In honor of the day, I made one of my favourite soups, which happens to be green. Sadly, it was only after the fact that I realized that a green soup made with English cheese was perhaps not the most tactful of tributes. Never mind, we'll pretend I used Cashel Blue instead of Stilton . (As an aside, did you know there are NO cheese shops in Stilton , England? How disappointing is that for a food pilgrim?) Broccoli and Stilton Soup (serves 4-6) 3-4 medium broccoli heads A little grated Parmesan as garnish Roughly chop the onions and set them to soften on a medium heat with the butter in a large saucepan. While the onions are cooking, wash the broccoli heads and cut off the florets. Peel the thich stem by cutting into the end of the stalk and pulling down. I cut off the irritating smaller branches rather than peeling them too, but it depends on how conscientious you want to be. (It helps if you have a wormery like me - what isn't food for us is food for the little wriggling ones.) Chop the peeled stems and add them, with the florets to the saucepan. Add the broth, turn up the heat and cover. (You can substitute the water from cooking other vegetables or wine or even just plain water for the broth if you like. Last night, I used half broth and half water from boiling potatoes.)

The ad states take them now, theyll remember it forever and before I get to the food part I have to say that this is an entirely accurate statement. I saw this musical years ago when it first hit the London stage and I have to say I havent forgotten a moment of it. Not only was it the most boring time I have spent in a theater but the spectacle of human beings dressed in fur and roller skating up and down the theater aisles is one that stays with me to this day. I still have the occasional nightmare where some heavily made-up man careens towards me precariously balanced on skates, furry paws outstretched, singing one of those Andrew Lloyd Webber tunes that gets in your head and wakes you up at 3 in the morning. Anyway, that said, I started to think of how many food memories I have accumulated (eat it now, theyll remember it forever was the way my mind was working). One of the most basic and enjoyable I recall as a child was corned beef hash, and Ill always remember the creamy, comforting taste of mashed potatoes mixed with canned corned beef, salt and butter. Corned beef has never been something you would consider a sophisticated food but in terms of comfort, its up there with the best of them.

Most people would not necessarily think of Irish heritage when they think of Texas, but like just about everywhere else in the country, Irish roots run deep in this state. Texas has a long Irish heritage, dating all the way back to when the first settlers migrated to the Spanish ruled colony. Hugo O'Connor was one of the first Irish settlers in Texas, and became governor ad interim in 1767. Irish settlers were significant contributors to the Texas Revolution. Close to 15 percent of the Texan forces at the battle of San Jacinto were Irish. Eleven Irishmen died at the Alamo. By 1860, the census listed over 3400 Irish-born Texans. It's safe to say that the Irish contributed significantly to the history and heritage of the state.

Irish sailors would have eaten corned beef while conscripted aboard English vessels. And Irish immigrants coming to America would have found it popular upon their arrival. But in Ireland itself, there is little of the stuff. In fact, in the late 1980s a restaurateur in Blarney proudly began importing it from New York to please his American customers. He thought they couldn't go abroad without their coffee and corned beef. And St. Patrick himself apparently wasn't even Irish. Hagiographies tell us that he was a Roman slave who escaped his captors in Gallic Brittany, and wound up in Ireland converting the locals to Christianity. One of the earliest canonized saints, his true history is veiled in legend.
