Yield: 6 servings
Ingredients
  • 2 lg Cloves garlic
  • 1/2 ts Salt
  • 2 c Plain, whole-milk yogurt
  • Juice and pulp of 1 large lemon, 3 to 4 tablespoons
  • 1/2 ts Cracked black pepper
  • 2 lg Whole chicken breasts, about 2 pounds
Directions
Long, slow marinating in garlicky yogurt tenderizes, moistens and adds deep flavor, so you end up with skinless grilled chicken that's as delicious as it is nutritionally correct. Serve with soft pita or Arab flatbread and fresh yogurt.
Put the salt in a wide, shallow non-reactive bowl with the garlic and mash them together until you have paste. Add yogurt, lemon and pepper.
Skin the chicken breasts, remove all visible fat and separate the halves. Bend each backward to break the bones so the pieces win lie flat. Add to the yogurt and turn so all surfaces are well-coated. Cover the bowl tightly and refrigerate. Allow to marinate at least overnight, up to a day and a half. Turn when you think of it. To cook, remove breasts from marinade and wipe off all but a thin film. Broil or grill about 6 inches from the heat for 6 to 8 minutes a side, or until thoroughly cooked. Meat will brown somewhat but should not char. Serve at once.

Yield: 20 servings
Ingredients
Dough
  • 1 c Fine matzoh meal
  • 1 Egg, beaten
  • 1/4 ts Salt
  • 1/2 c Cold water, approx.
Vegetables
  • 1 tb Corn oil
  • 1 md Onion; chopped
  • 1 Garlic clove; chopped
  • 1 Potato; peeled - cut into small pieces
  • 1/2 c Cauliflower (chopped)
  • 1 Carrot; chopped (1/2 C.)
  • 1/2 c Green peas, fresh or frozen
  • 1/2 c Thin-sliced green beans
  • 1/4 ts Salt
  • 1/4 ts Freshly ground black pepper
  • 1 cup Corn oil, for deep-frying
Directions
Mix the meal, egg and salt together, adding just enough water to make a moist dough that holds together. Set aside. Heat the oil in a skillet, add the onion and garlic, and stir-fry over moderate heat until light brown, about 3 min. Set aside. Take the potato and 1/2 C. each of any other 3 vegetables and blanch in boiling water for 5 minutes. Drain well. Add these to the pan with the onion and garlic and stir-fry over moderate heat for 3 minutes, to mix well. Add salt and pepper. Cool. Take 1 heaping T. of the dough and press it out on a flat surface into a 2 1/2 inch square. Put 1 T. of the vegetable mixture on the bottom half of the square and fold it over into a triangle. Prepare all the samoosi this way. Heat the oil in a wok or skillet and brown the turnovers over moderate heat for about 3 minutes. Drain on paper towels. Serve warm. Makes about 20 turnovers.

    There is a dire shortage of fuel for cooking in Afghanistan and where refugees are in Pakistan. Either fuel is too expensive or not available. Harnessing the free energy of the sun enables families to increase the amount of food they can cook and water than can pasteurize. And collecting wood is dangerous because of the prevalence of land mines in much of Afghanistan. Laila H. Petty, a AWAI Board Director, is now in Kabul working to establish the Solar Cooking Project. She is working with Afghans in Kabul to organize the supplies necessary to make the solar cooking kits, called CooKits, and cooking Afghani food to ensure that the CooKits work properly. The next step will be to teach Afghans to make the CooKits, how to cook food with them, and conducting followup visits to address any questions about how to ensure successful cooking experiences. Manufacturers of materials necessary to make the kits are being asked to donate supplies, but donations are still needed to set up and run the initial training workshops and to provide food for the workshops. Additional funds may be necessary to purchase sufficient supplies for everyone.

By Christopher Bollyn L ANDSTUHL, Germany Atop a densely wooded hill overlooking this small town near the French border lies the sprawling Landstuhl Regional Medical Center (LRMC), where some 12,000 U.S. service men and women have been brought to receive primary medical treatment before being flown to military hospitals in the United States. LRMC with its numerous wings and annexes is the medical center for 60,000 U.S. military personnel in the Kaiserslautern area and provides tertiary level care for 300,000 Americans in the European Command area, according to Marie Shaw, spokeswoman for the hospital. Tertiary care is hospital care requiring highly specialized skills, technology or support services. Landstuhl handles wounded soldiers for all coalition member countries and has treated injured personnel from 40 nations. Built in 1938 as the campus of the Adolf Hitler School for Youth, the hospital is now the largest American hospital outside the United States and serves as the primary medical treatment center for casualties of U.S. operations within Europe, Southwest Asia and the Middle East. Local officials and historians are unaware of the Franco-American agreement that originally provided the legal basis for U.S. bases in this southwest region of Germany.

