Armenian Cooking and Family Ties Matthew Maroot Staff Writer Yalanchi, Kufta, Paklava ... as Armenians we are all familiar with these culinary delights, however, not too many college students spend as much time preparing these dishes as they do enjoying them. While the weekend consisted largely of the preparation of various Armenian dishes, Professor Der Mugrdechian also included a discussion on the history and tradition that go along with these delicacies. It is no secret that Armenians have enjoyed their traditional foods for centuries, indeed, food has long been an important part of the Armenian culture. In the 5th Century B.C., the Greek historian Xenophon included in his work Anabasis, a description of the abundance of food he encountered during his travels through Armenia. As well, even the 8th Century A.D. Armenian Folk hero David of Sassoun grew strong on healthy servings of Herisah. Beginning with Chorag on Friday evening, students dove right into the art of Armenian cooking. By the end of the night they had successfully made and quickly consumed Valley Wraps, Cheese Borag, Kurabia and Yalanchi. Saturday morning brought the opportunity to make Kadaif, Kufta, Dolma, Pilaf, Tabbuli and Bourma. Many students felt more comfortable rolling Yalanchi and Bourma away from the watchful eye of their grandmothers. Some students had more Armenian food in the course of these two days than they will have all year. But no one was complaining. In fact mealtime seemed to be the quietest time of all throughout the weekend.

On the Recipe Trail in South-Eastern Turkey By Paula Wolfert Adapted from an article previously published in Saveur Magazine, May, 1998. I have come to southeastern Turkey and the region around Gaziantep, the gastronomic capital of the country, to learn about Turkish-Armenian cooking, in which bulgur plays a starring role. A cooked wheat byproduct, bulgur is not to be confused with cracked wheat (though it often is), and is ubiquitous in southeastern Turkey, where it originated. It is used in nearly every dish, including soups, pilafs, salads, desserts, even drinks. Bulgur and the traditions, recipes- and cultural humor- that surround it span the generations. They also form a common meeting ground for a people torn asunder, as my friend Ayfer Unsal has discovered. Ayfer may be Turkish, but there could be no better way for me to learn Armenian cooking than through her. For years, Ayfer has been reaching out to Turkish-Armenian women, for their cooking secrets and their friendship. The Turkish deportation and killings of ethnic Armenians in 1915 are well known- what isn't publicized are the efforts of a few, like my friend Ayfer, a newspaper columnist and author, who are closing the wounds by seeking to establish meaningful relationships between Armenians and Turks. Her efforts have not always been well-received; once her brother's car was bombed, an apparent message to Ayfer to temper her writing.

Over the centuries it was invaded and controlled by various empires, including the Roman, Byzantine, Arab, Persian, and Ottoman. Incorporated into the former Soviet Union in 1920, it finally, along with Azerbaijan, gained independence in 1991. Regional fighting with its neighbor (Azerbaijan) over land control bloodied both countrys, and a cease-fire agreement was finally reached in 1994. The local economy still suffers from the long-term ramifications of war, an Azerbaijan fuel blockade, and a very severe 1988 earthquake that destroyed much of its infrastructure, and killed over 55,000 of its citizens.
