For 300 years, feijoada has reigned supreme in the Brazilian kitchen. Invented by slaves, who started mixing their masters' pork leftovers to the black beans that were used to feed the animals, it got a touch of Portuguese and Indian cuisines and today is served all over from the hole-in-the-wall little joints to the most sophisticated restaurants. And every family seems to have its own feijoada favorite recipe.

    I may not be a total expert on Brazilian food, but I know my way around a kitchen fairly well and I am able to make people come back for more and more when I cook Brazilian dishes and I know it's not because my guests and family are being polite that they do so! One of my specialties is feijoada completa , Brazil's national dish. The actual origin of the dish is essentially African, but popular belief has it that it evolved from a combination of sources, from the African slaves, to the Portuguese colonists, to the indigenous Indians.     Ask Eng Tie Ang what her nationality is and she will answer "Brazilian" without a second thought. And she is Brazilian. She was five when her parents emigrated from Indonesia to Suzano, a town in the interior of the state of São Paulo. It was there that Eng Tie went to grammar school, high school, and the University of Braz Cubas, where she graduated from the School of Architecture and Urbanism. When, at age 21, architect-painter-cook-instructor Eng Tie Ang swapped Taiwan for the US and decided to study at a computer college, it was her Brazilian food knowledge that helped her pay for the studies. Settled in Seattle, where she has worked as an architect for two years, Tie finally decided to make her cooking expertise her main career. Today she teaches Brazilian and Thai cooking at the Washington University in addition to schools like Kitchen Kitchen and Bon Marché. Native Indians developed corn porridge, cassava meal, sweet potatoes, many roots, hearts of palm, many species of game and fish, and the preservation of meats by smoking and drying. In 1533, the Portuguese colonized Brazil. After a lengthy Moorish occupation, Portugal had adapted a variety of North African cooking traditions, among them coffee, dried fruits and pastries. These culinary customs were in turn exported to Brazil, with the twist of being prepared using local ingredients. The largest single influence on Brazilian cuisine came with African slaves. Dende, peppers and coconut milk, staples of West African cooking, became firmly established on the Brazilian palate. During the Nineteenth Century, slavery ended and an independent Brazil became a melting pot for immigrants from all over the world. Waves of new arrivals from Asia, Western and Eastern Europe and the Middle East brought kitchen traditions with them that put a truly eclectic spin on Brazilian cuisine. The nation's multiethnic and multifaceted cooking is always unique and delicious.

I have been a professional chef for four years and decided to learn a bit about Brazilian cooking. However, this book is far from helpful. It contains such facinaiting and informative suggestions such as "cook in hot oven until done." What a great suggestion to have in a recipe. What temperature should you set the oven at? Don't worry about it, just get it "hot"; how long should you cook? Don't worry, when it's done, it will tell you, or perhaps you will telepathically know? This book is about as effective as the guy you gives you directions by saying "Drive down the road a bit and then turn." One has a better chance of learning Brazilian cooking through osmosis than from using this cookbook.

      A Taste of Brazil By Chantal Lamers Hardly anyone has time to travel to exotic countries these dayswhere one can sit back, relax and sink one's teeth into exotic cuisine. So in addition to his nine-to-five job, Glenite Salah Al-Ayube spent two years attending the culinary academy so he could bring a little taste of Brazil to the Bay Area. Al-Ayube opened Nabraza, (which means on the grill) earlier this month, at 2523 Winchester Blvd. in Campbell. It wasn't Al-Ayube's lifelong dream to open a Brazilian restaurant. His three siblings and he were taught to cook, clean and sew at a young age. By the time he was 12, his mother made sure he cooked two meals each week. He developed a lasting love for cooking. Al-Ayube who grew up in San Jose, graduated from San Jose State University with degrees in biochemistry and industrial engineering. Al-Ayube worked at NASA before taking a job as a chief software architect with Microsoft. He enjoyed his career, but began to daydream of opening an authentic Brazilian restaurant. One evening, while he was staying in a Washington State hotel and watching television, a commercial someone standing in front of an empty storefront. Suddenly, that storefront turned into that person's own business. The idea stuck with Al-Ayube, and he shortly began researching how to make his grill into reality.
