I just got it this week (along with a new grill!) Before this I never wanted to grill a steak or even burgers. Either fried to a crisp or too raw. And chicken I screwed up even more. I read over half the book because I was so intrigued.
Last night I grilled zuchinni just like in his book. WOW. Try checking out his website for yourself and see barbecuebible.com. There are many testimonials about this book. Till I also own Steve Raichlen's How to Grill and find it is a nice book with a lot of useful tips and great recipe ideas. The barbecuebible forum is also nice. It seems over there they are more into the actual food preparation then into hardware and it's good to get both sides.
However, there is one thing that makes me open his book less and less, and even makes me angry I didn't look at it better when I bought it. The directions for setting up the charcoal grill including three photos and the summary verbal description are repeated EVERY time for EACH recipe; they take up half a page. Come on, Steve! How stupid do you think are your readers? This is not only outright insulting but also wasteful and environmentally unfriendly.

Mori's hanami
It's cherry blossom time. My street is lined with fluffy pink trees. At night walking down the street a fluffy pink cloud of sakura can be seen floating above the lights of the lanterns in the park. It is a glorious time to be in Japan. I attended the Alexandra Cherry Blossom festival several times as a kid just to see the parade and never really took any notice of the trees except for maybe a passing comment of "ooh isn't that pretty". This is a completely different experience. On the news every night there is an update of the spread of the Blossoms across the country and there is a calculation to measure when the blossoms are at their peak. After what now feels like a brutally long winter the arrival of such a concentration of colour brightens more that just the park it brightens the mood. People go on circuits of the Sakura viewing spots just walking with friends and appreciating the sight. Hanami (cherry blossom viewing) parties are held everywhere under the trees. In Aomori we had a Hanami in someone's driveway under their sole Cherry tree. A Hanami party seems to involve at least one, depending on the numbers, large blue tarp, drinks: sake or beer, and either a BBQ or a hot pot. At the Mori fetsival last weekend you could hire small portable earthenware BBQ's filled with hot coals to cook your lunch. Everyone just chats and appreciates the blossoms.

    It's not always about flesh meeting the grill I've been playing around with my vegetables... still can't quite perfect corn, so it's back in the pot of boiling water. I even tried grilling peaches this weekend, to go with my grilled chicken (brined and seasoned with Hog Wild rub...) My best recent effort was searing slices of eggplant until they're practically black... and then dousing them with olive oil. I made eggplant parmesan with those, but saved a few slices to eat cold... like the Italians do... going back to my trip to Tuscany in 1999, I couldn't get over how every little grocery store had its own grilled eggplant for sale in the deli case, along with everything you might want to heap on an antipasta plate. We were staying in a "villa", a two-bedroom apartment in the middle of the country... and I cooked some great dinners, which we ate on the patio overlooking golden fields of grain... before you go getting jealous, let me reveal this glorious destination's downside: it was filled with standoffish Brits who got up early to stake out their favorite spot by the pool. We nicknamed one guy Mr. Tan.

    m having quite a big Fourth of July BBQ at my new house on the 3rd !! I was wondering if some other posters had ever BBQed for a bunch of people and any advice?
    Iam planning cooking the meats on the stove or in the oven before and just finishing them off on the grill for flavor, is this feasible or would it be BBQ sacrilidge?
    I got Beef ribs, sirloin steaks, pork chops ,baby backs ,chicken halfs, and only a medium sized BBQ grill. I will actually cook the burgers and hot dogs on the grill all the way.
    Feasible plan?
    Unfortunatlly i have no problems with the beer..i asked what everyone liked and eneded up with a case of Pacifico and a case of Henry Weinhards Hefeweisen, ah well i got a six pack of Laguntas Sirius Ale for me! Reply

    P SpringsLicker That’s an excellent plan considering that you have a medium sized grill. If you planned to cook them the entire time on a grill, you would need one that was large enough to cook with indirect, low heat.
    The sacriledge is doing it on the 3rd! Just kidding!

    I can completely relate to "getting desperate/frustrated in Chico, CA". I am in my late 30's and still have problems "scaring" men off. The last man that I was very interested in is a very nice, good looking, down-to-earth welder. We talked, flirted, etc for months and yet I coudldn't get him to ask me out or even say "yes" when I asked him out. He just kept flirting and running. Finally I gave up. After a few times of seeing him and just being 'friendly' he went and asked my best friend why I wasn't flirting with him. She asked him why he didn't ask me out or say yes when I asked him out... he said that I 'scared' him.
    So, while your advice to 'just be yourself' is always a good place to start and no one should be something they aren't - it isn't that simple. Maybe you can ask some of the men out there in the world - what do you want from us (besides blonde hair and boobs). Tell them not to be so 'scared' of educated women - just because I can read hieroglyphs doesn't mean I can't (and don't) appreciate a lazy Sunday afternoon on the couch watching football, BBQing on the back porch, or cooking my honey his favorite meal.

    Baking the Bread
    As planned, I spent Sunday making bread. I used the recipe for "Acme's Rustic Baugettes." I'm actually a bit puzzled by the name because they certainly are shaped in the standard way. Perhaps "Rustic" refers to the fact that they make less use of commercial yeast the majority of baugettes in France are currently made in a fairly "dull" manner. The recipe makes use of two pre-ferments prepared the day before. First off is about a cup of "leftover dough" which in this case is made the day before (in a Bakery you just literally use something leftover). The second is a "poolish" which is a very battery dough left for about 12 hours. The original recipe called for All Purpose flour, but I used bread flour. It also had a rather silly sub-dividing of yeasted water between the dough and poolish. I instead just use a small amount of dough as the yeast injection for the poolish. Only a total of 1/2 tsp of yeast is used for 4 baugettes. This is probably about 1/4 of the amount you would normally see in a normal cookbook. Fermentation and rise times were longer as a result, but not a huge amount. I did an OK job at forming the baugettes, but a lousy job of transfering them to the baking stone. This resulted in only one of the four being straight. They tasted great, however, and the interior came out just about how I like to see it.
