Nutrition Services for Older Nebraskans
These initial programs were funded as part of a national pilot study to test the feasibility of developing a senior meals program. Congregate meal sites are located throughout the state in senior centers, schools, churches, community center, and other public or private facilities. Meals served at the sites are nutritionally balanced and must meet a minimum of 1/3 of the daily recommended dietary allowances (RDAs). In 2004, more than 31,382 older adults across the state benefited through the program, enjoying approximately 2.3 million meals. When older people can't leave their homes and can't personally prepare nutritious meals, home-delivered meals are an option. More than 9,131 older Nebraskans ate approximately 931,000 home-delivered meals in 2004. People who participate in either the congregate or home-delivered meal programs may make voluntary contributions toward the cost of the program. The state's Area Agencies on Aging are responsible for overseeing the congregate and home-delivered meals programs. Meeting daily nutritional requirements is essential for older adults to maintain their health and well-being. A number of nutrition services exist to educate older adults of their dietary needs and provide regularly prepared nutritional meals. UPMC Nutrition Services
On a regular basis, UPMC sponsors events and classes that focus on maintaining nutrition health. Classes include:
  • personal consultations with a registered dietitian/nutritionist education programs for individuals living with certain diseases and conditions seminars designed to promote healthy weight loss and management
In addition, UPMC offers patient education materials that focus on a range of nutrition topics. County Nutrition Services
  • Congregate (Shared) Meals
    For adults age 60 or older who enjoy dining in a group setting, congregate meals are available at senior centers throughout the area. Meals must meet one-third of the Required Dietary Allowances and must be reviewed and approved by a registered dietitian. Nutritious meals are served at least once a day. There is no obligation to dine every day seniors may attend as frequently as desired for five or more days a week. Individuals with special dietary restrictions should talk with the senior center to learn what accommodations are available.

Nutritional Guidelines for People 70 and Older
Healthy adults ages 70 and over should follow different nutritional guidelines than other people, according to a new food guide pyramid developed by the US Department of Agriculture's Human Nutrition Research Center on Aging. The well-known food pyramid groups foods together by type and recommended number of servings per day. In general, the food guide pyramid for healthy older adults is narrower than the original pyramid, recognizing that seniors usually need less energy and therefore usually eat less. The bread, cereal, rice and pasta group forms the base of the original food guide pyramid. But the pyramid for older adults is based on at least eight, eight-ounce glasses of water each day. The emphasis on fluids is due to older adults’ reduced sense of thirst that can lead to drinking less fluid. This two-quart daily fluid intake can include juice, milk and non-caffeinated soft drinks and beverages, as well as water. However, alcohol and drinks containing caffeine can cause the body to lose fluids and become dehydrated. Dehydration can make kidney function and constipation worse. Another key difference from the original food guide pyramid is the flag at the top to indicate a recommendation for the dietary supplements calcium, vitamin D and vitamin B-12. These supplements are sometimes recommended because older adults eat less and do not absorb and process nutrients as efficiently as younger people.
