Body armor is a must in some lines of work, and it gives "fashion plate" a whole new meaning by Robert D. Kaplan or years I had been borrowing this particular piece of sartorial equipment. Now I felt that I had reached the stage in life where I needed something that fit right, set the appropriate tone, and was hanging in my own closet ready for use. I am not talking about a tuxedo. I am talking about body armor: a vest that holds steel, ceramic, or polyethylene plates for protection against 9 mm, 5.56 mm, and 7.62 mm rounds, and also against various fragmentation devices. I love cooking almost as much as I love travelling and learning about other cultures. Cooking ethnic food is a way of being able to do both at the same time. I have cooked ethnic food since I first started cooking - my first cookbook was a Caribbean recipe book I checked out from the Berkeley library, but I often end up reverting to the same "safe" dishes or cuisines. In order to stop myself from doing that, and so as to explore new culinary and cultural frontiers, I have started this project of cooking food from all over the world, alphabetically. It will probably take my whole life to complete, of course, there are hundreds of countries and regions to be explored, but I hope that in the process I will learn a lot, not only about the food, but about the cultures that create them. cups fresh spinach leaves, well-rinsed and chopped 1 medium onion - thinly sliced 2 cloves garlic - minced 2 tbsp. vegetable oil 1 cup lightly drained plain yogurt (drain about 1 hr - easiest method is to place the yogurt in a coffee filter and let stand) entree - Qaubili Pilau dessert - Gosh i Fil (Elephant's Ear) 3 lg. eggs 1/4 tsp. salt 1 tbsp. sugar 2 tbsp. vegetable oil 1 cup milk 3 3/4 cup sifted white flour 2 cups vegetable fat cooked syrup of 1 cup sugar and 1/2 cup water mix of 1 cup powdered sugar, 1/2 tsp. cardamom and 1/3 cup ground pistachio nuts Beat eggs, then add and beat together salt, sugar, oil and milk. Add sifted flour to beaten mixture, turn out on lightly floured board and knead for 10 minutes until smooth. (Add a little water if necessary). Roll out small sections of dough to paper thin circles or squares. For ears, pleat in one side of a circular piece - for bows; pleat in the center of a rectangular piece. (You can make these up to a foot in diameter - whatever your pan will accommodate.) Heat fat in a large shallow pan, and fry ears a few at a time until lightly brown, turning once. Remove from fat and drain. Pour dribbles of syrup over pastry and dust at once with generous amounts of powdered sugar, cardamom and pistachio

Humanitarian Crisis in Afghanistan

To date 5 VILLAGER SUN OVENS have been shipped to Afghanistan. These ovens were donated by the cooperative efforts of 142 Rotary Clubs from the U.S. and Canada. Two of the ovens are still in transit and should arrive later this month. A VILLAGER SUN OVEN has now been set up at a girls' school for 2900 students in Aibak, and another at a school on the outskirts of Kabul. Knightsbridge International donated half of the funds for one of the ovens and has provided the following photographs. Solar Ovens Brighten Afghan Futures

The scene is all too familiar to Rotarians: Dozens of women in a refugee camp wait patiently in a slow-moving food line under a scorching desert sun. The camp is located in Afghanistan, though it easily could have been any war torn country, and the women lack many of life's basic necessities, including a cheap and efficient fuel. The Temple Solar Project, spearheaded by Rotary clubs in District 6450 (Ill., USA), offers a solution. During the past year, Rotarians have helped send five solar ovens to needy communities in Afghanistan to provide residents with advanced cooking capabilities and to serve as a catalyst for self-sufficiency. "The goal of the project is to provide cooking ability in areas such as Afghanistan that do not have electricity and where propane is expensive," says Walt Jenkins, chairman of the Temple Solar Project and a member of the Rotary Club of Naperville, Ill. "If you use solar energy you don't have women and children going out eight to ten miles in search of wood every day."
