If you have any questions or requests, please let mi knoh and I will surely try and figure it out for you. I will be updatin' often so please check back. My Tips To ensure the meat is properly cooked BBQing should be done in Jamaican time…. nice and slow. Brush a small amount of cooking oil on the grill to keep food from sticking. Add smoky flavour by throwing thoroughly soaked wood chips onto BBQ coals. Soak wooden skewers in water for at least one hour before threading meat or vegetables onto them – this will prevent charring. Brush both sides of the meat, seafood or vegetables with sauce during the last 5- 6 minutes of cooking.

Posted by grillingator My Page ) on Wed, Sep 4, 02 at 17:39 Over the Labor Day Weekend, I was looking for a new way to cook a Tri-Tips roast. In the BBQ Bible by Steven Raichlen, which is a very good book by the way, he has a section on using wood to cook as the primary heat source, instead of charcoal. I decided to cook the roast indirectly using hickory wood chunks surrounding a drippan. I figure from the size of the meat, 3 pound, about 1.5 to 2 hours would be needed to get it to an internal heat of 160 degrees. I started the wood chunks in a chimney, got them heated up, and put them in my Webber kettle. Put the meat on the grill, opened all the vents, top and bottom, full, and set back drinking beer, while watching the UK-UL football game. After an hour, I opened the lid to check on things, and found that the wood was gone, burnt away. I finished the roast on my gas grill, as my wife and kids were pretty tired of waiting. I went back and reread the BBQ Bible regarding cooking with wood. I couldn't find any reasons why it didn't work. So I have a few questions that I hope someone can answer;

Smoked Beef Tri-Tip and Texas BBQ Sauce

With Father’s Day just around the corner, it’s time to break out the grill and get barbequing! This is a great recipe for Dads to tackle, or for their loved ones to cook with them, whether it be out camping, on a picnic, on the beach, or just in your own backyard. There are few ways of cooking that are quite as fun as BBQing in the great outdoors! We got this Texas-style recipe from Austin’s Restaurant, famous for its classic, homestyle barbequed meat dishes. About the chef: Chef Victor Paez discovered his love for cooking when he spent a summer when he was 12 with his uncle, who at that time was the Executive Chef on the Queen Mary in Long Beach. He was emphatically taught about the importance of the freshness and quality of ingredients. Later he took up cooking under some local chefs in the Bay Area, eventually working under Chef Dana Clark at Bourbon Street in Mountain View, where he learned the ways of Cajun Creole cooking in New Orleans. He later had the pleasure of working with Jacque Robert, at the then famous Ernie’s Restaurant in San Francisco. In 1981 he enrolled at the CCA in San Francisco and was soon hired at Michael’s in Sunnyvale under Chef Al Saarne. After that he moved on to manage Nicolino’s in Sunnyvale for 13 years, and finally ended up at Austin’s in 2004, where his objectives have been to create a more diversified menu with an upscale edge.

      From The Wall Street Journal Online Barbecuing is like a religion to many, and every year it seems as if there is some new item to worship in the endless quest for grilling nirvana. Most of the hubbub, of course, centers on the latest and greatest of the ever-growing behemoths that are called grills, but actually are beginning to resemble small sports cars. They are certainly becoming increasingly comparable some of the top grills now have more switches than a Maserati and can cost about $6,000 right off the retail floor and up to $10,000 when fully customized. All these trends were reflected in a trio of new BBQ products I tested with my culinary consultant Ed over the past few weeks. The devices aimed to make the act of grilling quicker (in the case of an instant marinating machine), less fussy (a hardy but baby-sized grill) and more environmentally friendly (a manageable solar oven). And while all three had their issues, no surprise, they displayed welcome evidence that man does not live by monster BBQs alone.

BBQing with Charcoal - Make sure there is a bottom screen in the grill to leave some air space for the fire to breathe. When setting up the coals in the grill, spread them out so there is an even layer covering the bottom. Then pile the coals in the center before lighting. When you can't hold your hand five inches over the fire for a count to five, the fire is ready for cooking. Then use a utensil to spread the coals out and put the grill on and cook! Photo Friday (Vol. XVIII) [BBQ Edition]
Although it has nothing to do with the topic at hand, I'd like to take a moment to point out that not everyone seems to have gotten the word about peace having broken out here in the Middle East. My blog-buddy Harry was stoned (no, not that kind) early this morning while driving home from a rehearsal with his band (he was on the Jerusalem-Modi'in highway, Road 443). It seems that Harry committed the unforgivable 'crime' (Saeb Erikat would probably use the term 'atrocity) of DWJ (Driving While Jewish). Fortunately, he escaped without injury... but his car wasn't so lucky. Once he posts the pictures of the damage I think we will be able to set aside the 'kids will be kids' excuse that the PA loves to trot out when these things happen. Anyway, if you know or read Harry (and if not... what's wrong with you!), go say hello and tell him not to let this incident turn him into a lunatic right wing settler like me. :-) OK, now that we've gotten the Public Service Announcement portion of our program out of the way... on to Photo Friday!

Well, when I have enough quarters saved up I'm ordering one of those Weber's I have listed above to give you a DAILY review on how well it works! Generally speaking you get what you pay for (if you are lucky). Obviously if you are going to store your grill uncovered out in the weather I wouldn't put a lot of money out and just get a basic Charbroil or Thermos model. There are Char Broil models now that offer a drop in tray so you can use charcoal. Nifty!
