The cuisine of Argentina is more European than South American. Italy and Spain have made the greatest influence on the gastronomy, although there are indigenous dishes originating in the Andes. The most famous dishes are their tremendous beef "Parrilladas" (Grills) and "Asados" (Roasts). "Empanadas" are little pastry packages of ground beef, pork, onions, tomatoes, etc. Argentine Pizzas are ubiquitous and slightly different than the traditional Naples Pizza, with ingredients such as Mojo Picon (originating in the Canary Islands), barbecued chicken, etc. For those with a sweet tooth, they must try Dulce de Leche, a caramel sauce used for everything from Crepes to toast. Argentinean gastronomy as we know it today has its roots in Spain, with influences from the native Indians from the Andes. The cuisine is a delicious mix of Spanish cooking techniques and indigenous ingredients. This hybrid of cultures and ingredients has also been influenced by the Italian culinary tradition through the massive Italian immigration in the late 1800’s and early 20th century, and later by the Germans during WWII. Beef is the cornerstone of Argentinean gastronomy, holding world recognition for being undoubtedly ‘the best beef in the world’. The Argentine landscapes are very flat (apart from the Andes) and full of rich green pastures, perfect for cattle. The most highly esteemed wines from Argentina are made with the Malbec grape, and the Malbec/Argentine Steak combo is divine, perfectly suited.

Argentinean Churrasco con Chimichurri and Sweet Potato Fries Recipe

Here's a dish that takes us down to South America and the Argentinean pampas, home of the gauchos, the continent's cowboys. Chimichurri is a traditional condiment that's similar to a pesto sauce but made with parsley rather than basil. It's the typical accompaniment for the classic Argentinean dish, churrasco, which is usually made with skirt steak. In this recipe, Chef Douglas Rodriguez (Patria, New York, New York) uses filet mignon, which is the preferred cut of his maître d' , Ariel Lacayo, whose family owns the famous Los Ranchos steak house in Managua, Nicaragua.
RECIPE INGREDIENTS
For Chimichurri:
1/4 cup red wine vinegar garlic cloves bay leaves jalapeno chiles, seeded and coarsely chopped 1 1/2 tablespoon of salt 3/4 cup coarsely chopped fresh parsley 1/4 cup fresh oregano leaves 1/3 cup extra-virgin olive oil For Sweet Potato Fries and Steaks: 3 large sweet potatoes 2 to 3 cups canola oil For Steaks: 3 filet mignon steaks, 7 to 8 ounces each

With good fortune for the animals (cattle and horses) who didn't leave and stayed at this pampas this lands became their "promised land" for about 450 years they have enjoyed and they still do enjoy an exceptional climate constant rain and the endless free mountains of green grass.

The event series was organized by 8th grade pupils at the Erich-Kästner School. In June 2004 the pupils had already participated in an exchange between Kick forward’s Street Sport network in Ostfildern (Straßensport Ostfildern) and La Fundación Defensores del Chaco from Argentina. ARGENTINEAN RECIPES EMPANADA CRIOLLAS Nombre: Empanada Criollas Dough: 1 Kg. or 2 pounds of white flour
1 egg, salt, water
250 g. or ½ pound of "grasa de pella"
Filling: 2 pounds of veal beef, tenderloin in preference, in slices 5 milimeters thick. With a sharp knife cut it in small cubes 5 milimeters wide. It can be used minced meat from the butcher but this is not the right "criollo" way.
2 large onions minced well chopped.
2 tablespoons of paprika
1 tablespoon of dried crushed red pepper(flakes)
2 cups filled of "grasa de pella", salt
PREPARATION OF DOUGH a- Combine flour and salt in a bowl.
b- Pour in the tepid liquid "grasa de pella", the entire egg and water until reasonable well combined.
c- Turn out on a floured surface and knead until smooth. d- Leave 15 minutes to rest covered with a moisted cloth. e- Roll on the dough with a knead-stick stretching until 3 milimeters thick. f- Cut circles aproximately 5 inches in diameter. PREPARATION OF FILLING a- Heat the two large cups of "grasa de pella" in a saucepan until liquid. b- Saute in it the chopped onion until soft but not brown.

American food - that's burgers, steaks and piles of doughnuts, right? Er, no, not really, and certainly not at armadillo. Brazilian born chef/owner Rogerio David takes his culinary inspiration from throughout Latin America, from Mexico to Argentina, Brazil and beyond; and there is not a burger bun in sight. Instead the menu is spiked with South American ingredients such as spicy poblano chillies, cassava and various punchy salsas. This isn't the place to come if you're after some plain meat and potatoes. The genius of David's cooking is that, as peculiar as the ingredients or combinations may at first seem, the way that they translate on the plate is always thoroughly convincing, thanks to the chef's well-considered balances of hot, sweet, earthy and spicy. The Latin American experience is a beginning-to-end affair at Armadillo, starting with Margaritas, Pisco sours, and Mexican beers, and finishing with say, Mexican coffee flavored with cinnamon, or a drink favored by South American called mate, a kind of tea made from a dried herb. The wine list is dedicated mainly to Chilean and Argentinean wines and, like the food is attractively priced. This is the sort of cooking that Londoners deserve more of.
