Schiavelli, you see, is a familiar face in American film. His credits include Blade Runner Batman Returns and the zonked-out assassin Buggy Ding Dong in Danny De Vito's Death to Smoochy Ghost that he stormed our collective consciousness. No one has ever played the dead (or undead, or about to be dead) more convincingly. However, Schiavelli has another, very-much-alive persona : as a poet of Sicilian cuisine in three cookbooks, including Papa Andrea's Sicilian Table . This is what brought him, along with 150 journalists, authors, broadcasters and chefs from all over the world, to the convening of foodies that is Tasting Australia. Tasting happens every two years in the South Australian city of Adelaide.     Self Raising flour, Water, Butter, Jam, Honey
    A mixing bowl, Wooden Spoon, Damper Stick (a good damper stick is a metre long, straight and approximately 15 mm thick). Campfire.

    Mix enough flour (1/2 cup per person) with water to make a firm dough. (Fig 1)
    Roll the dough into a giant worm (fig 2) and wrap around he end of a good damper stick.
    Cook over the hot coals, rotating the stick as the damper cooks. The slower it cooks the better it tastes. when the damper slides easily off the stick it is ready. Place butter, jam or honey into the hole and eat. Bon Appetit Back

    Fish steaks marinated in lime, ginger, and pepper, then grilled. From Lisa's cooking Cache.

    AUSTRALIAN GRILLED FISH
    For the steaks: they should be 8-10 ounces and 1-inch thick each. Use Swordfish, Halibut or Salmon steaks.
    1. In a bowl, combine the lime juice, 1 tablespoon oil, ginger, cayenne pepper and enough freshly ground black pepper to suit your taste.
    2. Marinate the fish in the marinade for 45-60 minutes. Turn steaks 2-3 times.
    3. Have the grill prepared with white coals and brush the cooking grill with the remaining one tablespoon oil.
    4. Grill the fish, brushing several times with the marinade, until cooked through and opaque in the center. Turn fish after about 4-5 minutes. Total grilling time will depend on your grill and the heat of the coals.
    To broil instead, use a broiler pan brushed with oil and broil until center is opaque. Will take about 10 minutes total in broiler. Turn steaks after 5 minutes, and baste often with marinade.
    Serving Ideas : Grill outdoors and serve with crispy green salad and bread

    One of the big news stories that has developed recently is the volatile situation with the outbreaks of avian 'flu in South-East Asia. The Australian government is developing and stockpiling vaccines against the disease, indicating that there is serious concern about a potential new pandemic. Recent human deaths from the disease in Vietnam, Thailand and Cambodia follow the first cases, which occurred in Hong Kong in 1997. Scientists are now worried that the same Type A virus - H5N1 or a related strain - may become infectious, not only from bird to human, but also from human to human. The virus is more virulent than SARS that developed in Hong Kong and Vietnam in 2002.