(click here) Afghanistan is situated at the meeting place of four major cultural areas: the Middle East, Central Asia, the Indian subcontinent and the Far East. It is because of this geographical position that Afghanistan became the crossroads for many invading armies from different places each with their own culture. These marauding armies, often passing through Afghanistan, journeying further afield, realised the advantages of maintaining strongholds here and paused for a while. In the fourth century BC, Alexander the Great conquered Afghanistan on his way to India; in the thirteenth and fourteenth centuries AD, Afghanistan was plundered by Genghis Khan and the Mongols en route to the Middle and Near East. Babur, founder of the Moghul Empire in India and a direct descendant of Genghis Khan, began his rise to power in Kabul and is buried in his favourite garden on a hill in Kabul, the Bagh-e-Babur Shah. The conqueror, Nader Shah Afshar invaded and conquered Afghanistan in the eighteenth century on his way to India recruiting Afghan fighters to serve with his troops. The British in India were twice invaders in the nineteenth century.

    Bamiyan is the historic seat of Afghan culture. The Bamiyan valley, where once caravans on the silk route stopped to rest, was the site of Buddhist statues carved into limestone around the 4th century. Representative of the pre-Islamic culture, these statues were defaced by Mogul soldiers in the 1800's and finally destroyed by the Taliban. by Barbara Paley-Israel Sayed Ahmad Shah, the host and owner of Bamiyan Afghani Restaurant, a Supreme Court Justice in his native Afghanistan, was visiting his brother, Sayed Nader Shah, who was a political science student at New York's Columbia University when the Russian invasion of Afghanistan prevented his return. His eyes water over when he speaks of his homeland, describing the forty different species of apricots, the apple orchards whose fruit is so fragrant that a freshly picked apple will perfume an entire home. Not being able to find food that he considered comparable to the cuisine of home, both from the perspectives of taste and of health, he turned to his first love - cooking. Mr. Shah became a restaurateur, subsequently training fifteen New York City Chefs in the skills of Afghani cuisine.

    Dear Mom, Sorry it’s taken so long to write. Before I get onto to current flights and countries, back to Kabul short months ago. In summary, the three days were fabulously exciting - so completely different. Stepping back into the past is a trivial way to explain Afghanistan but it fits. In fact, the whole thing reminded me of Quito where I witnessed the same sensation: locals completely oblivious of time, progress and influences. I got some sensational pictures which hopefully have been developed in New York and mailed to you. It’s difficult to explain the multiplicity of new sights, sounds, smells ... particularly the latter. From Peshawar we drove up through the Khyber Pass - a rugged heat-scorched, warred-over small piece of real estate. Just outside of Peshawar, one virtually leaves Pakistan and enters a tribal land where the law is of no use and not in the least observed. This has been the home of bandits for years - which has not really changed except banditry has been shoved aside by smuggling. These people (the Pathans) carry flintlocks, are strict conservative Muslims with their women out of sight or heavily veiled (no photography of them is allowed) and live little unchanged from when they slaughtered British regiments

    Special to The Christian Science Monitor BEIRUT, LEBANON From his no-frills offices, Nicolas Abou-Samah is preparing for a revolution. His weapon is satellite television. His mission: empowering women of the Middle East. But it also will be first station in the region to target a female audience and will air "anything and everything to do with women," Mr. Abou-Samah says. "We want to be controversial," says Abou-Samah. "We will discuss the difficult issues that face many women in the Middle East, as well as Muslim countries like Pakistan and Malaysia." The new station's signature program, "Too Daring," will run every day at 8 p.m. Each episode will feature a woman who has challenged the region's code of female conduct and a panel of guests who both oppose and support her decision. Leila Bazzi-Jarrouje, who will direct the show, has herself defied stereotypes: She is a Shiite Muslim married to a Christian Maronite. Ms. Bazzi-Jarrouje is also the executive producer of Lebanon's National Broadcasting Network.

    Staff writer of The Christian Science Monitor KABUL, AFGHANISTAN When delegations of tribal leaders file in to greet Dr. Sima Samar, they offer the deference due a government minister - one who just may be the most powerful woman in Afghanistan. But it's a lonely position: Not one woman could be found among the processions that came on a recent morning to recite glowing odes to Ms. Samar, Afghanistan's first minister of women's affairs.     Among the daunting challenges that Afghan interim leader Hamid Karzai will face in the next few months - from spending international donors' funds wisely to strengthening law and order in a still-fractious country - is getting women back into public life after years of being barred from it. And, Karzai may have to work hard to make sure Samar, internationally renowned for her work in education, health, and human rights, stays in the picture.

    The CARE-MEDICO hospital was known as the American Hospital and when word got out that a specialist from outside the country was available, government official and wealthy people manipulated to get their family members into the hospital for surgery. The other alternative was the Russian Hospital which was not as popular because the Russians do not have the bedside manner of American physicians.
    Usually the foreign doctor is invited to dinner to thank him for treating a relative. In Kabul, family customs are westernized at least to the extent that the family dined on tables and chairs, had stereos and radios, and modern cooking appliances.
    What is more unusual is to be invited to visit a family of the working class. We had this opportunity when Hassim, one of the house cooks invited us to lunch at his home. Hassim's family compound is located on a quiet street. The only opening to the compound was the gate. Much of the family living takes placed in a central courtyard. In the center of the courtyard was a well with a leather bucket. Each extended family group has a room off the courtyard.
