At age 80, Dominique St. Hillaire can still take the heat and has no desire to leave the kitchen. That's where she is every day (except Sunday) cooking lunch and dinner at Mama Jean's, a West Indian restaurant at 536 Ninth Ave. (between 39th and 40th Sts.). The menu at the snug spot includes island eats she grew up on in Trinidad, says co-owner Fedner La Chapelle, her son. Specialties include braised oxtails and Soca Sunday, a homey dish of stewed chicken served with macaroni pie, stewed peas and rice. Men at work: Don't let the name fool you - everybody's welcome at Employees Only, a "rustic European" 40-seater at 510 Hudson St. (between Christopher and W. 10th Sts.). Until next Wednesday, there's a limited menu. ... Todd English is expanding his empire again - with English Is Italian. The restaurant opens at the end of this month at 622 Third Ave. (at 40th), former site of Tuscan. Rec room: Apartment 138, new to Brooklyn's Smith St. scene, has everything you asked for as a kid and didn't get: a game room, French toast for breakfast and milk shakes until 3 a.m., plus a slew of reasonably priced fancier fare, beers and cocktails. * 1 jar Dulce De Leche Original
300g cornflour
150g plain flour 200g butter 150g caster sugar 3 egg yolks ½ tsp bicarbonate of soda 1 tsp baking powder 1 tbsp brandy or cognac 1 tsp vanilla essence 150g desiccated coconut HOW TO COOK IT Preheat the oven to 160C/325F/ Gas Mark 3 1. Cream together the butter and sugar. Add the eggs yolks, vanilla essence and cognac and mix well. 2. Sift together the dry ingredients and add to the butter and sugar mixture. Mix well. At this stage the mixture will look too dry, but keep mixing until the mixture forms a pastry like dough.

Cooking A few years ago I took an Italian Cuisine course in Argentina (if you speak Spanish take a look at this great source for recipes Gato Dumas ), and ended up cooking mainly pasta, rissotto, pizza, and canoli. (I like other cuisines as well, but Italian is rustic, modern and much less work than French). In my opinion, the two most important things to remember when you cook are: (1) Always use high quality ingredients and (2) Always taste what you are cooking in each step. When you serve dinner, don't be tempted to tell how you made a dish. The guest has to feel the food as a whole, has to imagine the mixture of tastes. After dinner, you are free to impress telling the recipe. Wine Since I come from Argentina, I know about Argentinean wines. I like Cabernet Savignon (with 13.5% degrees of alcohol, in general in the US are softer, around 12/12.5%). I also like the Argentinean grape Malbec. Malbec wine is full-body with a great structure, usually stored in oak barrels to improve its natural taste. If you happen to go to Trader Joe's, try Trapiche Malbec (if you try it, remember this is an inexpensive wine).

    3 white onions, sliced to 1/4 inch thickness
    9 frozen small corn cobs
    1/2 lb. snow peas
    3 T. butter
    seasoning salt to taste
    2 cubes ice
    Lightly oil grill and preheat to high.
    Place onion slices on a large sheet of aluminum foil; bring up edges of foil a bit to form a foil 'package'. Add corn and snow peas to onions. Place butter on top, spread out. Season with seasoned salt to taste, then lay ice cubes on top of the whole thing. Seal well in a foil 'packet'. Place foil packet on top shelf of preheated grill while cooking your favorite meats; grill until corn is firm but tender. Open foil packet and serve!
    Grilled Steak Argentinean-Style
    For the steak: 2 20-ounce New York strip steaks, 1 3/4 to 2 inches thick Olive oil Coarse salt and freshly ground black pepper to taste For the chimichurri sauce: 3 bunches flat-leaf parsley 5 large garlic cloves 3/4 C. extra-virgin olive oil
