WHEAT SALAD
(TABOOLEH) Place cracked wheat in bowl, stir in cold water and refrigerate for one hour. Remove from refrigerator and add remaining ingredients, reserving one quarter cup of the olive oil. Mix all together until well blended. Refrigerate at least one hour. Just before serving, stir salad again, adding reserve olive oil. Serve tabooleh in a deep bowl, garnished with romaine lettuce leaves and with pitah bread. 2 cups cracked wheat, fine
1 cup ice cold water
2 cups minced fresh parsley
1 cup finely chopped scallions
3 tablespoons minced fresh or
1 tablespoon crushed dried mint leaves
4 medium tomatoes, chopped
3/4 cup lemon juice
1 cup olive oil
1 teaspoon salt 1/2 teaspoon black pepper EGGPLANT DIP (BABAGHANOOSH) Wipe eggplant and roast on top of stove over low flame, turning until skin chars, about fifteen minutes. (Alternate method is to place eggplant in a baking dish and broil about two inches from flame. Turn to broil on all sides.) Eggplant will collapse. Slit eggplant lengthwise and place in colander cut side down to drain out bitter juices. When eggplant has cooled, peel it and discard any large seeds. Mash pulp to a smooth puree. Add remaining ingredients and mix gently. Taste to correct seasoning, then refrigerate. Serve in a shallow dish garnished with sprigs of parsley.

The table often groans under courses served at the same time, and it is considered an affront to refuse to taste everything, the cook often considering it a bad reflection on her culinary skills. As a tourist, you will have limited opportunities to enjoy dinners at home, but if you are invited, by all means go! You'll wonder what happened between the home hearth and restaurants forever thereafter. For Armenian cuisinedeveloped over thousands of years of multi-ethnic recipeshas somehow been reduced to grilled meat and vegetables at almost very venue in the country. Most visitors rave about the succulent grilled pork, beef and chickenuntil they have had the same menu every day they are here. Expats most often complain about the same ole same ole, one even calling the food bland (This from someone whose national cuisine is meat loaf).

INGREDIENTS:
TOPPING:
1 lb. ground lean lamb
1 1/2 cup yellow onion chopped fine
1/2 cup green bell pepper chopped fine
1/2 cup chopped Armenian or Italian parsley
1 teaspoon chopped garlic
1 teaspoon of fresh sweet basil chopped
1 tablespoon fresh mint leaves chopped
1/2 teaspoon ground cumin 1 can diced tomatoes 1 small can tomato paste Cayenne pepper to taste [optinal] Salt and pepper to taste PREPARATION: •Brown off the ground lamb and add the other ingredients and saute until onions and peppers are tender. Refrigerate overnight to marry the flavors. DOUGH: 2 1/2 cups sifted all purpose flour 1 pkg. Fleishman's dry yeast dissolved in 1/4 cup warm water 1/2 teaspoon salt 1/2 teaspoon sugar 1/4 cup Crisco shortening [melted] 1/2 cup warm water Mix the sugar and salt with the yeast to dissolve, and in a large bowl add sifted flour, shortening, and the yeast mixture. Knead into a smooth soft dough.

2 or 3 Parsley Sprigs, chopped 1 Tsp. Mint, dried ¼ Tsp. Allspice, ground ¼ Tsp. Cinnamon, ground ¼ Tsp. Cayenne or Hot Red Pepper Sauce (adjust to taste) 1 Tbsp. Paprika To enlarge the photo of the lentil soup , click on the photo or link Preparation This recipe may be prepared in a crock-pot (slow cooker) or on a stovetop. Crock-pot Method: If using a crock-pot, turn setting to "high." You may pre-heat the water (to save cooking time) before adding to the crock-pot. Add rinsed lentils, cover pot, and cook until lentils are starting to soften. If needed, add more hot water. Ethnic cookbooks are worth their weight in gold because they are usually treasure troves of family recipes. Such is the case with Barbara Ghazarian and her "Simply Armenian: Naturally Healthy Ethnic Cooking Made Easy" (Mayreni, $17.95). Though only one-quarter Armenian by birth and raised in Connecticut, she spent much of her childhood visiting grandparents and cousins who lived in a tight-knit Armenian immigrant community in Whitinsville, Mass. But it was when she married her husband, an Armenian man born in Syria, that she began to explore the cuisine of their shared ancestry. She learned to cook using the tastes preferred by her husband, those traditional to his mother's kitchen. Ghazarian developed an affection and appreciation for the ingredients (bulgur and lentils), food combinations (stuffing vegetables with rice) and common practices (drenching pastry with thick sugar syrup).

Most Armenian dessert recipes are Middle Eastern classics such as baklava, bourma and knafe. I'm not a big fan of this delicacies so I tried to find a recipe for something a little bit different and that would conform more to what we consider dessert. I came across this recipe for Royal Armenian pudding and it seemed to fit the bill. It's an interesting dessert, though not one I'd make again. It tasted OK, but it was a little bit too heavy, too "nutty". The strawberry sauce also didn't work for me, I just couldn't get the egg to stiffen (though there was a probably some fault with my technique). Most of my guests (and I) only had a couple of bites of the pudding, though a couple ate about half. I'd advise that if you make it, serve it in very small portions.
