The Cooking Guide that Unravel the Mysteries of Asian Cuisine
Recipes are tyrannical, often intimidating, and even though thousands had been written about them, the question of their effectiveness in teaching people how to cook is still not being answered. Techniques, on the other hand, teach us how to get the most out of an ingredient and challenge us to use our intuition and follow our palates. Techniques are divided into two categories. There are the minor ones, which make life in the kitchen smoother and more efficient, examples like tips for quick peeling, stemming and chopping. And there are the big ones that turn you into a cook. Of these, there are surprisingly few. Once you've gotten a handle on roasting, poaching, grilling, frying, steaming, sautéing, and braising, you'll know how to cook most foods, and if you understand the logic of how these techniques work, you'll be able to improvise intuitively and give your own special style and identity to your cooking. Therefore, it is our sincere hope that by having this cooking guide section, it would be able to help you to become a better and well equipped cook.

It is my sole purpose to introduce you to some of the best recipes on the internet, and to share with you some of my own personally developed recipes and those of my mother, Gladys , who taught me how to cook. I also want you to know that recipes are made to be altered. Use your imagination when you cook. If one fruit or vegetable is not in season, use something that is. Keep things as fresh as you can buy at the time. Experiment with recipes. Change a spice or two. Use different meats, like substituting pork for chicken. Fry some sweet potatoes instead of white ones. Throw a handful of raisins into your gravy. Pick some nasturtiums out of your garden and toss them in your salad. Put some cranberry juice in your salad dressing. Use lots of olive oil! Raise a little hell in your kitchen! Everyone will think you know what you are doing and will go home and try it themselves. Season your food while you are cooking it. Season before, and during cooking. If you add a new ingredient that needs seasoning, season again. Food seasoned after it is cooked does not taste as good as when seasoned before and during the cooking process. Experiment with different seasonings. Sure, you are going to mess up now and then, but go lightly at first and you will find that your experimentation with seasonings will give your recipes a signature that no one else has.

ASIAN SEAFOOD TART
Season's Best recipe book for Spring/Summer from Pampered Chef
1 pkg. (15 oz.) refrigerated pie crusts
2 eggs
1 1/2 TBLSP. Asian Seasoning Mix (I don't have this yet, so I used some ground ginger, garlic powder and some teriyaki sauce)
1 pkg. (8 oz.) flake-style imitation crab meat
4 oz. mozzarella cheese, grated
1/4 cup carrott, grated
1/4 cup green onions, thinly sliced
Separate one egg reserving white for later. Take yolk from separated egg plus the other egg and place in bowl. Add seasonings. Add chopped crab meat, grated carrot, sliced green onion, and grated cheese.
Take either your PC deep dish baker, or a deep dish pie plate, and lay one crust in the bottom, pressing up the sides as you go. Brush bottom crust lightly with egg white. Place filling in crust.

OCEAN'S SEAFOOD AND GINGER STIR FRY
(Recipe copied from an "Ocean's" canned salmon advertisement)
1 Tbs oil
1.5 tsp. fresh ginger, minced
1.5 tsp. fresh garlic, minced
1.5 cups vegetable stock
2 Tbs Soy sauce or tamari sauce
2 Tbs Brown sugar
1/4 tsp Tabasco sauce
1 Tbs Lemon or lime juice
1 Tbs Cornstarch
1 tsp Sesame oil 2 Tbs Rice wine 1/4 cup oil 2 cans Pink Skinless and Boneless Salmon (170g) (I used pink salmon - still had bones and skin, and tasted fine) 1 cu p Imitation crab (optional) 4 cups Asian blend frozen vegetables (thawed, drained) 4 cups cooked rice or noddles Salt and pepper to taste 1. Heat the oil in a small saucepan. Add the ginger and garlic and stir fry for 30 seconds over medium heat to bring out the flavour. Add the stock, soy sauce, brown sugar, Tabasco, sesame oil and lemon juice. Bring to a boil, stirring. 2. Dissolve the corn starch in the rice wine and whisk into the sauce. Heat until sauce thickens and reaches a full boil. Simmer for 30 seconds. Remove from heat and set aside. 3. Have all ingredients ready. Heat the oil in a large skillet over high heat until very hot. Add the vegetables and saute until crisp-tender, about 1-2 minutes. Add the sauce, the salmon and imitation crab (optional) in chunks and season to taste as necessary. Heat through briefly and serve at once over rice or noodles.

Combine fish squares and cornstarch in a bowl. Toss to coat. Beat egg whites and black pepper until foamy. Dip coated fish pieces into egg white mixture. Heat oil in a heavy nonstick skillet or wok over medium high heat. When oil is very hot, fry coated fish 3-4 minutes, a few at a time, until golden. Remove with a slotted spoon, drain on paper towels and keep warm. Discard all but 1-1/4 tsp. oil. Stir-fry ginger, mushrooms and scallions 1-2 minutes in same wok or skillet. Stir in soy sauce. Serve fish with sauce.
