries. The village provides easy access to spectacular island beaches and mountain trails through rain forests that lead to waterfalls with natural pools. Yara began her culinary education as a young girl, learning from her mother who was a chef and owned a cooking school. She graduated from Boson University Culinary Arts, has degrees in History of Art from the Ecole du Louvre and Education from the Sorbonne in Paris. Yara is quadrilingual in Portuguese, French, Spanish, and English and speaks some Italian and Russian. Brazilian food is as colourful and varied as the Rio Carnival. Influences come from the Native Americans, Europeans, mostly notably the Portuguese, and African slaves, who left a legacy of stew dishes. The closest to a national dish, and one served every Saturday, is feijoada, a slow-cooked pork, sausage and black bean casserole served with rice and beans and an orange salad. Like all Brazilian dishes, such as the chargrilled steaks, fish stews and exotic Bahian recipes, portions are Amazonian, and a big lunch rather than dinner is the key meal. Fijada (Brazilian Black Beans And Rice) Presented by Mary E. Ross on February 04, 2005
Ingredients:

  • 1 16-oz. bag dried black beans (2 cups)
  • 2 quarts water
  • 1/2 tablespoon salt
  • 1 6-oz. can tomato paste
  • 1 large onion, chopped
  • 2 to 3 large cloves garlic, pressed or minced
  • ½ to 1 ½ teaspoons chili powder or red pepper powder depending on taste
  • ½ teaspoon fresh ground black pepper
  • 1 bay leaf
  • ½ lb. light ham, 96% to 98% fat free, cubed
  • ½ lb. low fat Chorizo or spicy Italian sausage, cooked and well drained of any fat
  • 6 oz. light Polish kielbasa or smoked sausage 95% to 97% fat free, sliced in bite size pieces Method: 1. Follow package directions for sorting and rinsing beans. Soak beans overnight in 3 to 4 cups water, rinse and drain. 2. In 4-quart Dutch oven or stockpot, bring beans, water, salt, tomato paste, onion, garlic, red pepper, chili powder, black pepper and bay leaf to boil over medium-high heat. Cover, reduce heat to low and simmer for 1 to 2 hours, or until beans are tender but still hold their shape. 3. Add ham, sausage and smoked sausage to beans and simmer for an additional 10 to 15 minutes until meats are heated through. Adjust seasonings if necessary and serve with hot French rolls made without added sugars or fats. For a more substantial meal, serve beans over 1/2 cup white rice, cooked without butter or salt.

It is home to the Pantanal, the world's largest wetlands, the great Amazon River and tropical rain forest, world famous beaches, and the mighty Iguacu Falls. For the most part, only the coastal regions are densely populated. It is not surprising then that the national cuisine of Brazil is more a collection of unique regional ones; and that certain exotic regional fruits and fish are hardly known elsewhere in the country.
    Influences
    The extraordinary cuisine of Brazil is an amalgam of the cooking heritage of three disparate groups of people: the native Indians, the conquering Portuguese and the African slaves they brought to work in the sugar cane fields. The distinct contribution of each is still apparent in many Brazilian dishes today. Of course, certain dishes took on a new "Brazilian" identity. The Portuguese added their own stamp to several Indian preparations and in turn, the Africans altered some of the dishes of both the Indians and the Portuguese. They used foods and cooking styles brought from their homelands or brought their own recipes and changed them, using local ingredients. It was the African cooks in the colonial kitchens of the sugar cane barons, however, who provided the strongest influence in generating what would be considered a Brazilian cuisine.

    Salvador, Brazil Originally colonized by Portugal, Brazil is by far the largest country in South America. It is a country diverse in culture, landscape, and style. The country is covered by dense Amazon rainforest in the north and central regions. The coastal regions of Brazil offer some of the most famous and beautiful beaches in the world. Each city in Brazil has its own unique character ranging from the modern capital of Brasilia to the tourist capital of Rio de Janeiro to the port city of Maceio. Portuguese is the language spoken in Brazil. One of Brazil’s most fascinating cities is Salvador da Bahia, often referred to as Bahia or Salvador. Here you can find impressive colonial architecture, art galleries, baroque churches and beautiful beaches. Salvador, Brazil’s third largest city, embraces a mixture of African, Portuguese and Amerindian cultures, most evident in their dance, music, and cuisine.     10 green olives
    1 large onion
    1 bunch scallions 2 or 3 dried hot peppers salt and freshly ground black pepper 1 clove garlic juice of one lemon 2 bunches collard greens Renato and Sandra Boschi Department of Political Science, IUPERJ
    Moqueca de Peixe (Brazil)
    1 large cod fish 3 medium tomatoes 1 bunch onions 1 yellow onion 1 small fresh hot pepper 2 bell peppers (1 green, 1 red for effect) 3 limes 2 cans coconut milk ¼ cup olive oil 2 cloves garlic salt, chile pepper, black pepper to taste Marinate fish in juice of limes for at least 1 ½ hours before cooking. Sauté onions (green and yellow), bell peppers, hot pepper, and tomatoes in olive oil (adding in order of least resistance). Stir in chile pepper, garlic crushed with salt, and black pepper. Drain fish and add to mixture. Cook slightly, then add coconut milk. Simmer 30-40 minutes-serve with rice. May substitute shrimp or other seafood for cod.
