Submitted by: Saul "A famous, classic South American dish otherwise known as 'Ensalada Rusa.' Makes absolutely the best appetizer. Ready to serve as soon as it is chilled, and even better overnight." Original recipe yield: 6 servings. PRINT: EMAIL: RECIPE BOX: SHOPPING LIST:
INGREDIENTS:
  • 4 russet potatoes - peeled, boiled, and cubed 3 hard cooked eggs, chopped 1 (10 ounce) can mixed vegetables 1/2 cup mayonnaise 1/2 teaspoon black pepper 1/2 teaspoon ground mustard 1/2 tablespoon fresh lemon juice 1/2 teaspoon dried dill weed 5 tablespoons chopped pimiento-stuffed olives salt and black pepper to taste
DIRECTIONS:
  • Bring a large pot of lightly salted water to a boil. Cook peeled potatoes until tender but still firm, about 15 minutes. Drain, cool, and cube. Place eggs in a saucepan, and cover with cold water. Bring to a boil, and immediately remove from heat. Cover pan, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water and allow to cool. Peel and chop the eggs, and toss together with the potatoes and vegetables in a large mixing or serving bowl.

We simply gathered images which we want to share with you (as this mountain of garbage along the side of the freeway that joins Frankfurt and Breda, in Germany). After loading my baggage in a taxi, the day I arrived in Brussels, the chauffeur told me: "if you want I'll take you, but that is only four blocks away and I have to charge you no less than ten dollars for that", I thanked him, took hold of my bag and went on by foot. I share the first night in a community hotel's with a fellow from the USA, one from Germany and an Englishman. The American guy was reading "A hundred years of solitude" (by the Colombian Gabriel García Márquez). In the room next ours, there was a family from Togo, in Africa. They were over 12 people, dressed in their traditional clothes and cooking their traditional meals wich they shared with whoever accepted, in a hall in the hotel. I met with people from Japan, New Zealand, and other distant countries. I recive a lot of astonishings images and experiences.

    • 1 cup coarse salt, or as needed 6 pounds beef short ribs 6 limes, quartered
    DIRECTIONS:
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Coat the ribs heavily with salt. This brings out the fat. Grill for 5 to 7 minutes on each side, or to desired doneness. Remove cooked ribs to a large glass serving dish, and squeeze lime juice over them. Serve immediately.

    Argentina Wines: I have heard conflicting reports regarding the size and world rating of Argentina's wine production. Wine Spectator places Argentina as the 5th largest wine producer, where Wine Enthusiast places Argentina as 8th in world production. Everyone agrees that Argentina and Chile are the bright stars in today's wine market. Argentina and Chile are separated by the Andes Mountain Range a huge barrier between the two countries. The Argentina side is much warmer with less difference between day and night temperatures. The hot and arid Mendoza province encompasses nearly 75% of the country's 650,000 acres of grape vine cultivated land. And produces nearly 90% of its fine wines. Argentina's predominate grape is Malbec. Malbec is used in France as a blending grape in the Bordeaux region. In recent years Cahors region, southeast of Bordeaux has been planting and producing Malbec as a primary wine with good success. Other grape varietals that are showing promise are; Cabernet Sauvignon, Chardonnay and Sauvignon Blanc.

    INGREDIENTS

    PREPARATION
    Choose a 12 lb.piece of prime rib. Rub sea salt all over the meat and cover it with a piece of cotton cloth. Leave in the refrigerator for about 48 hours. After that period, remove the cloth and bake at med-high temperature for 45 min. Upon removing from the oven, the meat will be sealed on the outside and very red on the inside. The next step is to cut vertically between the bones, making steaks that weigh approximately 2 lb. Mix all ingredients and let stand for at least an hour.
    We recommend serving this dish with a lettuce, tomato and onion salad and a baked potato with a touch of butter. A good red wine is the perfect accompaniment for this savory dish.

However, due to the large ranch and cowboy lifestyle that dominated Argentina historically, beef and other hearty foods play a major role in the diets of Argentines. At most common restaurants and homes you will find most enjoy pizza, pasta, grilled meats, stews, and stuffed pastries. Empanadas, either fried or baked, are pastries filled with meats, cheeses, and vegetables. These are often served as an appetizer at a restaurant or ordered in large quantities for parties or small gatherings. Milanesas, thin slices of beef or chicken that are breaded and fried are another popular dish. Argentina is known throughout the world for their lean beef. The most popular method of serving it is as an asado. Many different cuts of beef and organs are cooked over medium heat charcoal fires that results in tender juicy meat on the inside while crunchy on the outside. Other meats are cooked similarly as well like pork, chicken, and the famous Patagonian lamb. Chimichurri sauce, a mixture of parsley, peppers, onion, oregano, tomato, garlic, laurel, oil, vinegar, and red wine, is the popular condiment of choice for placing on grilled meats served at the table.

  • EL CAMINITO opened in July 1998, and is one of the most stylish and traditional Argentinean restaurants in Japan. It has popular and original foods and various wines including those from Mendoza. The owner, Claudia Pella, a Buenos Aires born woman who has a passion for singing and dancing Tango would like to introduce authentic food from her country to Japanese people. The dishes in EL CAMINITO are among the most typical foods in Argentina and have simple but profound and unique tastes. Special ingredients imported from Argentina mean that none of the real flavor is lost. Most dishes are meat-based, but vegetable dishes, seafood, stew, paste and pizza are also available (menu items are written in Spanish, Japanese and English) The chef Keizo Asai, who specializes in French cuisine, has worked in many famous hotels in Tokyo, such as Hotel Okura and Meiji Kinennkan and also, worked as a chef for the Japanese Embassy in Argentina from 1983 to 1988. From these experiences he has developed excellent skills in cooking Argentinean dishes.
