Everybody Eats Well In Belgium Cookbook by Ruth Van Waerebeek with Maria Robbins Illustrations by Melissa Sweet
Americans have for centuries looked toward Europe to find inspiration for their fine dining. Yet ironically, what is perhaps Europe's finest cuisine is truly its most enigmatic. The slow-cooked, nostalgic food of Belgium has until now been Europe's best-kept secret. With the Everybody Eats Well In Belgium Cookbook (a Main Selection of Book-of-the-Month Club's Good Cook's Club). Ruth Van Waerebeek reveals the bounty of recipes which are at the heart and soul of her native country. A native of Ghent, Belgium, Van Waerebeek draws on her professional experience as a restaurant chef, as well as the recipes from her mother, grandmother, and great grandmother. Belgian cooking also has deep roots in the Middle Ages, reflected in the use of mustards, herbs, and spices in recipes such as

Food is an extremely important part of Belgian life. Not only do Belgians spend considerably more money on food than the average American, but they also devote a great deal more time and energy to discussing it, shopping for it, preparing it, and consuming it. The Belgian approach to food is perhaps best summed up in the following motto: We eat three times a day, so we'd better try to make a feast of it every time. But what is Belgian food? When faced with this question, most Americans might answer, after a puzzled pause, "French?" "German?" or, perhaps, "Dutch?" Even other Europeans find Belgian cuisine enigmatic. To a great extent, that sad fact is our own fault, since Belgians tend to keep a low, even self-effacing international profile. But it is all the more confounding when consider that Belgian food is truly some of the finest Europe has to offer and that Belgium has more three-star restaurants per capita than France.

One of the most underrated world cuisines, it's a country where northern Germanic culture melds with Southern French culture, both of which are evident in its cuisine. Ancient Times and Influences The region which now constitutes Belgium has been invaded and ruled by many people over the centuries including Celts, Romans in 56 BC who ruled for four centuries, Franks in 455 AD at which time the demarcation between the Flemish and Walloons was established, Vikings in 830 AD, Spanish, Austrians and French in turn and the cuisine of Belgium is a true reflection of its history. Cooking techniques and ingredients were assimilated from all these cultures as was the habit of farming and keeping domesticated animals: prehistoric "Belgians" were mainly hunter gatherers.

Comment by Peter Sain ley Berry: The Constitution Rests On Irish Magic And Belgian Cooking Although it is still too early to know for certain whether the European Constitution will be agreed under the Irish Presidency, there were distinct signs this week that the smart money might soon be flowing in that direction. The Germans have acknowledged a willingness to compromise over voting strengths so long as the principle of the 'double majority' system is retained. While the Irish have now indicated their plans for approaching the constitutional issue at the summit of European leaders on 25th and 26th March. One Irish Minister referred this week to the Constitution as an 'immense prize:' it is a fish they are quietly determined to land. It is too early to assess how - and indeed if at all - the appalling terrorist tragedy in Madrid might effect the results of the Spanish General Election on Sunday March 14th. Our thoughts go out to the victims and their families. We must wait for the electors to deliver the result through the ballot box. But at the same time this terrible incident demonstrates that where terrorism is concerned no man, no country, is - as John Donne put it - an island entire of itself. His words echo appropriately down the centuries. "Any man's death diminishes me, because I am involved in mankind; And therefore never send to know for whom the bell tolls; It tolls for thee."
