Headquarters now of both the European Union (EU) and NATO, it has acquired a new sophistication, a new confidence, and is delighted to be known as the political capital of Europe. Despite the glass-and-steel skyscrapers that have sprung up to accommodate the international workforce, it hasn't forfeited its Old World character. Indeed, it seems to have acquired a greater luster and a whole lot more energy than I remember it having in the fifties, when the 1958 world's fair was in full swing and I made my first visit to Belgium. You have only to go to the Grand Place , Brussels' heart, to feel the city's vibrancy. One of the world's loveliest civic spaces, the large, cobbled, much-peopled square is ringed by tall Gothic and Baroque structures sporting ornamental facades and elaborate, gilded gables adorned with statues. Adding to its charm during the warmer months of the year is a daily flower market, which spreads a colorful living carpet on the pavement. Whenever my wife, Liet, and I come to town, we make a point of sitting at one of the square's outdoor cafés to sip one of Belgium's hundreds of different kinds of beer and take in the scene. First-time visitors might want to try the tart beer Gueuze for an authentic welcome to the city; by some fluke of chemistry, Gueuze can't be duplicated beyond Brussels. Experience has taught Liet and me that the Grand Place is as good a spot as any to begin (or end) a casual walking tour of the compact center. Behind it is a warren of narrow streets that lead to everything from the

Waterzooi, Pork and "Frites"
A typical recipe from the Flanders (north/western part of Belgium) is the "Waterzooi", loosely translated as "stew". There are two variations: the chicken waterzooi and the fish waterzooi. I have chosen the chicken variety but preparation is very similar if you substitute fish, (making sure the fish is very fresh). This recipe will make a stew to be served with boiled potatoes but, with the addition of more beer (or chicken broth), it can be served as a soup and makes a full meal all by itself. 4 stalks
4 ea.
6 breasts
4 tbsp.
3 tbsp.
3 ea.
1/2 lb. Celery, julienned
Large carrots, julienned
Chicken, boneless, skinless Olive oil, extra virgin Butter Shallots, minced Mushrooms, sliced 1 large 1 clove 4-5 sprigs 1 tbsp. 12 oz. 3 cups Leek, sliced thin Garlic, minced Thyme Peppercorns Brown beer Steam the celery and carrots for 5 to 10 minutes and set aside. Heat the oil and 1 tbsp. of the butter in a deep skillet, saute chicken until golden and juices run clear. Cool chicken slightly and cut crosswise into large pieces, cover with plastic wrap and set aside. Add remaining butter to pan and lightly saute shallots, mushrooms, leek, garlic and thyme for about 5 to 10 minutes. Add the beer and peppercorns, increase heat and simmer for another 15 to 20 minutes until the liquid is reduced by approximately half, stirring to loosen brown bits in the pan. Stir in half and half and simmer for another 10 to 15 minutes until sauce thickens. Add chicken, celery and carrots, heat through. Add salt and pepper to taste and serve with steamed potatoes.

Auberge des Chapeliers 1-3 rue des Chapeliers 1000 Bruxelles Thursday 12 March 1998 Friday 17 November 2000 Our first night in Brussels, and we wanted some traditional Belgian cooking, so when our first choice of restaurant was fully booked we settled on this cosy and relatively quiet place just off the south-east corner of the Grand Place. Well, it was recommended by the Danish Royal Navy although there were no sailors in there the night we were there!

    Allan Good, personal communication. Allan studied at the University of Tasmania, Australia, in 1946-9, and was often fed Neenish cakes by a friend's mother. In Allan's words: She was a 1st World War Bride coming out from the London East End to marry an Australian Serviceman. They set up a bakery in Tasmania in the early twenties and two of her specialities were Maids of Honour and Neenish cakes. I was so keen on them that I prized her recipe for years and often make them now. I am sure the recipe must predate 1929 as it is quite different from the more recent ones . I do not think she could have made it up and feel sure it must have come out from England with her. She always referred to the pastry as "Mamma's German Pastry" so it does seem to have a German connection.
    Recipe
    Mamma's German Pastry: Flour (1/2 SR and 1/2 plain) 12 ozs Butter 8 ozs Icing Sugar 4 ozs Egg Lightly blend the flour, sugar and butter, add egg, put in fridge for a while. Make pastry cases by pressing small balls of the pastry into patty pans. Prick with a fork and cook until crisp and slightly coloured. Whip 3/4 cup of cream and add two to three teaspoons of rum. Fill the cases with the whipped cream , cover one side with melted chocolate (I find a high quality Belgian cooking chocolate best, although I don't know what she used) and the other with white icing with a touch of vanilla.

    More Good News for CAFB
    The Capital Area Food Bank was thrilled when superstar Bruce Springsteen recently donated front-row tickets to his Erwin Center concert to be auctioned off as a benefit and also invited them to pass out donation envelopes at the concert. Those two gifts alone netted $6,000. Imagine their surprise and glee when last week's mail brought a personal check from Bruce and wife Patti Scialfa in the amount of $10,000! What a generous and thoughtful gift to all Central Texans. Local venues and musicians are following suit. The big Antone's Blues Festival lists CAFB as one of its beneficiaries, and several outdoor events over the summer (including the Chronicle Hot Sauce Contest) include the donation of nonperishable food items as part of the entry fee. Performers and performance venues can adopt a food pantry with very little cost to themselves. Encourage the music/theatre/dance lovers who patronize your events to donate nonperishable food items at the door, and it all adds up to everyone fighting hunger together.
