Eating Defensively:
Food Safety Advice for Persons With AIDS
Bacteria and Food Poisoning
"It must have been something I ate!" How many times do people say this following about of nausea, upset stomach, cramps, diarrhea, or vomiting? Indeed, these can be the symptoms of food poisoningillness caused by eating food on which harmful bacteria have grown. The bacteria that cause food poisoning are difficult to detect by a food's appearance, taste or smell. But they can cause illness ranging from mild to very severe and even life-threatening. The human body ordinarily is well-equipped to deal with these bacteria, but individuals with weakened immune systemssuch as those with acquired immune deficiency syndrome (AIDS) and those infected with the human immunodefiency virus (HIV)can be far greater risk of serious illness. Because of their weakened immune systems, these individuals are more susceptible to contracting a foodborne illness. Once contracted, these infections, with their severe vomiting and diarrhea, can be difficult to treat and they can come back again and again. This can further weaken the immune system and hasten the progression of HIV infection and be fatal for person with AIDS. Since most foodborne illnesses result from improper handling of food, person with AIDS or HIV infection can help themselves by following basic food safety guidelines. Applying these guidelines when buying, preparing and storing food, along with having a basic knowledge of the most common harmful bacteria and the foods on which they are found or can grow, can allow persons with AIDS to eat defensively while choosing a nutritious diet.

HIV/AIDS, SARS, the global strategy on diet, physical activity and health and road safety amongst issues for countries at 57th meeting of the Assembly
The World Health Assembly, bringing the 192 Member States of the World Health Organization together, is set to consider several critical health issues next week. The Assembly is the supreme decision-making body for WHO, and runs this year from 17 - 22 May. It will discuss actions needed to fight HIV/AIDS, to increase safety on the world's roads, a proposed strategy on diet, physical activity and health, a proposed strategy for reproductive health, a resolution on family health, and will receive updates on progress in eradicating polio, controlling measles and SARS. Keynote addresses will also be given by former Presidents Kim Dae-jung of the Republic of Korea, and Jimmy Carter of the United States of America. "There are many health challenges we must overcome, including detecting emerging, new diseases, combating those which have been with us for decades, and the risks linked to unhealthy diet. The World Health Assembly is the forum for countries to decide on health priorities, and to give direction on how these can be addressed," said Dr LEE Jong-wook, Director-General of the WHO at a briefing with journalists today. "All of our health work must ultimately serve to strengthen health systems. That is the way countries can sustain progress in public health."

The role of good nutrition in the management of HIV/AIDS has assumed increasing importance over the past decade. In fact, medical research has shown that nutritious food is one of the most powerful weapons available for fighting the often-calamitous effects of AIDS. Furthermore, it has been clinically confirmed that malnutrition is the fatal manifestation of AIDS for many of the people who succumb to the disease. People living with AIDS may require up to twice the normal daily caloric intake to protect themselves from the dangers of HIV-related malnutrition: heightened immunosuppression, muscle wasting, and outright starvation due to malabsorption and abnormal metabolism of nutrients. In addition, appropriate dietary modifications can significantly reduce both the side effects of medications and the symptoms of opportunistic infections.
Good nutrition means getting enough macronutrients and micronutrients. Macronutrients contain calories (energy): proteins, carbohydrates, and fats. They help you maintain your body weight. Micronutrients include vitamins and minerals. They keep your cells working properly, but will not prevent weight loss.

Dr. David Satcher, the Surgeon General of the United States, states that there are 33.4 million HIV-infected people around the world, and 665,000 in the United States. It is estimated that 50 percent of all new HIV infections in the United States are among people under 25, the majority of these young people are infected sexually. Nearly half (44 percent) of the HIV infections in the age group 13 to 24 were reported among young females and over half (63 percent) were among African Americans. It is important to remember that HIV can be present in the body for up to twelve years without producing any outward signs of illness. How Can You Become Infected?

AIDS treatment, nutrition and food supplements WHO Fact sheet 30 March 2005 HIV progressively damages the immune system, which can make a person susceptible to a range of opportunistic infections and lead to conditions such as weight loss, fever and diarrhoea. These HIV-related conditions can lower food intake by reducing appetite and interfering with the body's ability to absorb food. HIV also alters metabolism which can often lead to increased energy and nutrient requirements for people with HIV-infection. People with HIV who are also suffering from hunger and/or nutritional deficits are more likely to fall ill with opportunistic infections and less likely to be able to recover from them. In addition, people who are sick with HIV-related illnesses are also less able to work normally, to earn income or to produce food, which can lead to nutritional deficits both for themselves and for their dependants. As in the population at large, a good diet that provides the full range of essential micronutrients is important to the health of people infected with HIV and can help bolster the immune system, boost energy levels and maintain body weight and well-being. Guidelines published jointly by the Food and Agriculture Organization (FAO) and the World Health Organization (WHO) in 2003 offer simple dietary suggestions for people living with HIV and AIDS.[1]

SAHIMS SPECIAL UN condemns irresponsible attack on ART United nations condemns irresponsible attack on antiretroviral therapy. A recent advertising campaign is touting the benefits of vitamin therapy above antiretroviral therapy and claiming that antiretroviral therapy is toxic. These advertisements are wrong and misleading, said the World Health Organization (WHO), the United Nations Children’s Fund (UNICEF) and the Joint United Nations Programme on HIV/AIDS (UNAIDS) today.
WHO, UNICEF and UNAIDS have condemned the irresponsible linking of their names to claims that vitamins and nutrition therapy alone can prevent AIDS deaths.
A number of accounts published by Matthias Rath on his website and distributed as flyers and advertisements within South Africa state that a number of United Nations bodies including WHO, UNICEF and UNAIDS endorse his approach. The three UN organizations are extremely concerned about these misrepresentations and note that the Rath Foundation uses quotes and information from UN agencies out of context. Misrepresentation of this sort is both dangerous and unhelpful.
Over the last few years, several studies have been carried out to investigate the role of micronutrient supplements on the course of HIV/AIDS disease. The results of these studies have not been conclusive. WHO and UNAIDS recommendations for micronutrient supplementation are therefore similar for all people whether they are infected with HIV or not.

Why is good nutrition important in HIV?
    • Good nutrition helps keep your immune system strong, enabling you to better fight disease. A healthy diet improves quality of life. Weight loss, wasting, and malnutrition continue to be common problems in HIV, despite more effective antiretroviral medications, and can contribute to HIV disease progression. Good nutrition helps the body process the many medications taken by people with HIV. Diet (and exercise) may help with symptoms such as diarrhea, nausea, and fatigue, and with fat redistribution and metabolic abnormalities such as high blood sugar, cholesterol, and triglycerides.

Dyslipemia associated with highly active antiretroviral therapy (HAART) is a prevalent condition in patients living with HIV [ ].
