This is a very common dish thoroughout Africa.
It's made from corn flour.(2.5kg costs 75c)
First, you have to boil water in a pooitjie. It must be really HOT
While waiting for the water to boil,
everyone sits around the fire and talks in the smoke.
I don't understand Zulu, but the sun was setting and
there was the smell of burning wood and earth.
This is the smell of Africa for me. Put maize flour in the hot water. and mix well. Take care not to burn it. FINISHED! The cooking time is about 30 minutes to 1 hour. You can boil it as much as you like. Amazingly, African people can handle very hot things like steel pots or red hot charcoal with the bare hand! I would have to go to hospital with burns. Is it a matter of practice? As for the Taste...Well, the first time I ate this it tasted like soap and didn't like it!

Native Indians developed corn porridge, cassava meal, sweet potatoes, many roots, hearts of palm, many species of game and fish, and the preservation of meats by smoking and drying. In 1533, the Portuguese colonized Brazil. After a lengthy Moorish occupation, Portugal had adapted a variety of North African cooking traditions, among them coffee, dried fruits and pastries. These culinary customs were in turn exported to Brazil, with the twist of being prepared using local ingredients. The largest single influence on Brazilian cuisine came with African slaves. Dende, peppers and coconut milk, staples of West African cooking, became firmly established on the Brazilian palate. During the Nineteenth Century, slavery ended and an independent Brazil became a melting pot for immigrants from all over the world. Waves of new arrivals from Asia, Western and Eastern Europe and the Middle East brought kitchen traditions with them that put a truly eclectic spin on Brazilian cuisine. The nation's multiethnic and multifaceted cooking is always unique and delicious.

Ms. Nina Lorch teaches a class about African food to the Royals. In this class, the students learned how to make injera, or Ethiopian flatbread. They took turns measuring, stirring and cooking the bread. Then the kids got to eat the bread they had cooked, along with some African chicken and peanut stew that Ms. Lorch brought from home. Ms. Lorch learned to cook African food when she lived in Chad as a Peace Corps volunteer.
This is the finished injera, served with the African stew. All of the Royals liked the injera, and some of them liked the stew as well!

These recipes have been inherited over the centuries from the Dutch, the Malaysians and the French Huguenots - and favourite recipes, often characteristic of a particular region - have been passed down from one generation to the next. Here are a few traditional sweet treats that are still firm favourites in South Africa today..... MILK TART The milk tart, with it's puff pastry base borrowed from the French, was introduced to South Africa by the Dutch. BASE
  • 50g butter 30ml sugar 1 egg 200ml self-raising flour (110g) 1ml salt 15ml milk
FILLING
  • 500ml milk 75ml sugar (60g) 150ml cake flour 2 eggs, separated 1ml salt 25ml butter 5ml vanilla essence (1 tsp) ground cinnamon
METHOD
  • For base: Beat butter and sugar together. Add egg and beat until light and fluffy. Sift flour and salt together; add, with milk, to the creamed mixture. Grease a 23cm ovenproof pie dish and press the dough into it using a spatula. For filling: Heat milk and sugar together in a heavy-based saucepan. Add some of the warm milk to flour and return to saucepan. Add egg yolks and salt. Boil until thickened, stirring frequently. Remove from heat, add butter and vanilla esence, and fold in lightly beaten egg whites.

    About ll Cape Expedition ll South African food scene ll Dishes unique to South Africa Evolving from a fascinatingly complex history, the South African food scene is a potjie (cauldron) of cooking methods, cultural variety and eclectic flavours unique to this 'Rainbow Nation'. South Africa's indigenous people had lived off the fat of the land and the sea since the Stone Age and what little is known of their lifestyle, has mostly been gleaned from the rock art of the Bushmen who painted on the walls of caves using naturally occurring pigments. The San (Bushmen) and Khoi (Hottentots) - collectively referred to as the Khoisan - were hunter-gathers whose diets were rich in meat, insects and fynbos. The Khoi then learnt about animal husbandry and gravitated towards the rich grazing lands of the southern Cape. The Strandlopers ('beach walkers') are said to be outcasts of the Khoi community who survived purely on the fruits of the sea and certain root vegetables. Tragically, very few of these ancient tribes still exist as most have been absorbed into the rest of the population. In 1652 Jan van Riebeeck of the Dutch East India Company was sent on a voyage to establish a refreshment station for their ships at the 'Cape of Good Hope'. The Cape's newcomers learnt much from the innate hunting and gathering skills of the indigenous people, and it was here that a multi-ethnic cuisine began to emerge.
