What we know as "soul food" is the descendant of slave cooking. It is the brilliant masterpiece that derived from want. Slave cooking is distinct in its use of greens, beans, and the parts of the pig rejected at the plantation house: pig's knuckles, ears, tripe, hog maws. These were added to the corn rations which were sometimes the only food allotted to the slaves. The meager pantry was further supplemented by wild game and fish pulled from the streams. Squirrel and possum figure among the meats used, catfish, trout, and shrimp among the fish. Much soul food requires the use of only one pot, as time for cooking and money for its tools were both hard to come by.
In the past, African American foods were prepared in many ways. Since there were no refrigerators or freezers years ago, meat was smoked in a smokehouse to make sure it wouldn't spoil. Meats were barbecued, roasted, boiled, or made into stews. Feathered wildlife was prepared by frying, baking, roasting, making broths, or simmering to form gravies. In the rivers and streams, there were lots of fish and other water life that could be eaten. Vegetables were boiled or fried. Drinks were made from the juices of fruits.
Meals were cooked in open fires using black kettles or were barbecued in open pits. The people who cooked just knew how to do it. They didn't need to follow a recipe.

African Archaeology The Search for the Beginnings of Humankind
A bout 3.6 million years ago, three early hominids were walking across the plains of what is now known as Laetoli in East Africa when the volcano Sadiman erupted, showering the earth with ashes. A light rain was falling at the same time, and as the hominids continued to walk, each footprint they made was cast into the mixture of muddy ash. When the impressions later dried, the result was two rows of footprints; apparently, two of the hominids walked side by side, the third, perhaps a juvenile, trailed behind the one on the right, stepping in the footprints of his predecessor. T hree and a half million years later, these footprints were to be found by Mary Leakey and her team of archaeologists. The incredible find, however, is more than just an important archaeological discovery, although it is certainly that. The finding of actual footprints from humankind's ancient ancestors represents the true grandeur of the archaeological bounty to be found in Africa, as well as how far the archaeology of human evolution has come. Only fifty years before the footprint find of 1978, very few scientists believed humans had originated in Africa. Practically ignoring Raymond Dart's Taung Baby from South Africa, attention on the search for the earliest humans was focused on China, where the Peking Man skull was found. Scientists such as Sir Arthur Keith, who wrote

This is the sole surviving family of mammals with trunks. There are currently only 2 species of elephant alive today. The African elephant live in central Africa, while the Indian elephant is located in India, Indochina, Malaysia, Indonesia, and South China. The African elephant is larger than the Indian elephant and has larger ears. The African elephant also has two lips on its trunk, allowing it to pick up small objects from the ground.
