Plant remains at the foothill of the Hindu Kush mountains indicate, that North Afghanistan was one of the earliest places to domestic plants and animals together with Iraq. As with any kind of traditional food, there are special techniques to aid in cooking it that require unique tools and kitchen configurations. Because of the lack of electricity available in-country, Afghans developed their cooking techniques over wood-burning stoves. Engineers were challenged to figure out the special needs of making Afghan cuisine and tailoring kitchens to fit those preferences. MEDIEVAL GHAZNAVID SILVER COIN OF MAHMUD
A former Turkish slave of the Samanids founded the Ghaznavid Kingdom. In 998AD, Mahmud, the son of the slave, became Sultan of a small area around the city of Ghazni in central Afghanistan. Mahmud greatly expanded the kingdom, taking large chunks of territory from the Samanids, as well as conquering parts of India. He spread Islam throughout Afghanistan and carried it into India, thus bringing the seeds of a conflict that still rages today. Mahmud was noted as a great warrior and a patron of the arts and literature though much of his wealth came from plundering the temples of India. He ruled until his death in 1030AD. We are pleased to offer this silver Dirhem of this powerful Sultan who left a lasting influence on the world today.

Oxfam has many years of experience, working with communities in Afghanistan to improve life for ordinary people. It has had an office in the country since 1992. Oxfam runs projects to improve health and education, which make a difference to the future of individuals and the whole community. We also help people to find ways to make a living - so that they can support themselves and their families. In times of particular need, Oxfam distributes food to people who cannot grow or buy enough food to feed themselves. At the moment drought in Afghanistan means that crops have not grown well and many communities are in need of this help. Basic food aid includes grain, pulses and cooking oil. Oxfam employs local Afghan staff to run projects because they know the country well and understand the needs of local communities. Because women are so important in feeding and looking after children in the family, we try particularly to involve them in our work. This was still possible even with restrictions imposed by the

Suddenly, unfamiliar country names are coming into the news. Afghanistan leads the list, but there are also Uzbekistan, Tajikistan, and Turkmenistan on the border, with Kirghizstan and Kazakhstan further north.
Most Americans wish to respond in some way to the enduring shock of the September terrorist attacks in New York. Ours is a food site, so we can offer recipes. Perhaps through food can come increased understanding among peoples, always helpful to peace.
As we are novices to these cuisines, we hope that viewers will contribute recipes, and also tell of sites or books about the countries.

by Reverend Damuzi (12 Apr, 2005) Marc Deeley of Spirit Aid explains revolutions in the industry With the world facing unavoidable shortages of water, oil and other natural resources, hemp can save us from widespread poverty, famine and death. Hemp industries proponent Marc Deeley explains how a project he is involved with – Spirit Aid – might tip the scales in favour of humankind.
In a blasted, bombed-out Afghani countryside, surrounded by desert wastes, Deeley proposes hemp as an answer to a people's woes. Since the 90's, hemp enthusiasts have touted the plant as a source of cheap and easy-to-grow fiber, fuel and environmental regeneration, but few have taken the next step and actually tried to make it work. Deeley and his partner, Paul Wylie, are at the forefront of that modest group that hopes to make theory into practice.
Paul Wylie has faced investigation, imprisonment and death during the course of his efforts to implement a Nicaraguan Hemp Project. Despite the approval of the Nicaraguan government, US Drug Enforcement Agents infiltrated the Nicaraguan hemp project, claimed the company was growing recreational cannabis, burned the field to the ground and threw Wylie in perhaps the worst prison in Central America.

Kazakh language instructor Aliya Kuryshzhanova led the Kazakh cooking demonstration. At SWSEEL, students had the opportunity to learn how to cook a dish from a different country every week. During this cooking demonstration, Kuryshzhanova taught the students how to prepare Western style Kazakh meat, a dish which is also sometimes referred to as "five fingers," because Kazakhs eat it with their hands. At SWSEEL, the dish was prepared with beef, but is traditionally made with horsemeat in Kazakhstan and can also be prepared with lamb.

Pashto language instructor Khwaga Kakar led the cooking demonstration by teaching students to prepare boulanee, or leek-filled patstries, a dish from her native Afghanistan. Over the course of the summer, SWSEEL students had the opportunity to learn how to make dishes from 7 different countries, including Azerbaijan, Uzbekistan, Kazakhstan, Russia, Afghanistan, Turkmenistan, and Tajikistan. The best part about the demonstrations was that after learning how to make the food, the students got to sample it! A SWSEEL student puts the final touches on the boulanee. The dish, which is made by frying leek or potato-filled pastries, is best if eaten immediately after it is prepared. It is common street food in Afghanistan and is also often served at special occasions, such as birthdays and engagements.

Advertisements As dusk falls in Kabul, the streets fill with a choking gray smoke, despite the city's near-complete lack of industry. Nearly every family in this capital of one million is cooking its evening meal and trying to keep the bitter winter chill at bay. But in a partially destroyed city where most homes lack electricity, the only fuel available is wood, cut from the surrounding hillsides and trucked into Kabul and other cities. The interiors of the dilapidated concrete homes and, presumably the lungs of inhabitants are covered with soot. Amid the ongoing US-led campaign against the Taliban and Al Qaeda, little has been said about Afghanistan's environment. That is a critical oversight, because the landlocked country of 25 million is facing a crippling environmental disaster, one greatly exacerbated by 23 years of war. At this point, another round of civil war could wipe out the country's forests as well as several endangered species.

Global Gangers tell us about the best and worst food they’ve ever eaten. Timothy, 10, and Gideon, 12, from Ghana love eating giant snails! These are usually served fried with a sauce. But Gideon says his favourite food of all is ‘akpele’, a dough made from maize and cassava.
Fariba, 12, from Afghanistan prefers something a little sweeter. ‘I love pomegranates and grapes,’ she says.
Mandalay, 8, who is also from Afghanistan says her favourite food is ‘qurooty’, which is made from dried curd and bread. ‘We cut the bread into small pieces and pour boiling liquid made from the dried curd over it. Then we garnish it with onion cooked in oil and dried mint. The whole family eats it together. It tastes great!’
'My favourite dish is ackee (a type of fruit) and salted fish,' says Jody Ann, 9, from Jamaica.

Maha Rating: 5/5 - Tasting Afghan Cuisine An excellent book it begins with a short history of some of the influences of Afghan cookery and includes a list of the common ingredients used by the people. From there, the reader really gets the "feeling" of life in pre-war Afghanistan and the cooking and serving process. Many of the dishes may one day become ubiquitous American favorites, just as pizza and lasagne became favorites here after World War II. A real treat to read and easy to use, as the author give many suggestions for substitutions for ingredients that are not easy to find. I recommend it highly. Rating: 5/5 - Authentic Recipes This was a great help to me as I am married to an Afghan. The terms and method of cooking used help me learn afghan cooking. I recommend this to everyone.
