South American Melting Pot

Brazilian cooking history is in every bite of the country's food. Native Indians developed corn porridge, cassava meal, sweet potatoes, many roots, hearts of palm, many species of game and fish, and the preservation of meats by smoking and drying. In 1533, the Portuguese colonized Brazil. After a lengthy Moorish occupation, Portugal had adapted a variety of North African cooking traditions, among them coffee, dried fruits and pastries. These culinary customs were in turn exported to Brazil, with the twist of being prepared using local ingredients.
The largest single influence on Brazilian cuisine came with African slaves. Dende, peppers and coconut milk, staples of West African cooking, became firmly established on the Brazilian palate. During the Nineteenth Century, slavery ended and an independent Brazil became a melting pot for immigrants from all over the world. Waves of new arrivals from Asia, Western and Eastern Europe and the Middle East brought kitchen traditions with them that put a truly eclectic spin on Brazilian cuisine. The nation's multiethnic and multifaceted cooking is always unique and delicious.

The South African taste for good food is proving to be quite a revelation with the visit of four fine chefs from three charming five-star hotel properties belonging to The Collection, namely: The Cellars-Hohenort in Cape Town, The Marine Hermanus in Cape Province and The Plettenberg in Eastern Cape Seaboard. The South African-style feasting has begun at the Shangri-La's Far Eastern Plaza Hotel. This, in fact, is a season for discovering appetizing South African cooking with flavors enriched by the influences of groups of settlers in the last 300 or 400 years: From boerewors (farmer's sausage) and sosaties (kebabs) to koeksisters (braided doughnut).

Exotic-looking even on a map, the Mexican state of Veracruz stretches along the Gulf Coast like the graceful tentacle of a sea creature. Within the boundaries formed by the warm coastal waters to the east and the Sierra Madre Oriental to the west is an enticing pot-pourri of cultures. The indigenous, the Afro-Cuban and the Spanish have all contributed to the vibrant good looks, enchanting music and rich culinary traditions of the veracruzanos, or jarochos, as they often refer to themselves. Long before Europeans arrived in Mexico via what is now the port city of Veracruz, the area occupied by the modern-day state of Veracruz was populated by the Olmecs, common cultural forebears of many Mesoamerican ethnic groups, as well as Huastecs and Totonacs. The latter were famous for their cultivation of vanilla and curing the pods for culinary use, adding a unique flavor to many of their dishes. The use of acuyo, a herb also known as hoja santa , also characterized the indigenous cooking of the area.

4 sm Kohlrabies, peeled and cut into chunks
(chick-peas) with liquid
1/2 c Couscous -or- Bulgar Wheat
1 lg Onion, chopped
1/4 c Raisins, dark or golden
2 Sweet Potatoes, peeled and cut into chunks
1 ts Ground Coriander
1/2 ts Ground Turmeric
2 Zucchini, sliced thick
1/2 ts Ground Cinnamon
5 Tomatoes, fresh -or- 16 oz Can Tomatoes 1/2 ts Ground Ginger 1/4 ts Ground Cumin 15 oz Can Garbanzo beans 3 c Water Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Note: Serve the couscous separately, if desired. Parsnips may be substituted for the kohlrabi.
