Ingredients: 4 large onions, 3 cups chicken bouillon, 2 cups beef bouillon, 66 cl Bruegel Recipe: Peel the onions, finely chop them into rings approximately half a centimeter thick, then cut them in half. Melt the butter and add the half onion rings. Let it simmer until the onions begin to brown. Add the sugar and let the onions gently caramelize for 15 minutes. Then add the Bruegel and stir well. Let simmer uncovered for about an hour and remove any foam. Add the thyme while boiling. pour a refreshing glass of Bruegel . Tasty! Asparagus with mousseline sauce based on Celis White Ingredients: 2 crowns of asparagus, 3 egg yolks, juice of 1 lemon, 10 cl Celis White Recipe: Peel the asparagus thoroughly and boil for 20 to 30 minutes in lightly salted water. Appetizers: Southern cooking by the river

Inspired by the mighty Sacramento River at his feet and the stately magnolias overhead, Mitch Davis is drawing up a Southern-accented menu for his next gig. Davis, who until last week was executive chef at Mace's Restaurant in Pavilions Shopping Plaza on Fair Oaks Boulevard, has been hired to fill the same role at Jim Wheeler's new Bridges on the River. Davis, who turned out a popular take on jambalaya at Mace's, expects to expand on his interest in Southern cookery by also offering dishes involving alligator, frog legs, crayfish and catfish. "It won't be full-blown Louisiana cooking, but it will bring a little infusion of the South to California cuisine," Davis says. Wheeler hopes to open Bridges on the River with both a limited menu and a limited schedule on July 7, but the debut, already running more than a year behind his original target, could be put off a week or so.

Her research indicates barbecue, chili and tomato based sauce things match best with these wines. She has tasked me with coming up with ideas for finger foods to go along with these wine tasting choices. She is in NC and doesn't want to put out plates of things that look like they might have come from a local BBQ joint, delicious though that would be. The restaurant from the Belvedere Hotel served mini-duck burgers against a Syrah and Cabernet. Could not get them to part with the recipe. Maybe you could call and whimper and whine. I like the idea of mini-burgers, however, because they go so well with red wine. The duck burgers would just be a kick in the head. Maybe you have a place where you can get some boneless duck breasts, have the butcher sking and coarse grind them and fool around on your own. You will be the hit of the evening. Five-Minute Appetizers
Piquillo Peppers with Goat Cheese Recipe from The Whole Foods Market Cookbook by Steve Petusevsky (Clarkson Potter, 2002) Serves 6 In this recipe piquant piquillo peppers complement the creamy texture and sharp flavor of goat cheese. That's hard to pronounce, easy to eat. Handle these peppers gently, gingerly, and tenderly, as they are indeed delicate. The results are inspired and as attractive as they are delicious. Ingredients
1 7-oz. jar piquillo peppers
2 oz. prosciutto, very thinly sliced
8 fresh basil leaves
1 3.5-oz. log mild firm goat cheese
1 tsp. dried Italian herbs
Drain the whole peppers and slice vertically, opening gently and removing any seeds. Lay the peppers on a clean kitchen towel or paper towels to dry. Press the surface with another paper towel to remove any excess liquid. Place a 20-inch-long piece of waxed paper or parchment paper on the kitchen countertop. Unfold the peppers gently one at a time and lay them skin side down onto the parchment paper, overlapping them. Place the basil leaves over the prosciutto. Evenly crumble the goat cheese over the surface of the peppers. Sprinkle evenly with Italian herbs. Using the waxed paper, from the end closest to you, fold up the roll carefully into a pinwheel until it is closed. Press gently and evenly to compact the roll as much as possible.

    This is perfect for any party or Friday night snack. This dip is great with raw vegetables, crackers, or bread pieces. You can also hollow out a small round of sourdough or your favorite kind of bread and fill with this dip for your guests. Save the top of the bread as a delicious covering for your "dip bowl". Party Quiche
    Party Quiche can be easily prepared the day before and refrigerated until the next morning. Before you heat the quiche cut into 16 pieces, and place on a platter. Cover with wax paper and microwave at 50% power for 3-6 minutes, rearranging pieces once. You can substitute the bacon for ham or Canadian bacon. American cheese or Colby cheese can be substituted for the Swiss cheese.

Not surprising, it discusses romantic and physical love. In our tradition, love, and its physical expression in marriage, are our biggest joy and celebration, as well as a very serious contract. Engagements are always exciting and promising, and an engagement party is a wonderful way to get everyone together before the wedding. It seems the best way to mingle is with appetizers — and they can be exceptionally easy to prepare. Communal platters served casually allow for great mingling and visiting. The following appetizers are extremely simple to prepare, yet combine interesting tastes and textures.

    Transylvanian deviled eggs - serves 4 Stuffed eggs ingredients: 6 hard cooked eggs
    1/3 cup liver pate (chicken or goose)
    1 tsp. minced scallions
    1 Tbls mayonnaise
    1 Tbls minced parsley
    salt, pepper and paprika to taste
    1/4 cup sliced olives The bed: 3/4 cup sour cream
    3/4 cup mayo So.... For the bed, chose a oval plate and make sure all the eggs halves will fit in it. In a bowl mix the sour cream, mayo and paprika. poor gently to form a bed on the oval plate. This will serve as a bed for the eggs. Arrange the eggs on the plate and start the filling. Shell and slice the eggs lengthwise. In a small bowl, mash the eggs yolks with a fork. Add pate, scallions, the mayo, salt, pepper and paprika. Blend until very smooth. Fill in the eggs halves with a spoon and even better with a cake decorator.
