From the Editor Dear Readers, The Austrian Ambassador to the United States is leaving. We wish him all the best for his new assignment in Japan.
The word "transatlantic" is commonly restricted to an economic or political context. However, there is an invisible but cohesive web of imponderables underlying our transatlantic relations which is often overlooked. Not in this issue!
For example: the article on pumpkin seed oil describes how gastronomy can cement the relations between our two continents. Another article shows the tremendous influence of an Austrian-born composer on the popular music styles of the United States.
Also, the success of Mission to Mars depends in large part on the networking between international scientists. The art of political cartooning originated in Europe, and some of the greatest American cartoonists were Austrians.

    Food in African American Culture
    African American cuisine predominant in the southern United States is influenced by African styles of preparation and cooking.
    African American food, known as soul food, is closely related to the cuisines of both AFRICA and the American South. African slaves brought many of their native fruits and vegetables to the Americas, including YAMS, watermelon, okra, and several varieties of beans, all of which were soon adopted into the diets of their owners. Slaves who were taken into the plantation owner’s house as cooks and household servants learned to combine their own food with their masters’ food. African American cuisine also grew out of the slaves’ resourcefulness in using the cast-off ingredients of the master’s meals. For example, they developed methods to cook parts of the pig not eaten by their owner’s family, feasting on the snout, ears, feet, tail, ribs, thighs (hocks), stomach (maw), and small intestines (which when boiled and fried are known as chitterlings, or "chitlins"). The West African diet featured starchy foods such as rice and yams, both of which became important parts of the African American diet. Although African slaves did not introduce rice into the Americas, their experience with rice cultivation in Africa helped make possible large-scale rice production in the Carolinas and the Gulf Coast states. Using both African and American cooking methods, African American slaves roasted, boiled, fried, and baked native yams and sweet potatoes. Sweet potato pie continues to be a popular Southern dessert.

    Buttered breadcrumbs
    • 300 grams butter (unsalted 300 grams bread crumbs
    Recipe
    Knead flour, salt, oil and water into a medium-firm dough. Divide into 3 small round loaves, brush each loaf with melted butter and let sit for 1 hour.
    Peel, core and slice apples. Mix in granulated sugar, raisins, grated lemon peel, lemon juice, rum, cinnamon.
    Roast butter and bread crumbs.

    Mozart is probably Austria's most famous musician, but Tafelspitz is its most famous dish. It got that way because of Austria's most famous Emperor, Franz Josef I. Whatever Franz did, everyone else wanted to do too. So when the word got out that his Imperial Majesty preferred boiled beef dish called Tafelspitz for lunch to everything else, it was Tafelspitz mania, and it still is.
    RECIPE INGREDIENTS
    3 pounds beef bones, cut up
    5 quarts cold water 3 pounds brisket of beef , trimmed of excess fat 1 large Spanish or Bermuda onion 2 cups peeled, coarsely chopped white turnips 1 cup peeled, coarsely chopped carrots 4 cups carefully cleaned, coarsely chopped leeks , green tops removed 1 tablespoon salt 20 black peppercorns bay leaves White horseradish or horseradish sauce, for garnish RECIPE METHOD Rinse the bones with cold, running water. Put into a stockpot large enough to accommodate all the ingredients. Cover with the cold water. Bring to a boil, turn down to simmer, and skim the surface. When the surface is clean, add the brisket and continue to skim.

    These are as simple a filled cookie as one could find, and yet they look festive and taste great. The basic dough recipe is similar to that used for macaroons.
    RECIPE INGREDIENTS
    2 cups finely ground almonds
    1/3 cup granulated sugar egg white 1/4 teaspoon almond extract 1/8 teaspoon salt About 1/2 cup apricot or other jam, stirred until smooth Confectioners' sugar RECIPE METHOD Preheat the oven to 350 degrees F. Lightly grease 2 large baking sheets. In a bowl, combine all ingredients except the jam and confectioners’ sugar. Mix the dough into a paste. Lightly dust work surface with confectioners’ sugar. Divide dough into 4 parts. Roll each part into a rope 3/4-inch in diameter and about 11 inches long. Place 2 ropes on each baking sheet. Press a groove down the center of each rope, leaving 1/4-inch closed at each end. Bake for 10 minutes. Remove from the oven; spoon jam into the grooves. Return to the oven and bake for about 10 more minutes, or until golden brown. Cut cookie strips at a 45-degree angle into 1-inch slices. Choose from over 9,000 cookbooks
