GLOSSARY
Bedouins - These Arab tribespeople have roamed the deserts of the Middle East for more than 1,000 years, and many still maintain their ancestral, nomadic ways of life, coexisting with rural Israeli farmers. Many Bedouin foods such as lamb were adopted by the early Israeli settlers, and recently, artisanal Bedouin sheep's and goat's milk cheeses have become hot items on the local dining scene.
Falafel
Kibbutz - Communal settlement created by Israel's early-20th-century Zionist pioneers. The Zionists sought to create a Jewish homeland in Palestine, the Promised Land that most Jews had left more than two millennia earlier. Many of the early kibbutzniks were Russian Socialists, who formed collective farms with the goal of returning to an agrarian, Biblical way of life. Giving up the heavy, Eastern European cooking of their diaspora past, they favored the simple, "common man" foods of their Arabic neighbors, which harked back to the cooking of the ancient Hebrews. Being more in tune with the local climate, this style of eating naturally became the foundation of the modern Israeli diet.
Pita - In desert lands, with little fuel for cooking fires, flatbreads (which require less baking time) have been popular for millennia. Called

Wise cooking advice This weekend, I discovered a cooking tip I haven't seen listed in any cookbooks.
While you are preparing the food, and after the guests have arrived, you contrive to fill the house up with smoke, preferably enough to get at least two smoke detectors going.
Then you go rushing about the house, opening all the windows, setting up fans, and generally doing everything short of calling the fire department.
Let the guests sit for about 1/2 hour at 50 degrees (as a result of opening the windows) and serve the food.
By this point, you have established expectations in your guests' minds that you can't fail to exceed!

Text: Healthy Eating For Diabetes
- Arabic Version -
WHY IS HEALTHY EATING IMPORTANT?
For a person with diabetes to remain healthy, the most important thing is to keep the blood glucose level as near to normal as possible. This can be achieved by following a healthy eating plan, undertaking regular exercise and taking insulin and/or tablets if required.
Many overweight people who develop diabetes in middle age may be able to control their blood glucose level by reducing their weight. From time to time you may need alterations to your eating plan, therefore it is important to have regular reviews with your doctor and dietitian. The basis of traditional Middle Eastern food habits is suitable for people with diabetes as it is based on plenty of vegetables, grains, pulses, fruit and nuts and only small amounts of meat and meat products. The use of processed and convenience food is limited and so maintaining traditional food habits can help manage diabetes.

Review of James Joyce's Ulysses By our Yearly Member Mr.Carlos Sender
The first impression I got when reading James Joyce's ULYSSES is one of bewilderment. It is an extremely long novel, and you are never too sure what is happening in the novel. The truth is that nothing really happens. That is, it goes through an ordinary day in the life of Leopold Bloom, where many ordinary things happen. So, there's no story to speak of; just a lot of small sketches that make up a day in a person's life. I think Joyce writes English like few people before or since, but you have to read patiently inorder to get a full picture. I think this is a book to be taken in small doses. By the way the final chapter leaves no one different. You'll either love it or hate it with a vengeance. Review of Roald Dahl's book by our Executive Member Mominah Bhatti (Age 8 Years) My favourite author is Roald Dahl. I like his books because they are always interesting and I'm always looking forward to see what is next. My favourite books from Roald Dahl are "The witches" and "George's Marvellous Medicine". Those are the reasons why I like Roald Dahl.

http://www.arab.net/cuisine/
Arabic cuisine has its roots in tent cookery. Nomadic tribes could use only transportable foods such as rice and dates, or ambulatory stock like sheep and camels in their recipes - which tended to be rough sketches rather than strict formulae. As the caravans journeyed throughout the Middle East, new seasonings and vegetables were discovered and added to the existing repertoire. Each new discovery was incorporated into the diet in quantities palatable to a particular tribe - a fact that many cooks believe is responsible for the anomalies found in some Arabic dishes today. The nomadic Bedouin influence is broadened by other cuisines from the Arab world, notably from Syria, Lebanon, Palestine and Egypt, resulting in a highly diverse food and drink culture. Lebanese contributions have been the greatest influence on modern Middle Eastern cuisine, in no small part due to the entrepreneurship of the Lebanese that has helped to spread Arabic cuisine throughout the world from its centre in the Levant in such areas as Aleppo, Damascus, Beirut and Nablus. Lebanese culinary influence and business skills provide the framework for the exotic cuisine recognised internationally as Arabic. Hospitality in the Arab world is second to none, and nowhere is it better expressed than in the age-old custom of serving freshly-brewed coffee or mint tea to every guest, whether the gathering be business or social.

Arabian Spice
From exotic, colorful saffron to the flavor medley of za'atar, the ancient flavors of the Middle East tempt modern palates.

souqs
The King of Arabia Any description of Middle Eastern herbs and spices starts with the king of the crop: cumin. This distinctive herb is found everywhere: freshly ground on top of hummus, sprinkled over bubbling chickpea broths with lemon, or used as the backbone of most curries and kebabs.
A couple of years ago, I traveled to Luxor, Egypt and found myself meandering through the food markets looking for a meal, bewildered at the chaos of daily life there. A rotund spice seller called me over to sell me little bags of cumin. As I declined politely he thrust a pinch of cumin into my palm and crushed it with his thumb. I took a good sniff and was instantly impressed by the wild intensity of the herb. I bought several bags.
Cultivated since biblical times, cumin is found across the Middle East. In Yemen cumin is employed in a mixture known as zhoug and in Saudi Arabia it is a signature ingredient in baharat. Many people might be more familiar with its use in Moroccan tagines, the comforting meat and vegetable stews named after the conical cooking pot used to prepare them. Sumac

In the Kitchen
I got my first taste of Arabian chile sauce during a trip to the Egyptian desert oasis of El Fayoumm in the Libyan plateau. After a six-hour taxi ride I went into a restaurant with no menu and only one dish to offer. Kushari is a national dish in Egypt and consists of a bowl of vermicelli pasta, rice, lentils, onions and a stock sauce. On top of this you get a big spoonful of fil fil. This fiery relish is a perfect counterpart to the blandness of pasta and lentils.
