I love the dusk in Marrakech. I love the cacophony of sound as the musicians start, and the smells as the local lads set up their stalls of food, freshly squeezed juices and other food offerings. Some of their cauldrons look sinister, but others are tempting enough. A chicken leg grilled over coals and smothered with raisins and pine nuts and a mind blowing quantity of garlic is one of the best things I have ever eaten there, a bowl of dishwater flavored with chili the worst. This is my version of the former.
  • Chicken fillets or bones pieces. fresh red chili finely chopped cayenne pepper 2 garlic cloves a squeeze of lemon juice olive oil ground cinnamon raisons or sultanas pine nuts chopped mint
Mix the chicken pieces in a shallow dish together with the chilies, garlic, lemon juice, olive oil, cinnamon, sultanas, pine nuts and mint. Leave for at least 20 minutes but and hour would be better if you have it.

Learn the Secrets of African Cooking and Enjoy an African Feast
(June 17, 2000 North Adams, MA) On Saturday, July 8, at 5 pm visitors to MASS MoCA will discover the rich, sultry blend of meats, tropical fruits, vegetable, grains, and spices that form the foundation of West African cuisine. Culinary historian and author Elizabeth Jackson will host a journey through the south of the Sahara with Taste of Africa. The evening will include a cooking demonstration and a hot buffet dinner featuring the demonstrated recipes. West Africa stretches southward from the Sahara Desert to the humid coasts of the Atlantic Ocean, encompassing everything from Senegal to Nigeria. West African cooking requires very little specialized equipment and, as Jackson makes clear, "the beauty of West African cooking is its flexibility. There may be dozens of variations for a single dish, and you can easily tailor that same dish to suit your tastes." The daughter of missionaries, Elizabeth Jackson grew up in the Kano area of Nigeria, just south of the Sahara desert. She moved to the United States before going to college and eventually began reproducing the Nigerian recipes of her childhood. Customer Rating: Review Summary: For the price - superb Review: I haven't been to Africa but wanted a simple book which was cheap, hopefully with some Tagine recipes too. This book fills that role. The first tweleve pages are a bit about the culinary traditions, equipment, flavours and wines. Just enough to give you an insight. Then you get into the main sections. These are nicely split into chapters for each different kind of food such as starters, salads, fish, poultry, meat and vegetables. The final chapters are desserts, spice mixes and drinks. Most of the dishes are very simple to make. All the herbs and spices are all readily available in your local supermarket.

Ancestral African cooking lives on

Uprooted by slave traders, Africans were transported to Brazil, the Caribbean and the Southern United States to endure the debasement of slavery. Although they were put into loathsome situations, these tenacious individuals never extinguished the legacy and culinary expertise for good food. With the culmination of Caribbean, African, French, Spanish and Native American influences, African slaves have left behind a food legacy. Soul is associated with the class of black culture, which is the basis behind the phrase "soul food." Soul food is well known for its inexpensive and flavorful foods, prepared with love and passion.
